Tubers is an umbrella term or common name for tubers and tuberous roots. In the same way, corms are called bulbs.
Calathea plants have rhizomes that grow tuberous roots.
Stem tubers are a stem modification, a swollen tip of an underground branch, a continuation of the PLANT ITSELF, which is known for the ability to propagate by division and grow into a separate plant. They contain meristem tissue.
Your "root tubers" horticulturally are called tuberous roots. This is a root modification; a root is something that BELONGS TO THE PLANT, its vascular system and is connected to modified stems. Some are independently edible, for example, sweet potato. In plants with tuberous roots, the roots are often sweet potato-shaped, form fibrous roots, and bunch together in a crown, attached to rhizome or other stem modifications. Eyes are on the stem parts. The roots do not contain meristem tissue.
I hope that helps for anyone who's still a little confused. I was looking at some things in my study (environmental horticulture) and came across this by chance. It's been 2 years, but it looks like people are still tuning in. Thanks for this video.

Wow, such an excellent, informative video, you are the best! I, too, have been super confused about tubers, particularly since I am an enthusiastic, outdoor gardener, as well as a houseplant enthusiast. I especially wonder about the Marantaceae family, since there are many genera and even more species. I currently have a green maranta in water, with many tubers on it, and NONE of the individual tubers are putting off separate plants...but like you, I am experimenting. Marantaceae are one of my favorites and I have many. In general, they confuse me, especially the reclassification of some of the varieties to Goeppertia. Since you are so knowledgeable, and you seem to enjoy the research, I would like to see you dive into the why and what makes a former Calathea now a Goeppertia, since Calathea is still an accepted genus. Gosh, this episode is so timely for me! Well done!

Highly recommend looking up pictures of bulb scaling, the way people mass propagate these things is insanely cool! I’m glad you mentioned the modified stem/leaf/root thing, a lot of easily confused plant characteristics are defined that way (like spines vs thorns vs prickles- fun fact, roses do NOT have thorns 😂) and I never hear people mention it. Great research on a super confusing topic 👏🏼
