      Yay! You checked out "Mr. H and friends!" They're so awesome! This is one of their trips to the US. I haven't seen this one, I wonder if it has their adorable daughter (Alena, or as I call her "h" since she's a little H) in it. Oh, there she is! She's such a charmer!

    Chocolate came from Mexico in the 1500s. Chocolate wasn't sweetened or had milk added like candy bars. Europeans did that. It's a savory ingredient in
    some Mexican mole sauces. And before you ask, that's pronounced "molay" and is NOT made with moles! Mole goes well with beef, chicken and yes, cheese.

      Though I was born and raised in America, Mexican food is a huge staple for me during my childhood. One thing I always hated was mole. I hated the chocolate in the sauce. Still to this day I hate it. My bro-in-law's mother made mole without the chocolate. That was the shit!

    As a Texan, can confirm that Tex-Mex is the best food ever, and you want to come to Texas to experience it, not anywhere else.
    Usually smaller family owned joints are best but even the bigger tex-mex chains have some goodness.

      I'm from Texas and while in Upstate New York I went to a "Tex-Mex" place just outside of Fort Drum. Their salsa was marinara sauce with cilantro.

    Mole, “molay” is Mexican and a mixture of various spices/sauces and can include chocolate. The sauce can include fruit, nuts, chili peppers, pepper, cinnamon or cumin.

      @@ITKurly Likely Abuela Mexican chocolate, a Nestle product. Chocolate with cinnamon. Comes in solid form and used for mole and for hot chocolate.

      An interesting fact about Mole sauce is that the sauce is arguably one of the most complex sauces out there, some will have around 20 ingredients in the sauce while others will have over 40. Some can have over 100... But those recipes are rarely used because it's a pain to make.

      Mole is damn good. It's not chocolaty like you would think it is. It's different, and it does work. Jolly's video of this same restaurant explains it at the end.

    "Queso" is literally Spanish for "cheese". I'm a Texan, born and bred to eat Tex-Mex, and LOVING it all my life! I have too many favorites to mention, but my all-time best is "enchiladas". Nothing better in the world to me. Since I now live in the Philippines, this is making me quite homesick!

    I live in a town of 2500 people in south central Texas … and we have FIVE Mexican restaurants! And they’re all always busy! I even have an abuelita that comes by my house every few days, selling fresh tamales out of her car… and they are the best!!! Just scratch out the veggies & fruit on the food pyramid and insert TexMex for us Texans. 😂

      There are tons of tomatoes, chile peppers, carrots, avocados, onions, lime/lemon juice, rice and sometimes lettuce. And if you count legumes, there are beans.

    FYI, the world cheese dip (queso) championship is held yearly in Little Rock, Arkansas. We take our queso seriously in the US, especially in the South/Southwest.

      @LA_HA I don't trust Mexican food or tex mex North of any of the 3 border states with Mexico. I will admit I've had great Mole in Chicago but. It's best if you just come to Texas for great quest. Our restaurants have more than one simple red sauce for the chips too. Hell my spot has 16 salsas to go with the quest and chips.

      I should just get to the part where I see your point. Texas is legitimately extremely well known as The place for Tex Mex. I mean, it's in the name.
      So, I'll just agree with you and leave it at that.
      It's like with pizza. NYC owns it even though other Cities have amazing pizzas. I'm a Chicago deep dish fan myself and I've never been to NYC.
      But, there's simply no denying that NYC Is the pizza capital of America and quite possibly The World.
      This goes for Texas and Tex Mex.

    Mole' is a sauce made with about 20 different ingredients and two of them are cinnamon and a Mexican chocolate. It gives very subtle flavors and is an excellent sauce on meat and enchiladas. Questions, pronounced "K SO" 8s made with Mexican cheese and peppers. It is smooth and spicy and is the best dip in the world besides guacamole (avocado dip).

    The whole southwest loves Texmex. It’s a fusion of Mexican and American with a dash of Texas and New Mexico. queso is Spanish for cheese, but it’s spicy good. Btw, chocolate is used in some Mexican dishes like Mole.

    Queso - K So is cheese dip, could be spicy or mild. Mrs. H does like spicier food than Mr. H but he doesn't struggle. They are in Austin, TX.
    Yes she said cheese and chocolate. The sauce is called Mole (mo-lay) made with a Mexican chocolate which is not sweet like regular chocolate.

