Great tips: the varying angle method using a piece of wood drilled and held at the chosen angle gave excellent results. I have three German hunting knives with a 30-degree angle from the factory. I bought them one at a time as they were listed as NOS (new old stock) Vintage, but are dull, especially the half of the blade closest to the handle (stag). Reading about 'how to sharpen' these knives, I understand that correctly sharpening knives, fitting this scenario, could cause issues. The blade can actually be curled, where very dull, and sharpening the incorrect way can compromise the blades integrity/ shape. My hands are paralyzed due to injury, but I've been considering a Work Sharp knife sharp outfit for 120 bucks - too much, but manageable in my case. There's another brand and similar to the Work Sharp sold on amazon for eighty. Thoughts?
