How to make Buckwheat/Kasha/My Grandmother's Recipe.

  • Buckwheat is truly a super-food! It has so many healthy benefits.
    And today, I am showing you how my Grandmother cooked it, and also her Mother and her Grandmother.
    You will need:
    2 cups of Buckwheat
    3 cups of Water
    1 tbsp of Salt
    2 tbsp of Sunflower Oil or Butter
    Wash and drain buckwheat.
    Add water to a small pot and bring to a boil.
    Add salt and oil.
    Add buckwheat to boiling water and cook for 5 minutes.
    After, cover the pot, wrap in aluminium foil and in the blanket.
    Let sit covered for 30 min.
    After 30 min cuddling under the blanket you Buckwheat/Kasha is ready!

    Oh my god. This method of cooking buckwheat is simply amazing. My husband always complained that no matter what he did it turned out mushy and overcooked. I showed him your video and he decided to give it another shot. Well he was so happy that it was perfect. We thank you for your grandma’s recipe and will thanks her every time we eat it.     I use a slightly wet kitchen towel at the final process to cover it, and it works also like a charm. I do this with Basmati rice as well, the result is just awesome.

    This worked for me, I'm eating it now! I had the same trouble mentioned below, that it tends to turn out mushy. Happened to have a Japanese thermal pot, which is an insulated thing to cook in. This seemed like a perfect job for thermal pot, and it was! SO, boil as you said for five minutes, put cooking pot in the insulated shell, and go do some errands. This is so nice for forgetful old guy like me because it's impossible to BURN anything, since there's no heater in the pot. Came out very nice and just like in the pictures, and I'm now eating with a fried egg and some quickly improvised gravy on top. It's good with butter, it's very good with gravy!!! It's good for bachelors, because leftovers don't seem to spoil, and it reheats nicely!

    Thank you so much for this tutorial! My Russian teacher made kasha for us at one of the student parties, and it was the best thing I have ever tasted. She gave me a small bag of buckwheat to take home and prepare for myself, but I've been afraid to try. I'm going to try to recreate her recipe tonight, каша с луками и грибами! 😊

    I always make buckwheat like rice, 2/1 water/bw, add ghee and salt,bring to boil, simmer 20 min. It’s ok.

    I love it as a side. But sometimes I like it with some mushroom gravy or I throw in some bacon and parsley or grate a bit of Parmesan cheese if it the end of the week and I try and use up what’s left in my fridge or pantry. I love all you can do with it.

      Thank you. Yes we call it kasha.😊 Enjoy! One tip though, if your buckwheat doesn't say toasted, you need to toast it for couple minutes on dry skillet, it will taste better with slightly nutty flavor. Good luck!🤗😍

    So.. wait.. buckwheat is not a grain ? That was actually new for me ! Thank you for the presentation. It's funny how my own ancestors (Netherlands) would have eaten breakfast consisting of buckwheat or rye bread, porridge (similar to kasha) or pancakes until it got replaced with cheap and plentiful supplies of Polish, Russian and Baltic wheat from the 17th century onwards (in the countryside buckwheat and rye remained the norm until the early 20th century).

    Excellent recipe. I came up with something interesting: knowing that soaking beans in salted water makes the skin more elastic and therefore, able to absorb more water, I soaked 1 cup of kasha in salted water overnight, drained it, then microwaved for 4 minutes. Lo and behold -- very fluffy and large grains. Highly recommended.

    I have always made mine as a dinner with carrot, onion and a bit a ground beef or ground pork with a bay leaf or two added during boiling. I do really like your grandmothers method of only boiling for 5 minutes and wrapping in a blanket. I get that works super well.

    Kasha Varnishkes (with noodles) is great. We don't wash the buckwheat but rather we toast it and then add an egg. Mix it till the buckwheat absorbs all the egg and is dry again. Then add liquid (broth or water). Then let it steam on a low flame until all the liquid is absorbed.
    That said I think I might this simple method.

    Subscribed, wonderful channel! I really love Beef Kascha, I have started adding hemp seed hearts to mine as well as dark buckwheat, its even more nutrient dense, and adds a wonderful flavor. I strongly suggest trying it sometime!

      MY favorite soaked and rinsed for two days and then just boiled and simmered to perfection. No salt no butter. Kasha pure.

    I´m sure this is all very good advice. But I just poure 1 part of buckwheat and 2 parts of water in a bowl, put a lid on and cook it in the microwave or the rice cooker for 20 minutes. Nothing more, and I love it.

      Thank you. Try soaking it in buttermilk overnight, you'll have very good breakfast. You can add berries to it.

    I have heard so many good things about Kasha, but the world of buck wheat is new to me. The nutrient value have me convinced. Im just wondering if you can describe the flavour or maybe a comparison to another food. I still have a family to convince!! am

      I think you should try it. It tastes similar to some whole grains, but has more nutty flavor.

    I'm trying to get back to what my grandparents ate when they came to America. I have a few recipes from the old country but not some of the things I'm interested in.
    What about a little syrup, or cooking it with some fried onion and boil it in chicken broth.
    I bought roasted buckwheat by mistake and I'm looking or ideas on how to cook it. I'm thinking your recipe will work too. Thanks for the video

    My mother used the blanket method to save bottled propane gas. I just boil it until it is nearly ready on low flame, so it doesn't run away, thoroughly mix with butter, boil a bit more, and then let it sit on the stove for a few minutes to cool down slightly. The pot I use is thick and has a good heat capacity.
    All kashas are good with butter and milk. I've eaten a liquid milk "soup" in a hospital, but haven't cooked it myself, because I cook rice or oats if I have milk. I love drinking milk with it. Mother thought adding milk to it was foreign and wrong.

    A simple lifehack to cooking buckwheat definitely without losing any of the nutrients it contains - just add some room temperature water in the proportion mentioned in this video to a washed portion of grains, close the pot and leave it for 3-4 hours (can leave it overnight). The result's gonna be pretty much the same as in the vid, though, not hot and without spices, but this can be fixed easily.

    Hello,
    What would be a good ratio if you want to 1/2cup of buckwheat? Complete beginner here and indotn want to mess it up but i donwant to try a small batch.

      Hello 👋 If you are using the "blanket" method, 3/4 of a cup of water should be enough. If you are cooking it on the stove, then use 1 cup of water.

    Great method of cooking , what herbs or spices go well with this ? Can't seem to find anyone using any , only parsley I've seen

    Subscribed! Love your humor and there are so few Russian/Eastern European cooking channels on youtube so this is great. Would you consider making a beef kasha recipe? Also, how well do you think kasha reheats? I've been thinking of making a large batch that I could freeze/keep in the fridge and eat throughout the week since it seems like a nutritious meal that wouldn't go soggy or weird. Great video! :)

      Thank you so much.🤗 It reheats perfectly in the microwave or you can reheat in on the skillet with a little bit of butter. I never tried freezing it, since we finish it fast no matter how big of a batch I make.🤗❤

    Roasted, unroasted, groats, sprout...etc. I'm new to Buckwheat and love what I've heard about it but what kind of buckwheat and in which for should I ask for in my local whole food store or online? Can anybody guide me please?

      it doesnt matter. roasted are much better tasting in my humble opinion.

      Unroasted is fine you just have to toast it a little in the pot before adding the water. If you buy it roasted that’s ok too. Cook it like rice.

    How long do you toast the buckwheat, if you do toast it? Do you buy it pre toasted? It looks pretty brown in the video

      I buy it pre toasted. Toasted until it gets a little bit of color and make sure it is completely cool before you cook it. Check out Eastern European markets, they usually sell toasted one. And yes, it's a little bit darker in color. 😊
