Last time I made fried wings, I marinated them in fish sauce and they were fantastic! I also like to use 50-50 mix of flour and starch to coat. It's a nice crunch that doesn't go soggy if you don't finish the chicken and save it for the next day. ❤
Did you use fish sauce only for the seasoning??

The leg/thigh is called a hindquarter, Quan! I worked meat and seafood in Seattle, WA for years, and used to season hindquarters for BBQing all year long…
Leg quarters would be the East Coast term. I’ve also heard it called the short thigh and the long thigh in some communities.

Mannnn it's ironic but I grew up in the deep south and could never get deep frying down the way I wanted. I've recreated some of the most popular chef's fried chicken recipes and couldn't get very close to something like Popeye's quality fried chicken back home - and some of those recipes are overly complicated that still result in a pretty basic fried chicken. But you, Quang, changed that. You know I'll be dropping your name like citations in a research paper. Bravo.
