"Coconut Lovers Rejoice: Soft, Sweet, and Delicious Coconut Buns Recipe" | Pani Popo Recipe

    Soft Coconut Buns Recipe
    Ingredients
    • 1 cup of warm milk
    • 1 large egg
    • 3 tbs sugar
    • 1 tsp salt
    • 1/4 cup melted butter
    • 3 cups all purpose flour
    • 3 tablespoons milk powder
    • 2 1/4 tsp instant yeast
    Coconut Sauce
    • 1 can of coconut cream
    • 1 1/2 cups of water or just fill up the the can with water
    • 1/2 cup of sugar or more
    Method
    1. Add all the dry ingredients in the bowl except for the yeast and mix well to combine
    2. Mix together the yeast and wet ingredients until the yeast dissolve
    3. Add wet mix to the bowl of dry ingredients and mix well to form a dough
    4. Add a small amount of flour if needed
    5. Knead the dough for few minutes until it is smooth
    6. Transfer the dough into a lightly oiled bowl
    7. Let it sit for 1 to 2 hours to rise and double in size
    8. Once the dough is ready transfer to the bench and divide to 12 even sizes
    9. Roll them out in long and thin sticks then twirl them in to form a nice shape of scroll buns
    10. Put them in the baking tin and cover it again to rise for 20 minutes
    11. Prepare the coconut sauce by mixing all the ingredients
    12. Add coconut sauce to the buns making sure it covers the buns
    13. Bake @ 180° Celsius for 20 minutes or more depending on your oven
    14. Serve hot or let it sit for a little.

    Bessssst panipopo recipe ever. Tried this today and I am shocked at how soft and moist it turned out, especially when I’m not the best at baking. Love love looooooove it. Only thing I changed was I didn’t add as much sugar to the coconut cream mix. Each to their own. First attempt was a fail but aced it second round 😅👌🏾 thank you love God bless

      Faafetai lava Arouma. You made my night with your kind comment. If I can share a tip I've picked up so far from trialling these recipes and would love to share with you and everyone is that if you want super soft and fluffy buns investing in getting proper flour for example with panipopo I would get a good quality bread flour instead of just normal all purpose flour. It makes a big difference. In this recipe I think I'm using a bread flour and so the outcome the bread rolls where super soft. Thanks again for your kindness.     liked your rolling the dough in to snakes technique. Good quality bun too. Beautiful vid.
    I like adding a teaspoon or so of lemon juice to the coconut sauce, to balance out and add brightness to the flavour.

      Thank you so much my friend. I like your tip of adding lemon to the coconut sauce to balance out the sweetness. I love the taste of lemon leaves in the other Samoan food with coconut cream for example coco rice so I can imagine the same taste too with coconut buns 🙏🏻

    We had a shared lunch at church, and I used your recipe since this reminds me of the lolo buns we make in Fiji. It turned out so yum. The thing I used differently was coconut milk instead of coconut cream and condense milk for my coconut sauce. But it was so yum. Everyone in church even loved it

    I love your recipe and I'm about to make panipopo....quick question please, i don't have milk powder atm, can i substitute it with something else or just go without it?

      Talofa Leilani, thank you for your feedback. If you don’t have milk powder you can just go without it. Milk powder gives an extra boost to the fluffiness and soft texture of the buns when they’re cooked however it’s still okay if you don’t add it. The liquid version of milk will do the job. You're very welcome and thank you for sharing your feedback. I think the key ingredient here in my opinion is powder milk. I am not a professional baker or chef but I feel that milk powder makes the dough softer and fluffy as well as a good quality bread flour. I am humbled and grateful to hear that your sons are happy with the recipe.     I've been trying to find the same recipe my Mum use to make because she forgot how to make them. Only one lady cooks them like my Mum but she won't share her recipe. I hope yours are like my Mum's. I'm gonna try your recipe to find out for myself. Thank you for sharing your recipe🙏

      Talofa P Man, I hope you find your mum's recipe. I also hope that my recipe will help you figure out your mum's recipe. I find it sad when people don't want to share their recipes. I understand that it's precious to some families to keep it within the family so I totally understand but for me I would rather share instead of me dying with it if you know what I mean. Anyway I hope you find what you're looking for if it's not from me maybe someone else. May I please ask or would you be comfortable to share where you're. Are you in US? I figured out too that the ingredients plays a big part in taste and textures too. When I made some of my recipes in Utah when I was there It didn't taste or turn out as it would here in Melbourne because of the different ingredients. If I can give you a tip to get really fluffy soft buns I would suggest to use a good quality bread flour along with your milk powder and Kara brand coconut cream if you can't make the fresh coconut cream.     Hello 🌸 is there a substitute that I can use for the milk powder? Also, what does the milk powder do? And would I be able to use coconut milk instead of coconut cream? I would love to make this today! I tried making your pineapple half moon pies and they were an absolute hit! They disappeared from the counter so fast! Anyway, thank you for your help :)

      Hello Liz, my sincere apologies for the delayed notice n responding to your comment. I’m so sorry it has been a hectic week with family and all. The milk powder makes the texture of the dough soft and fluffy. If you have no milk powder it’s okay you can just stick with the rest of the ingredients. You can use coconut milk as well, although someone suggested I try the coconut milk and condensed milk together. I’m yet to trial this mix and will let everyone know of the outcome.       I’ve never use oil with coconut cream dough but other dough for example pizza dough I would use oil but with coconut buns dough I always use butter. I’m sure it shouldn’t be a problem. Thanks for stopping by 🙏😊

    What is all purpose flour? Self raising flour or plain flour?

      My sincere apology for the delay in responding. All purpose flour is simply the same as plain flour. Self raising flour has baking powder added in it already. According to Google explanation all purpose is term used by US and other parts of the world whereas plain is used in Australia New Zealand and other countries but it’s the same thing.       Hello there it is 2 and 1/4 tsp of yeast. It is the same amount you can get out of a sachet of yeast. Hope that makes sense. 😊

      Hi Rejoice, In my experience and some of the viewers feedback as well that milk powder is the key ingredient for the fluffy texture of the buns. You can definitely go ahead without the milk powder. There is milk liquid in the img so it’s still okay without the milk powder. Thank you 🙏

      I’m sorry to hear that it doesn’t turn out okay for you. Perhaps something to do with the yeast or water too hot? I’m not sure why it doesn’t turn out for you and I wish I could figure out why apart from few points I mentioned. I said that because I failed few times too when I first make them before I figured out that my water was too hot that killed the yeast or it wasn’t proofing long enough.
