Irish person here. You did well. Personally, I never put sugar in my soda bread, and it is not traditional in Ireland, but I do know that Americans expect a sweeter product. What you made today is a currant cake or railway cake. If you replace 50% of the all purpose flour with whole wheat flour you will get Irish brown soda bread. I have a number of favourite tips, as follows:
1. I add caraway seeds, because my mother did, and it’s nostalgic. You can try any seeds or herbs that you like.
2. I add chopped scallions (green onions) with or without grated cheese.
3. I add flax seed, replacing some of the all purpose flour. Flax seed helps to lower cholesterol. It also absorbs the buttermilk and makes the bread very moist.
4. This morning I made a brown soda bread with flax seeds, and added about 200g of grated Kerrygold Reserve cheddar cheese. I also added 1 tablespoon of chilli flakes. I topped the bread with additional grated cheese. This made a fantastic moist bread with a spicy flavour.
5. If you have run out of buttermilk, you can make acidulated milk by adding a little lemon juice or vinegar to ordinary milk. The flavour is not quite the same as buttermilk as it is not fermented, but the acid-base reaction will work just fine. You can also use slightly sour milk. This is what my mother used to do.
6. Wait until the oven has reached the desired temperature before combining the wet and dry ingredients. The dough will begin to rise immediately and the oven is where you want that to take place.
7. Mix it with your hand in a “claw” formation. You need to feel what the dough is doing.
8. Hold back a little of the buttermilk-egg mixture until you know whether you really need all of it. This will avoid an excessively wet dough.
9. If you are not going to use the whole loaf that day, cut it in half and wrap and freeze what you don’t need. It will keep very well for weeks.

Instead of buttermilk we use plain greek yogurt, kefir or cottage cheese.
We add olives, sun dried tomatos and any seeds pumpkin, sun flower, chia or nuts.
Always add teaspoon of cumin stops from bloating 🤭

Hi John, there are so many variations of this bread, I can’t wait to try it. I, too, have a family recipe. The purpose of the cross is to Bless your bread. (If you poke a couple of tiny holes in the corners, it releases the “fairies” who could be ruin your bread.). Happy St. Patrick’s Day ☘️🌈☘️

I heard that the cross was cut to allow the fairies to escape. I've never heard of poking holes in it though. John is probably right that the cross is cut to help it bake more evenly.
Now I will put holes in the corners. I believe in the fairies! 🧚
@@veronicaveronica8223 I just made this for the first time ever and it turned out so well! I substituted whole wheat flour for just under 1 cup of the 4 required cups of flour (just because I wanted to use it up), added apple cider vinegar to a mixture of almond milk and half-n-half for the buttermilk substitute and added a couple of chopped prunes and orange zest. It turned out wonderfully. The crumb was superb and it sliced wonderfully. I could see where a slice of this bread would make a great open sandwich with meat, chicken or fish with cream cheese. To be honest, as an American, I would like it to be just slightly sweeter so next time I would add about one more teaspoon of sugar. I tried adding a dollop of jam to the finished product but it just didn't do the trick. I think I would add more prunes or cranberries to give it that extra sweetness but not to overdo it so it tastes like a scone. Great recipe and no fairies in sight except for the gay bar down the street.
As someone from Northern Ireland, no cooked breakfast is a breakfast without proper soda bread!!

Top of the mornin’ to you John! And I’m from the North of Ireland. Your receipe is EXACT to what we consume for the morning and late evening; popular here is with raisins and caraway seeds. Along with meals, however we bake the plainer version sans the butter and egg [so it looks whiter] and just a wee bit of sugar if at all. What I like most about your videos is your tutelage; as you create you tell us why. I need a scale! And to you over there, Happy St. Patrick’s Day!
A fun quick tip take your frozen butter and grate it on a cheese grater. I use my food processor with the grater attachment it goes by really fast and makes the butter small and easy to spread throughout the bread. I do this method for my biscuits as well.
I wonder if the butter was whipped before being frozen would it even make a difference 🤔

This is practically my mother's recipe. My mother was of Scotch/Irish heritage on her father's side. My mother's paternal grandmother made this type of bread as did her paternal grandfather who actually taught my mother to make it due to his wife becoming a victim of the great flu epidemic right after the turn of the century into the 1900s. My mother's Soda Bread recipe never included raisins or other tasty additions. She did make the large pones in a large iron skillet as you did, and she also made smaller biscuit size pones in an iron skillet. Isn't it wonderful how these hearty staple recipes have endured and are as enjoyed today as they were generations ago? Basically, this is word for word my mom's handwritten recipe! In her recipe, we hydrate the raisins and add 1 tablespoon of caraway seed which is hydrated with the raisins and then drained before adding. Thank you very much for sharing. I was very anxious to try this recipe and it did not disappoint. The bad news is that I made it after dinner and it came out of the oven after 9 p.m., so bad diet day for us! My family and I loved it, and it tasted so good, my son said, "that's no bread, it's a cupcake!" I think it's a great treat for morning, noon or nighttime; this one's a winner!
I add chopped dates, and use brown sugar instead of white. Raisins are not a favorite of mine, but I always have dates on hand and are a great addition!

