This gentleman is to be thanked for the effort of making a video. The technique has many flaws. Use a proper spanner set not an adjustable wrench as the caps can be very tight. Also, with the other hand hold the valve stem with an adjustable wrench when you remove the caps. Pipe stems can bend and even brake, something that this gentleman is ignoring. The air con unit must be placed on COOL setting not heating setting BEFORE you decommission the external unit. Run for at least 5 -10 minutes. If possible place an air heater in front of the internal unit to warm up the evaporator coil. With the hex key break the seal (as the valve will be fully back seated) of the liquid line (HP) valve (1/4" pipe). NOTE at 2:22 in this video when he closes the liquid line, the copper pipe ices up. This tells you that the liguid refrigerant in the pipe is now evaporated. You need to allow all the liquid to evaporate. Run for a few minutes. He runs it for under 2 minutes. may not be enough. You will hear the compressor noise changing as it sucks all the vapour in the compressor circuit. You need to give the liguid refrigerant time to evaporate(in the evaporator that is why the heater will help). Close the gas vapour valve (front seating it) (LP)(5/8" pipe). Ensure both valves are tightly closed. Don't overdo it. Remove the copper pipes and IMMEDIATELY place masking tape to fully cover the valves and the pipes!!! Do not use bubble wrap like this gentleman did. NOTHING must contaminate the pipes or valves. Place the caps back on. Also useful to bring a spray bottle of soapy water to spray on the valve once it is closed to check for leaks. The professionals will use a manifold to decommission the external unit. It allows you to monitor the gas flow and to understand if there is more liquid gas in the evaporator. If the unit is very old it is possible that the valves leak. when you break the seal at the beginning, place soapy water all over the valve and see if it bubbles. If it does. Place the caps back on and call an HVAC pro. Allowing air to enter the condenser when pumping down means that the gas must be removed and disposed of and new gas introduced.

Basically when you want to reinstall or install the AC, you need vacuum and gauge to clear the air inside the cooper pipe from outdoor to indoor. The reason is to ensure your gas is purely and not mixing with air trap inside the cooper pipe to maximise the cooling operation. But you still can do that.