    What they are eating at the very beginning are various kinds of salsa. Queso is a melted and spiced cheese sauce.
    The first dish looked to be birria tacos. Birria is a slowly braised, spiced meat, served with a consomme' for dipping. The second dish is carnitas, which is a stewed, pulled pork that is fried in lard before serving. The last one is chicken mole rojo. Moles are a class of Mexican sauces with roots in pre-contact cuisine. They feature a mix of many ingredients, generally including chiles, nuts, seeds, dried fruits, plantains, and spices. Some include unsweetened chocolate, usually Mexican chocolate. The flavor is complex and not easy to describe.
    Texas was originally part of Mexico. Tex-Mex was the style of Mexican food that used local ingredients. It has evolved into a varied hybrid cuisine that includes the many cultural influences of modern Texas.

    Queso {KAY-SO} is just one of the dips. It's a melted cheese dip, with bits of sausage or beef, and (I think) it's the one they said has ghost pepper in. It can be made as mild or hot as one desires.

    When people mention chocolate in Mexican food, they are usually referring to mole (mo-lay). It is a red sauce similar to red enchilada sauce but with the mellow flavor of chocolate. It's not sweet, it just flavors the sauce. Cinnamon is used in all kinds of foods. Not just desserts.

    Mole is a sauce a traditional Mexican sauce and marinade. There are a million variations of it. Different families usually put their own spin on it. It also has 500 different ingredients. One is usually Mexican chocolate, although, it doesn't taste like chocolate.

    Tex-Mex is basically Americanized Mexican Food, Tacos, Burritos, Tostadas, etc. we Americans have a habit of taking foods from all over the world and adjust them to our palette. of course the UK does some of that too, so it's not like we're the only ones.

    Adam you really need to taste some of the things that, when plated, looks like a mess. That or things that you think don't go together. Here in the States we have accepted, learned &/or modified dishes our immigrant populations brought with them. Chocolate is bitter until you add sugar, cinnamon can be used in savory dishes besides sweets, etc. One of my favorite jokes is that when Brits discovered spices they only sold them and never learned how to use them. In the U.S. we experiment with our cooking and have some amazing dishes. 😂

    Glad to hear you’re coming to visit! I’m sure you already have most of your trip planned, but I promise you it is worth it to take some time and explore some of the smaller towns. America is built by the small towns, and so many have really cool attractions, or even just restaurants that are worth taking a trip too! The urban areas are obviously packed with things to do, but please don’t leave us country folk out!

    Don't know if you can get the ingredients over there, but you can make an okay (not traditional) queso dip with Velveta and a can of Rotel diced tomatoes w/green chiles. Add in some cooked crumbled breakfast sausage. Just combine in a slow cooker.

    I'm a Texan and you need to have Tex Mex in the state. Do not let your need for queso drive you to buy jars at a store or gas station, choose your restaurant wisely so that you will be transported to cheese heaven. The Homesick Texan is a great blog/cookbook that will take you through all the cuisines of Texas, especially TexMex.

    As a native Texan....The best Mexican food is in TEXAS, period! You can try some in Florida but it isn't Texas and can not compete with what you just saw. You need to come to Texas. The thing you called soup is called Charro Beans. Absolutely fantastic. Pinto Beans, with jalapenos usually and cooked with Beer. The chocolate your freaking out over is called Mole A cocoa type sauce that isn't like sweet chocolate.. It is a traditional Mexican sauce. It is amazing. Must try. The Queso is melted Mexican cheese mixed with Green Chilis. Absolutely amazing. I think they are eating at a restaurant in Austin Texas.

      Yeap, and even different part of Texas has regional TexMex, here in the Rio Grand Valley. I want to say we probably have the best breakfast tacos in Texas in a consistent matter, it is normal here to get good quality gas station(stripes) breakfast taco, once you leave the RGV, the quality just goes down in any other gas station.

      I love Mexican food in Texas, but I live in Arizona now and I feel like Arizona has better Mexican food. And I’m from Chicago originally and we have great Mexican food as well. We also have the regional Mexican food in AZ like you guys. Try it if you’re ever in the area.

    The cheesy chocolate is actually a dish called molé... coming from a Mexican descent and born in Texas but now living in Florida ,,,
    Growing up my mom would make this all the time... It's usually made with chicken,,but the chocolate is actually a product called "abuelita" made by Nestle.. only able to find it in the Mexican stores at shops... But definitely a must try... It will knock your socks off.... Your palette won't be the same .....
    Literally it'll make you want to move to the US....