Originally from South Boston MA now in Vermont, we always hosted a St. Patrick's Day gathering during the parade for decades. My great grandmother past her families recipie to my nana who was married to her son and it's been past down the line. My mom always added caraway seeds & raisins to the Irish bread. It also had a topping 3 tbls butter, 1 tbls flour, 1 tbls sugar, some cinnamon and mix into a paste. My great grandparents where from Ireland and this is their recipie they brought with them to America in the late 1880's. I haven't made any since my mom passed a few years ago we used to cook together. Thank you for inspiring me to get baking! I will get my granddaughter in the kitchen to help me, maybe the boys too! And since we will have another reason to celebrate St. Patty's day, a new granddaughter to probably come on the 17th, our daughter's being induced the night before, so very good chance...

I LOVE Soda Bread and look forward to trying this recipe! I enjoy adding 1/3 cup of chopped walnuts, 1/3 cup of sunflower seeds, and 1/3 cup of pumpkin seeds! So many great variations!
I’m wondering if one might add jalapeños and cheddar to this dough, may not be a good idea, but sunflower seeds sound good!
Try with Olives, Sun dried Tomatoes, Caramelized Onions, dont use Sugar add Cumin

This bread is best eaten on the day it's made but day-old bread is delicious toasted with butter and jam. Or eaten with a big slice of Dubliner cheese. Yum! ☘️ 🇮🇪

Such an excellent and easy recipe. My first time baking Irish soda bread. I’ve also never worked cold butter in flour but I did it! The bread smelled heavenly when baking and was so delicious. A couple of tweaks made: Prepared buttermilk from homemade yogurt, and added a cup of walnuts. Thanks for this wonderful recipe.

Your recipe is similar to mine. I also add 2 teaspoons of caraway seeds. That makes a big difference, and elevates the bread up a couple of notches.

I use dried cranberries in mine because i am not a raisin fan. I also sprinkle the top with the big granules of sugar like they do in the grocery stores. Thats how my husband loves it. I never heard of this bread before so I used your recipe along with our twists and its now a March tradition for our family!

We just got back from Ireland and I am hooked on soda bread. A lot of the traditional Irish Soda Bread recipes I read called for only 4 ingredients. However, I decided to try your recipe first. Absolutely delicious! I think the added sugar, butter, and raisins really kick it up a notch. I did find the dough to be very wet and had a hard time creating the cross in the middle. Regardless, the finished product was fantastic and the recipe has been added to my personal recipe book. Thanks!

We had currents/raisins in Brack but Soda bread was plain in my house 👍 we were told the cross on the top was the blessing of the bread so it came out alright.

John what you have made is called a Barmbrack because it has raisins in it if you don’t have buttermilk you can use Joghurt and u can also make Soda farls same recipe but without the fruit , and they are made in the the skillet that u put in the oven but not so thick like a thumb thick . The skillet should be rubbed with some butter or bacon grease and then dusted with some flour then the soda farl round that is cut in four hence the Irish word farl meaning quarter, then back on the stove top ! My granny always said the cross in the soda bread is to let the fairies 🧚♀️ out ! Love your videos always a joy to watch ❤️🥰

My granny used to bake 3 every Friday - white, brown and fruit. It did us the whole week and was usually fried up with bacon and eggs on the following Friday morning.
She would wrap each cake in a clean tea towel and let them cool upright on the dresser to soften the crust, ensuring a great slice. The hardest part was the waiting for the first cut.
I usually use 1/2 whole wheat and 1/2 white flour. All white flour is delicious too. Traditional bread doesn’t have any dried fruit. The bread with butter and jam and a good cup of strong black tea with milk in it is my version of heaven. Although the sweeter version with sugar and raisins is pretty good too! Thanks John.

I just made that bread. I used fruits I had soaking in rum for Christmas so the dough was a bit cake like so I just poured it on parchment paper in the skillet. So delicious crusty on the outside and rough cake like on the inside

So, there I was, about to make chocolate chip cookies on St. Pat's last week. Then this popped up in my feed and I changed my mind. I made this Irish Soda Bread but with chips and it turned out AWESOME. Highly recommend this recipe.
If you make whole wheat Irish soda bread it’s really delicious if you slather with butter then a nice piece of smoked salmon on top and a squeeze of lemon juice. There is also a version of soda bread that has Guinness and treacle in it which is delicious too.

Never made soda bread before but hubby likes it. Made it the first time following the recipe but adding raisins. It was just ok. Made it again, added an extra 1/2 tsp baking soda, a little extra sugar, zest of 1 orange and currants instead of raisins. Hubby liked it better.
