  • It was really cold, and I really wanted Pulled Pork, so we broke out the Instantpot, tossed in everything you'd expect from a Mississippi Roast and made Mississippi Roast Style Pulled Pork!

    Glad you posted the mea culpa video ;-) I found the original looking for some inspiration to try something new with the pork butt I just bought, did not find any but with that video but found some here! I'm curious to try those pickly-things in my roast tonight!
    Far from an expert here, the technique that I found works great when using an instant pot is to skip the initial sear entirely, which allows me to cube the meat up a little smaller and cook for a bit less time. Then I shred, spread it out out on a pan and put it in the convection oven (or under a broiler) until nice and cwispy. End up getting so much more carmelized surface goodness to do this after as opposed to flipping / waiting to sear the big chunks in batches which I find tedious and messy and only takes an extra five minutes or so as opposed to up to 20 minutes of searing / flipping.

    One question I have: after the 45 minutes of cooking, did you do a quick pressure release, or natural pressure release; and if you did natural release, for how long? Thanks!

    I watched your first Instant Pot pork roast video, and one comment mentioned a 10 to 15 minute natural release time, after the 45 minutes of cooking. Sounds like a good idea. I'm making this tomorrow, I'll post the results. My guess, Phenomenal! 😋
