  • McDonalds fries are something I’ve been asked to clone for Years, but not got round to making the video. I was lucky enough a few Years back to go to see how the potatoes are gathered for them in the UK & ask a few questions, using this info & some of my favourite methods of making chips, I managed to make something that was pretty much identical to the real thing! It takes some time, but it’s worth it!

      Barry Lewis Can’t stand McDonalds fry’s or other fast food fry’s except KFC as they at least make chunky chips otherwise the best place to go is our local chippy or if I can’t be bothered to go out I just pop some McCain chips in to an air fryer much nicer than anything you can get fast food wise

      No dripping is used at all Barry. The fries are cooked in vegetable oil and have been approved by the Vegetarian Society

    In the UK; the fries are not cooked in beef dripping; that is US only... the UK fries are totally veggie/vegan

      They are not cooked in beef tallow in the US anymore either. However, US McDonald's fries are not vegan/vegetarian as the fries have beef flavoring added at the factory.

    7:36 , being an ex-employee of Mc D's a customer who asks for fries with no salt actually causes a lot of problems because an employee not has to completely cear the area of fries but they also have to do a complete clean down because 9/10 customers that ask for no salt are those who usually has allergies/reactions to salt

      @@dananderson6708 but you can be required to have a low /no sodium diet (for heart problems for instance). Although you should steer clear of McDs if you have heart problems anyway...

      @@dananderson6708 Typical salt, referred to as table salt, is sodium chloride. Salt, in the form of sodium, is necessary for the body's survival. If people are having allergic symptoms such as a swollen tongue or lips when eating something salty, it is most likely a reaction to the chloride.

    When I did my mcds manager training I remember having to learn the 5 characteristics of a good fry... but I can only remember 4 of them now 🤣 1. Golden brown in colour 2. Slight separation of the interior from the exterior 3. Non greasy 4. Mealy interior !

    Legend has it that Barry's house doesn't have multiple bedrooms or bathrooms, he has a 6 kitchen house. I have watched for a while Barry but it seems either you've moved a few times or you have 6 kitchens in your house lmao

    McDonalds in the UK is one of the only places that actually don't use lard or dripping to cook their fries. They just use vegetable oil. Crazy how I've had them in other places that do and they taste so similar.

    When I worked for McDs they stopped using beef dripping for them to be vegetarian and used shortening in the friers for veggie patties and fries.

      McDonalds's website still lists beef flavoring and milk and many other ingredients. I would take Barry's anyday over McD's: Ingredients: Potatoes, Vegetable Oil (canola Oil, Corn Oil, Soybean Oil, Hydrogenated Soybean Oil, Natural Beef Flavor [wheat And Milk Derivatives]*), Dextrose, Sodium Acid Pyrophosphate (maintain Color), Salt. *natural Beef Flavor Contains Hydrolyzed Wheat And Hydrolyzed Milk As Starting Ingredients.

      @@lily-kp1ll absolutely I would take Barry's any day as well, but McDonald's UKs fries are vegan approved so I don't imagine they use beef dripping in the friers. In fact I'd take any food over McDs hahaha

      @@kishens1 started working for them in 1989 in the UK and they used what was called Formula 47 back then which was shortening with beef dripping in it for the fries alone, Everything else was fried in vegetable oil/shortening or Formula 189. it was in the early 90's they changed to using vegetable oil/shortening for fries as well.

I’ve been a chef for 17 years now and on my days off I love nothing more than a good old gadget/recipe play. Upon finding your channel, you essentially do what I love to do on my days off.     The length of the fries depends on the time of year as potatoes vary depending on the seasons in which they are planted and harvested. Starch content in potatoes varies through the year too, so fries in summer are subtly different to those in winter.

    Barry McDonald’s Fries are Vegan approved by the vegetarian society fact , so the cooking oil used in stores most definitely does not have beef dripping in like you say it does

      It was a while ago when he learned about the fries so i think since then they were made to stop using beef tallow since they wanted them to be vegan, they did used to use tallow

      Barry’s video was filmed awhile ago, so this could easily be based off of old information. It wasn’t too long ago that the US converted to using all vegetable oils for their fries, for example (although it doesn’t quite work out perfectly since the chicken products are also fried in that oil).

    FYI, McDonald's fries are suitable for vegetarians in the UK don't use beef dripping, McDonald's US still use beef dripping.