    All tex/mex or mexican restaurants give you free chips and salsa shortly after sitting down. You can tell them you want queso instead of the regular salsa, but it normally costs extra. A good queso dip is hard to beat when it comes to any kind of dip with chips.

    They are in Austin, TX at the El Dorado Cafe. Queso is a cheese based sauce. It is mildly spicy (depending on the restaurant it can be a bit more than mild.) It has various spices in it and it is amazing when done right. 🙂

    Tex-Mex is a HUGE part of Texas eating.. we put the TEX in TEX MEX...QUESO is a tasty cheese dip, and there are NO mashed potatoes- generally Mexican RICE.. Beans, beef/ pork, or chicken in Tex-Mex dishes, Enchiladas, Tamales, Fajitas...Tortillas corn & flour...

    10:38 The liquid is a beef consommé, usually served with the Quesabirria Tacos he is enjoying. Most people will dip the tacos in the consommé.

    The mole sauce is a very complex sauce that can be made in a variety of flavors. The brown mole has dark chocolate as one of several ingredients, the chocolate being used for richness and depth of flavor. The word "Queso" just means cheese in Spanish. Tex Mex Queso is a cheese dip, sometimes with roasted tomatoes, sometimes with Chorizo.

    When they’re describing “ cheesy/chocolate” what they’re talking about is Molé sauce. It’s a traditional Mexican sauce, incorporating dozens if not up to 100 different ingredients slowly introduced into a very ‘deeply flavored’ sauce.
    It does often include chocolate, but again can also incorporate 100 different other ingredients. It’s smoky, it’s rich, it has depth, it’s incredibly weird, yet equally incredibly delicious

    TEX-MEX MOLE
    1 whole chicken
    1/2 c. all-purpose flour
    Pepper
    Salt
    1/4 c. chili powder
    1 tbsp. peanut butter
    1 clove garlic
    1/2 tsp. cumin seeds
    2 c. water
    Cut and clean chicken. Steam cook chicken, add salt and pepper to taste. While chicken is cooking, add flour and chili powder into a bowl. Mix well and add 2 cups water, stir until dissolved. Grind garlic and cumin seeds. When chicken is cooked, pour in flour and chili mix, cumin and garlic Stir well. Add peanut butter and stir. Gradually stir in a little more water to thin mixture a little. Simmer to a gravy consistency. Add salt and pepper to taste. Chili powder may be a little less or more depending on one's taste, and desired color of gravy.

    200 years ago my ancestors moved to Mexico into the northern territory of Texas and became Mexican citizens. The foods they developed and ate there became a regional variant of the Mexican cuisine based on the availability of food ingredients - thus Tex-Mex. Likewise Clam Chowder and Crab Cakes are a New England variant of US cuisine, Beer Brats, Buckeyes, and Chicago Dogs are a Mid-West variant of US cuisine, and Pan Fried Chicken, Black Eyed Peas, and Cornbread are a Southern variant of US cuisine. 100 years ago my Great Grandfather owned and ran a Tex-Mex Cafe and Tamales were his best selling dish. I grew up in Texas eating Tamales (my dad's favorite food), Tacos, Fajitas, Brisket, Fried Chicken, Black Eyed Peas, and Cornbread, and my favorite dish that my mom made: Tamale Pie. Even though my DNA test came back as 70% British, when I travelled through England 20 years ago I knew nothing about such things as Meat Pies, Blood Pudding, and Bangers and Mash. My cultural heritage is Mexican - American (or Tex-Mex) - its who we are. We buy Cacao Powder (most people call it Cocoa) by the pound as a spice rather than as chocolate. And yes we do mix it with Sugar or Honey and Cinnamon to make "Mexican" Chocolate, and from that desserts and hot chocolate. And YES - Queso (or technically Chili Con Queso) is awesome!

    the best thing to do is make contacts ahead of your visit and arrange for those contact in each town or city you plan of visiting to meet up with you and ensure that you stay in areas that are less likely to cause problems (truthfully, anywhere can end up being a problem if a crazy person decided to do something awful there, but some areas or more safe than others). these contacts can be your 'tour guide' for that town or city while you're visiting that place. it will be a tremendous help first off, and they can recommend good places to eat and sleep. and even point out any local attractions. this way you are not burdened with trying to fill your trip with things to do by yourself without knowing anything about that area...
    also, there are high crime areas and somewhat 'segregated' areas (self segregated) where some races aren't welcomed and may even be attacked. so you need to know where these places are so you don't go there. every moderately sized city will have these areas.

    the "cheesy chocolate" is using a coca powder in what is called a "mole sauce" it isn't overwhelmingly chocolate in taste it's combined with a bunch of other spices and herbs. In the case of this particular mole, they have 32 different spices in it.

