- Pasta primavera is almost always a vegetarian dish, but the best way to make it not that is to add pancetta, also known as “Italian bacon,” and the results are tremendously delicious bowl of pasta. It's the rare combo of something that’s rich and decadent, but also fresh and vibrant. Enjoy!

There used to be a place called Garfunkle's in Piccadilly Circus. They had the very best pasta primavera I've ever eaten. I was in London for two weeks, and probably ate there ten times. Unforgettable!

Tried it today. Tastes really nice. No idea if my dish tastes anything like its supposed to - because I have no point of comparison - but it anyway just tates really good 👍🏼
PS: If theres one thing I'd change, it's I'd up the amount of asparagus

Pro tip for cleaning blenders: put some hot/warm water in your “dirty” blender with a drop or two of dishwashing liquid. Making sure the top is on and sealed, press the start button and…hey presto! Blender clean as new!

Using less fatty meat and less olive oil could make this into a wonderful low calorie version, perfect for meal prep when cutting!

For me, Pancetta is kind of like the pig version of anchovies. It's not just less sweet than bacon. It's a lot funkier.

If you're going to just remove oil in the end, you might as well not add it. Start the bacon in some water for heat distribution, then the rendering will start and it won't stick to the pan.

Though I guess I know where it comes from: it's similar to how it's pronounced in some Italian dialects which would've been spoken by the (mostly) Southern Italian diaspora. Add a few decades and you get that kind of linguistic butchering ;)
