@@LKMNOP Actually, you can. If the surface of the pan is greased, (unboiled, rough) cornmeal will stick.
The name "polenta" in Southern Europe is used both for rough cornmeal, as well as for dish made of it. The finer grade of cornmeal is adressed as "cornflour". Also, no nixtamalization here.🙂

@@sandrastreifel6452 I'm in Canada. I haven't made them yet, though. I checked the written recipe, and there is no time adjustment for full-size muffins. We'll have to do some guesswork.

My wife just made similar on the weekend. But sausage, green onions and cheese. Very good as leftovers too just pop in wave for a minute.

Oh, my gosh, these look soooo delicious! Asparagus is my favorite vegetable. I grew up in Colorado, and in May asparagus grows wild around apple orchard trees or along the side of country roads, We would pick tons of it each year. What I wouldn't give to have that back!! Sigh. It's so expensive in the stores and probably weeks old. Gonna have to make this wonderful recipe. Thanks, Chef John!

I believe you just a keto recipe chef. My fave is roasting asparagus with just olive oil and salt. Can drizzle lemon or a sauce. Air fryer very convenient for this. 7-8 min. I like slight char

I've done something similar to these when doing keto. It's a great option for food on the go, and the technique is great for in season veg. In three months or so, bell peppers will be in season and I'll roast red bell peppers

A trick I do is after I’ve whisked the eggs, I pour them through a fine strainer. Makes the eggs creamy but will still hold its shape.
I saw this done on The Bear, and I’ve been doing that with my scrambled eggs and omelettes now, it’s amazing!

Hello chef! I do not know if you spend time out of the kitchen reading viewer comment. Anyway, thanks for yet another beautiful recipe.
Next, a nagging question. I'm Jewish, observing Kosher rules, so I can't eat pork, and I can't mix dairy with meat. So I'm looking for non-meat replacement for the Ham cubes here. To your best guess - can any smoked fish work? (Salmon? Tuna? Mackerel?) What "flavor profile" will work best with the cheese and the asparagus instead of Ham? I can try of course, and probably will, but I watch your videos and I know you have a very wide range of taste, from India to the middle-east, from Russia to very-americas foods - So.... maybe you have an idea.

Ill make like 60 of these and vaccum seal and then deep freeze them for my kids over summer. Quick and easy breakfast. I do this with fries, chicken nuggets, pizza rolls and taquitos. Kids love it. They just air fry and good to go.

Cut asparagus in half at $5.69/bundle, only use half, tell yourself you will use the other half for asparagus soup, end up throwing it away.
