- A Dosai recipe from interior Karnataka made using coconuts & rice. What pairs with this flavourful dosai is a Saagu (no onion or garlic) The video has recipes for both dosai & saagu.

Ingredients: Coconut Dosai
· Boiled rice - 1 cup
· Raw rice - 1 tbsp
· Grated coconut - ½ cup
· Salt
Ingredients: Saagu
· Eggplants - 250 gms
· Mustard seeds - 1 tsp
· Red chillies - 2 nos
· Urad dal - 1 tsp
· Channal dal - 1 tsp
· Cinnamon stick - 1” stick
· Sambar powder - 2 tsp
· Curry leaves - 1 sprig
· Turmeric - ½ tsp
· Jaggery - 1 tsp
· Coconut milk (first press) - 100 ml
Method: Coconut dosai
1. Wash & soak rice in water for 5 hours.
2. Drain the soaked rice and grind to a fine batter along with grated coconut and salt. Set aside. The batter must be watery like for rava dosai.
3. To make dosai, pour batter on the hot dosai plate like you would for rava dosai and pour ghee to cook till done.
Method: Saagu
1. In a wok, heat oil and temper with mustard seeds, urad, channa dals, red chillies and curry leaves.
2. Once this splutters, add eggplants, salt, turmeric powder & sambar powder.
3. Cover & cook. Sprinkle water in intervals.
4. Cook till eggplant is mushy and well cooked.
5. Add powdered jaggery and fold in.
6. Finish with fresh coconut milk (first press) and bring to a gentle boil.
7. Serve hot with the coconut dosais.
8. Can also serve some fresh grated coconut mixed with jaggery as an accompaniment.

Nice recipes! I like the 'Ommachi kaapathu' that Amma says before putting the dosa batter or any other dish, when she begins to cook! I utter the name of Lord Ganesha, before I start to cook anything new😊 Also your outdoor cooking is so interesting, with lovely greenary all around and the Crowd and other birds chirping around, giving company! Palakkad iyers also make varumarisi adai adding coconut. The other alernatives we add are murunga ellai. My grandmom also adds methi sometimes. I add carrot n cabbage to the dosai. Ofc thenga goes with all of thses/
I was going to drool ver the murungai elai adai, but you beat me to it. When i don’t get murungai keerai, i use venthaya keerai. Heaven!

We call it verum arisi adai fm palghat side, tastes great if you add fresh murungai keerai to the batter. I sometimes add methi leaves when murungai keerai is not available (in the US)

Have visited dasprakash hotel in the mid Seventy for they would serve hot water to customers for drinking with food their Mysore boonda was a favorite of mine and my mother's was tenga dosai with sagu which they would serve without onions and garlic favorite restaurant of my parents Can we substitute bringal with something else as I am allergic to bringal nice cooking and Amma style is fantastic she many a times reminds me of my late mother thank you for the recipe 😘👏💐what s the picholi basket doing on kitchen cooking table

Coconut special 👌👌👍👍 Kerala la Verum arisi Adai solli adaiku arakkara mathiriye thengai pottu arachu Adai suduvom, with Jaggery powder eat this. Some prefer Tomato Chutney. Then Brinjal ku jaggery avoid panni tamarind juice add panni, coconut etc., arachu vittu panni iruntha innum tasty aa irukkume. Thanks 🙏🙏