    In fact as a professional cook from canada i can tell you that russet potato is only good for mashed potatoes but the best potato for fries is the red potato

    Well, most of the stuffs in restaurants are ofc made way before a customer makes the order. That's just how restaurants work. Everything is made in big amounts. Steaks and such things are ofc cooked when an order comes in, but most of the stuff is already made and then things get heated up in certain ways to make the portion that the customer ordered.

    3:31 The potato peeler you use seems to lack a knife to cut out the eyes (or sprouts). Get one with such knife (sharp little triangle-ich thing). It lets you peel and remove the nasty bits without changing tools.

    Aussie here. I worked at Mac Donald’s for 7 years. Started off frying in Lard they were these big disgusting blocks that would take about an hour to melt and heat. It changed , still the same these days, to liquid veg oil with no lard. It made it so much easier to clean the Vats when the oil was changed.

    As someone who worked at a McDonald's im just gonna say that "no salt" hack doesnt really do you any favours. At my store we had to tip fries from a fry basket directly into the fry container which is not exactly the safest thing with fries that were in boiling oil seconds prior. Just ask for fresh fries, you'll get the same hot af fries without a worker internally suffering when they go through the no salt process just to be asked for salt packets afterward.
    Though as you mentioned we don't let fries go stale or cold, we're constantly frying more and some workers snack on the "older" fries or nuggets inbetween rushes

    As a McEmployee - Yes if you ask for them with no salt we cook them just for that order and put them into a separate area in the fry station, though they shouldn't be more than 5 minutes old anyway (we have a timer for 5 minutes and after 5 minutes they're meant to be discarded).
    edit: Also the fry oil we use doesn't have beef whatever-it-was in it, we use vegetable oil for fries and veggie dippers so they're vegan (though the apple pies/promotional finger food get cooked in the same row of vats as the chicken and fish, so they are NOT vegetarian/vegan).

    Julia Child was a fan of McDonalds fries.
    In the US, they no longer put lard in the oil because they got sued by a vegan. I remember when they did, and really I can't tell the difference.
    After the first frying you put them in the fridge. They have to be frozen. The freezing process alters the texture of the potato, without it the potato won't be quite perfect. Try the freezer next time. They should go into the pan for their second frying directly from the freezer.
    If you have cold fast food fries, put them in a convection oven (one with fan) at 200 Celsius for about 7-8 minutes, and they'll be like new. A tiny bit browner, but taste like new and very crisp.

    Mcdonalds UK stopped using beef shortening around the early '90s. At this stage, there was beef shortening for the fry's and vegetable shortening for everything else. These days it's just the vegetable shortening, hence the tasty fry's we have now. The same "oil" is used on all products now (tho they are all cooked at different "stations") with fry vats very separate for the different products as they cook at different temperatures and this helps with reducing cross-contamination.

    Get sturdy egg slicer. Get plastic square tube. Get piston. Push potato through tube into egg slicer. Perfect straight fries.

    never had good luck making chips at home tried blanching in lower temp oil than tried in microwave got to try boiling in water thx for tht tip(by the way im from the states love how you all still use freedom units over metric lol)

    I actually don't boil my fries. I learned a way to make fries that works great. After you wash the out. Put then in a pan with cold oil and then turn it on. The process will boil them as it crisp up. It take a couple try it get it down but it works great. I usually use a cast iron pan. (big enough to fit all the fries I would make) make sure that the a even spread out. U have to stirred even few minutes. (carefully cuz they will turn to mush). But it works great. It the best way I've ever made fries

    No beef dripping or lard is used in the fry vats in the U.K. stores. I am sure a few people will have mentioned this but it is a couple of years since this video landed and I thought it would be helpful to add up to date info.

    Can confirm as someone who gets put on fries often at a maccies, we don't do the dripping anymore because the veggie dippers are fried in the fry vats

    Osmosis allows the sugar to penetrate the surface of the potatoes and then when you deep dry them it caramelizes the surface giving you the nice even coloring!

    One extra ingredient u may be forgetting, the addition of corn flour before putting it in the fridge,
    And
    For Asian spice loving people u can add chaat masala along with corn flour .

    If you put a little white vinegar in the water it’s less likely to break the pectins in the potato down which will prevent breakage.

