Ingredients: For the pesarattu
· Sprouted moong dal - 500 gms (washed)
· Rice - 100 gms(washed & soaked in water)
· Fenugreek seeds - 1 tsp (soaked in water)
· Cumin seeds - 2 tsp
· Onion - 1
· Green chillies - 3
· Ginger - 2 inches
· Salt
Ingredients: Rava Upma:
· Fine rava - 1 cup
· Boiling water - 2 cups
· Onion - 1
· Ginger - 1 inch
· Green chillies - 2 nos
· Mustard - 1 tsp
· Channa dal - 1 tsp
· Urad dal - 1 tsp each
· Cashewnuts - 10 nos
· Salt
Method: Pesarattu:
1. In a wok, heat oil & ghee.
2. Once hot, temper with cumin seeds, green chillies. Sauté.
3. Add chopped onions and ginger. Sauté.
4. Add this to the washed sprouted moong dal.
5. Also add the soaked rice & fenugreek seeds.
6. Grind to an almost fine batter along with salt & water. Set aside.
Method: Upma:
1. In a wok, heat oil & ghee.
2. Splutter mustard seeds, channa and urad dal
3. Add green chillies, chopped ginger and curry leaves. Fry.
4. add chopped onions and sauté
5. Add the fine Rava and cashew nuts and roast well till aromatic.
6. add boiling water to the roasted Rava mixture and keep cooking constantly.
7. Ensure there are no lumps.
8. Set aside to cool.
Method: MLA Pesarattu:
1. Heat a dosa stone/ plate. Once hot, spread the batter thin like for dosai.
2. Flip and cook both sides using ghee/ oil.
3. Take a portion of the upma and place it in the centre of the pesarattu.
4. Cover one half over the other and serve hot.

Hello I am from Rajahmundry east Godavari district Andhra Pradesh there in Kakinada this mla pesarattu is famous. They just grind the green gram which is soaked for 2 hrs along with ginger cumin seeds and green chillies no rice is added If you add rice no issues but dosa will be crispier then while doing dosa they put onions cut into small pieces along with coriander curry leaves chopped finely just like how you do uthappam. On that they put this uppuma and can be had with coconut chutney or as you said ginger chutney But yours was new to me anyways enjoyed and always enjoy ammavum payanum konjaradhu 😀🙏👌👏