      @@RogCBrand This restaurant does use sweetened chocolate though. They use the Nestle Abuelita tablets as the chocolate in their mole sauce. The first ingredient listed on the label for those is sugar.

    Basically, take authentic Mexican food and either smother it in cheese, deep fry it, or add enough spicey peppers for you to see through time (or any combination/ all of the three) and you got Tex Mex. In any show/ movie from America, when they go to a Mexican restaurant, it's a Tex-Mex place.

    TexMex marries Mexican cuisine with the Texas barbecue style of cooking. Basically a meeting of cultures, since Texas and Mexico share a border. It's very good, and so popular that you can find it basically anywhere in the United States, not just Texas.

    What the guy had that just sent him into space, he said it's Quesabirria (birria is a beef roast that's marinated before being slow roasted in a broth). You can then use the birria for all kinds of dishes.
    I know one of the things the lady said she had was the chicken mole (mo-LAY). Mole means "sauce". There's endless variations of mole, but It's a Mexican style cooked chili sauce, commonly made of tomatoes, chilies, and all kinds of spices, can include chocolate, and it's used all kinds of ways. If she tasted cinnamon, was probably made with Abuelita Mexican hot chocolate tablets. (Mexican style hot chocolate usually has cinnamon & chili powder in it)
    The only thing I can think of that would sound close to "cheesy chocolate" would be a cheese enchilada or cheese taco, and it could be just how the little girl said it in toddler-speak, lol

    Queso (Kay So) cheese. The dish that was black and covered in cheese was Refried Black beans (cooked black beans, mashed and fried) absolutely delicious! great in a tortilla as a sandwich(burrito) served as a dip with tortilla chips and salsa. Beans are a staple in Mexican meals. Authentic Mexican food, chicken, beef, pork is usually savory, mild the heat comes with the salsas. Mole (Mo lay) is a sauce made with cocoa and spices, delicious. Another treat is Napolitos (Na po lee toes) catus, spines removed, soaked in water until tender and fried with scrambled eggs.

    Mole sauce came about when a high ranking Bishop, or maybe a Pope, visited Mexico for the first time, They went to a parish, where the priest created a dish made of all the local ingredients. Mole, in this case, was made with Chocolate, and spices, probably with chicken also. Its a dark brown sause, sweet with many spices added. It was a huge hit, since chocolate was a rare thing in Europe. Mole was born.

    FYI, each boarder state has their own twist to “Mexican” food. I was born and raised in Northern CA moved to Texas almost 39 years ago…totally different tastes. New Mexico has a lovely flare also.

    Chips and salsa are free on every table. Queso is a blend of cheeses and Mexican chilies. Quest is served as an optional side with your standard tacos and enchiladas. Fajitas were introduced by a Houston TexMex restaurant

    Tex-Mex are the foods that developed along the boarder and in both places. It is what many think of as Mexican food, but really is Northern Mexican/South Western US food. Mexico has a wide variety of cuisine like any country, depending on location.

    Queso ("kay-sew") is Spanish for cheese and Tex-Mex shorthand for salsa (sahl-sah) queso (cheese sauce), think a Mexican spiced Mornay sauce.
    The dish he had the great reaction to was Birra (bee-rah) tacos. I think it was the birra dipping sauce he was eating with a spoon.
    It was not cheesy chocolate it was beef short ribs.
    The girl had chicken mole (mole-lay) (I think). Mole is a salsa made by grinding together many ingredients (like 30) in a molcajete (mole-cah-heh-tay) (stone mortar). Some moles (mole-lays) will include chocolate and cinnamon to give earthy and warm notes to the salsa.

    Hi Adam, I'm an American who retired to Mexico 37 years ago. So I might be a good choice to explain some of these things to you. First a Bit of history. Texas was part of the Spanish Colonies in the new World. After Mexican independence, Texas was part of the Mexican Republic. Texas then became an independent country. Texas then Joined the United States and when the south broke away from the Union was a part of the Confederacy.
    Queso (pronounced KAY-sow) means cheese in Spanish. Mexico has many native cheeses. Oaxaca, Cotijo, Manchego, Fresco, Chihuahua and others.
    The dark sauce is Mole. It has chocolate and 14ish herbs and spices. Chocolate in Savoury dishes gives it a smokey flavor.
    Yes Adam they are in Texas. that's where they have Tex-Mex Cuisine.