    After working at good old Maccies throughout sixth form and uni, they don’t add any lard or anything to the oil but interesting! Not sure if the fries at coated in them though. Great as always Baz

    I figured out from a different video is that if you put vinegar when the potatoes are boiling then the patato doesn’t snap even though u put it in the water for x amount of mins

      Canadian here and I agree 100%! Also, sugar water?! No thanks.
      I pre-fry in canola with lard at 150°c/300°f, refrigerate, and then fry at
      190°c/375°f.
      McDonald's fries are garbage. They're pale & greasy when fresh and practically inedible after 5 mins.

    McDonalds don't use Beef Dripping, they use Vegetable Shortening. And have done so since at least the late 90's (when I did time there)

    As someone who worked at Maccas for years, if you want fresh fries, just ask for fresh fries. If you ask for no salt when really all you want is fresh fries, it’s a huge pain in the arse to have to completely clean down the fries scoop and the station of salt, only for the customer to then ask for salt packets separately 🙄
    So just ask for fresh fries, they will happily do it for you, same as cooking fresh nuggets or beef etc. Of course there are customers who had high blood pressure and dietary salt restrictions which is fine, but it was always obvious when the customer just was trying to get fresh fries. Adding the salt when they’ve been sitting around even for only a minute won’t be good anyway as it won’t stick.

    during the boiling process if you add a tiny tip of vinegar it makes the chips or any potato product much more flexible without snapping as easy.

    I used to work at mcdonalds a few years ago and the ask for fries with no salt is true, a lot of people ask for fries without salt and when they get their order they ask for a few bags of salt

    I love the new kitchen!! I remember the lard being at the factory not at the stores. I use to work at McDonald's and we only added oil. But I have been wrong before.

    I've started putting a splash of vinegar in the par boiling process to make the potatoes less prone to snapping. would highly recommend to save on those casualties!

    If you mix a little vinegar into the boiling water it will stop the fries turning to mash. Fluffy centre, crispy outer

XD Reminds me of a funny lil' thing: When me and my brother still lived with our parents, our mom would ask if the food tasted good, and we'd all (me, bro and dad) be chewing when she asked that, so we'd just answer "Mhm!", but this happened so often that it ended up where she didn't ask, we'd just take a bite of the food, look at her and say "Mhm!" to tell her it was good! XD

    So according to McDonald's they add sugar to the fries to make you want to eat more. It has to do with a chemical release or something in you brain that makes you want more. I know I did not explain that right but I saw it on some doc about them. Also they have their own proprietary recipe of coke. Their coke has more of a bite and makes it good to the last drop even with ice.
    Fun fact about the golden arches is always a fun read/ rabbit hole to go down.

    For the record - McDonald fries are 100% vegan approved. They're fried meters away, in seperate units to Chicken. There's no chance of contamination. Seen some people in the comments suggest they cook chicken and fries in the same oil, which is false. They do however cook the cheese dippers, apple pies and fish filet in the same units as the Chicken, BUT in different vats which have their own filtration system, so the change of cross-contamination is simply accidentally dropping a nugget into the oil.
    Dripping is not used, ever.

      Yes, we used to use only pork lard for fries and they were delicious. The same goes for pączki and angel wings, they are just not right in vegetable oil.

    You need to try Formula 47, the oil McDonald's used from 1966 to 1990. The beef dripping in the current recipe is an attempt at replicating the flavor of that old recipe of 93% beef tallow, 7% vegetable oil.

    Can confirm that asking for no salt works 99% of the time (only time you get your fries sat ready in this case is if you order at the same time a batch comes out of the frier) I used to work at Maccies and use this trick ALL the time

    Huh. I knew McDonald's fries had sugar added, but I wasn't really sure how they did it. I think I figured they spritzed them with sugar water after the first cooking or something.
    About asking for no salt to get fresh fries: Bad idea. One, like you said, the turnaround on McDonald's fries is already pretty fast, so your fries will be pretty fresh regardless. Two, you don't even have to ask for no salt to get a fresh batch: Just ask if you can get fresh fries, and they'll put a batch on for you; it's not like they're not gonna sell what's left, after all. Three, the salt doesn't really stick properly except when the fries are fresh from the fryer, with oil still on the surface, so if you order an unsalted batch then put salt on afterwards, they'll come out bland, so don't do that unless you actually don't want salted fries. Four, it's a huge pain for the staff, since they've got to clear any salted fries out of the fries warmer/serving station before putting your unsalted fries in, whereas if you just ask for a fresh batch they can dump it right on top of whatever fries are already there.
