The best recipe for Spaghetti pomodoro - Mapino cooks

    Ingredients for 2 servings
    • 2 carrots
    • 1 parsley
    • 100g of celery root or 1 leaf of stalked celery
    • 0.5 liters of vegetable broth (chicken broth can also be used)
    • 250g of tomato puree
    • 3 sun-dried tomatoes
    • 4 fresh bush tomatoes
    • 50 ml of olive oil
    • 3 cloves of garlic
    • 50 g of Parmesan
    • 2 spoons of dried crushed balazalka
    • 2 balls of New Spice
    • 1 bay leaf
    • 1 teaspoon of sugar
    • crushed pepper
    • a pinch of salt (NOTE amount according to the saltiness of the broth)
    Method
    1. First, we prepare the ingredients. Do not cut 1 carrot, parsley and celery (roughly in a 1:1:1 ratio) into small cubes. Grate 1 carrot on a coarse grater. Cut the dried tomatoes into small pieces. Cut the garlic into thin slices and prepare 0.5 liter of vegetable or chicken broth.
    2. Pour olive oil into the pot so that it covers the entire bottom. Sprinkle slices of garlic, pieces of sun-dried tomatoes on hot olive oil and add chopped vegetables - carrots, parsley, celery and fry briefly. Add the grated carrot and sauté for 5 minutes.
    3. Add the tomato puree to the fried vegetables and fry briefly (1-2 minutes) and pour the broth over the mixture. Bring to a boil.
    4. Add bay leaves, allspice, basil and season with pepper. During cooking, we add a cube of sugar to balance the acidity of the sun-dried tomatoes and tomato puree. Cook and reduce over low heat for approx. 20 min. We check the density of the sauce. If it is thin, cook it longer. Keep in mind that we will add grated Parmazan to the finished sauce, which will thicken the sauce.
    5. Once the sauce is cooked, add salt to taste. We take out the New spice loops and Bay leaf. Remove from the heat and add fresh, quartered tomatoes and let them heat up in the warm sauce.
    6. Add the finished sauce to the cooked spaghetti in a pot, sprinkle with grated Parmesan cheese, mix thoroughly and serve. We can decorate with fresh basil leaves.