    It's unsweetened chocolate. Been used for about a 1000 years in that part of the world as a savory ingredient. By itself you probably wouldn't want to eat unsweetened chocolate, but it's in a base of many other ingredients and tastes amazing.

    Tex Mex is Texas Mexican food....Queso (k so) is Spanish for cheese....I actually have Mexican food coming home to me in the next 30 minutes....salsa should have a kick to it but never be so spicy that you can't feel your mouth or not taste anything else for days lol....whenever you eat spicy food to get rid of the spice just drink or eat dairy products or tea....I love the H Family & how much they love food....hope you're heading to small town USA cus mom & pop places are the best....what she just tried was brisket not cheesy chocolate lol she was talking about the Molé on the other plate which tends to have chocolate & the cinnamon is what you normally find in Mexican Chocolate

    Mexicans have been using unsweetened chocolate in food long before chocolate was known in Europe. Cinnamon with out sugar is used as a peppery flavoring in savory dishes.

    The black bowls on their plates held charro beans, not soup. I'm in Houston, Tx and I can tell you out of the beans you're offered at a Tex-Mex or Mexican restuarant, (refried, pinto, or charro beans), ALWAYS say charro beans. They are made by boiling pinto beans for several hours, with bacon, pork hoc, clilantro, and various spices. That's why they look like soup and are served in a bowl. Charro beans are the most flavorful.

    Tip: when going to a Tex-Mex place, they give you chips and salsa for free when you sit down. Be careful! You will fill up on those and can't eat your entree! Every time I go for Tex-Mex, I fill up on the chips and salsa... and if you do get queso, you won't be able to eat anything else! It is very easy to leave these places feeling sick from eating too much. I always take half my meal home with me.

    Queso is basically spanish for cheese. But Queso Dip is just cheese and tomatoes with green or red chili peppers, and depending on the person it can have either sausage or ground beef included. Queso Dip is often called Rotel Cheese Dip and it's just the same thing with a different name. I personally use Velveeta Cheese, Rotel (tomatoes w/green chilis), Cream Cheese, Sweet Corn, and Jimmy Dean ground breakfast sausage in mine. Also, if you are going to the US...I highly recommend you try authentic Biscuits and Gravy...those will change your life.

    Queso is melted cheese ( nacho cheese or Velveeta cheese) and salsa mixed together. I add cream cheese and hamburger meat to mine. The "soup" are charro beans. It's amazing if they are cooked right.

    Queso is Mexican for cheese and queso dip is cheese with pepper and onion plus tomato and it can be hot or mild depending on the peppers you use. Mole sauce comes in 13 different varieties from the green to the dark chocolate sauce and is a complex combination of spices and peppers and herbs. It’s very hard to describe what mole taste like because it so complex

    I was drinking a glass of water when I heard him say "kway-so". I almost drowned.
    Almost everyone in the US speaks a little Spanish even if it's just for the food. They don't have Mexican food in Northern Ireland?!
    I worked with an Irish girl one time and she had recently arrived, which meant most of us could barely understand her. Anyways, one day we went to Taco Bell and I told her to use the mild sauce. Mild sauce isn't much spicier than ketchup but she absolutely was on fire! We were all laughing but then we all went to a bar one night after work and she could drink straight vodka or whiskey like it was water. We just looked at her like "this is the same girl that couldn't handle Taco Bell?"

    The liquid in the bowl is probably Birria. Those fried tacos look to be birria tacos and are meant to be dipped into that Birria sauce. It’s the most delicious thing you’ll ever put in your mouth when it’s made right.
    Mole sauce is made with chocolate, but it doesn’t taste anything like you think it would. It just adds a very richness to the food. Queso is different everywhere you go, but never pass it up. It is a warm delicious. Cheesy bowl of loveliness. looking forward to your October visit

    Yes Adam, they use chocolate in the mole sauce....pronounce 'mole (as in the rodent) and ay (as in eight)' Mole is a complex sauce usually combining 30 or more ingredients. It is something you HAVE to try!

    Queso is a cheese dip it's actually called chilli con queso and you pronounce it Caso. It cheese with hatch green chilli's. The first one was salsa and you can get it like mild, med, hot, and so damn hot you think your tongue going to burst into flames. Fajita's were actually developed in Houston Texas.

    New Mexico, Arizona, Texas, Louisiana, Mississippi, Alabama, Georgia all have TexMex restaurants and they’re all a little bit different
