  • Demonstration on how to use a pasta rolling machine. A Pasta Rolling Machine is used to roll pasta dough into thin sheets of pasta. The Pasta Machine may be a motor driven machine or a hand-cranked machine that rolls out the dough, stretches it and then cuts it to size.

    Excellent Presentation that was super easy to follow!!! The instructor is an excellent teacher who made learning how to make pasta with a pasta machine super easy to follow!!! Thanks deeply for sharing this d'lightful lil video......now, I won't be intimated to purchase a pasta machine as I know how to use it properly!!!!

    A piece of pasta of 1 meter is not necessary for e.g. lasagna (unless you have a cooking device of 1 meter.). To handle the pasta more easier it is wise to cut them in smaller peaces and they will grow again when you narrow the space of the machine.

      This is done for efficiency. You just cut the sheets down afterwards into whatever size you need.

      Traditionally semolina is used. Some people use all-purpose or a blend of semolina and all-purpose. My preference is a blend of two parts semolina to one part all-purpose.

      Semolina is used for Pasta, Plain Flour is used for Noodles.

      00 flour because it’s less processed and contains more gluten

      00 flour for a more tender pasta such as stuffed pastas like ravioli. If you’re going to make a heavier sauce, add semolina (Durham wheat) flour. Up to 50% of the flour content with 00 flour. Durham wheat flour is a harder flour, and creates a more rough surface that holds on to tomato sauces better. Typically, I use 75% 00 flour and 25% Durham flour. 1 egg per 100g of flour, by the way.       I've been told food grade mineral oil (cutting board oil) is best to lubricate the machine as it will not go rancid like vegetable based oils.

    Why my dough stick in the wheels? Is it the flour I use or I should old the wheel or what.?

      try putting some flour on the pasta (both sides) before putting it into the machine to keep it from sticking

      Just use all purpose plain flour. Don't bother with eggs either, just use vegetable oil and water.

    When you roll the dough it should be the same width as the machine his is far to narrow.

      The one shown here is an Imperia 220 machine. If you're making large amounts of pasta in a restaurant setting that's a good one, but if you're making pasta at home I suggest the Marcato Atlas 150.
