Those places are all good for tourists, but lots of locals go to DaShiXiong beef noodle near Chang Kai Shek memorial. They have amazing side dishes.

I love Taiwanese beef noodle soup! Didn't get to try Yong Kang when I went to Taipei though, so really looking forward to try it when I go back next year. Will also probably try Fu Hong! I'm a sucker for flat noodles, and them being 24 hrs open is perfect -- they're walking distance from Ximending too!

The first and second place are our kind of noodle that we like to eat.
The wide noodle at Fuhong Beef Noodles (first place) looks so goooddd! We would go for the same too 👍
ohhh the second one, Yong Kang Beef Noodles looks like lanzhou beef noodle with thin noodle -> our favourite too.

I loved Lin Dong Fang! That lard stuff was amazing, I added so much lol. Only thing I wish I could change was the noodles, I'd prefer those flat / wavy ones instead of udon-like, too slick as you said.

The third place Lin Fang.. looks like they gave big pieces of beef and tendon, and we bet that hot oil added a lot of flavor to the broth! The fourth spot.. Liu Shandong, that's crazy they is a line on a weekday and $4.92 was not a bad price! We love green onions as well, and great that they had thick noodle! That's cool that it tasted like deli meat/pepperoni and was your least favorite place!! We bet you were full after all that soup! Happy to hear you found your favorite at Yong Kang! This looks so good 🥰 I think I tried it at a hotel once in Vegas. But I didn’t know it was Taiwanese at the time. It was amazing. I can’t imagine how it must taste actually eating it in Taipei.

The first spot Fuhong.. that's cool they were open 24 hours and $2.95 was not a bad price. The second place Yong Kang.. the broth looked so tasty, and nice they had pickled greens on the side with the tendon. That was funny when the guy was looking in the camera trying to figure out what you were doing LOL!!

But what i love about taiwan based on my experience tho, even when you cant speak any chinese, you'll survive just fine.. All transportation are easy to use and if you visit some famous local restaurant, they also write the menu in english.. Or pointing at what you want will do as well😆
