    This is the Actual Halwa made of wheat. The other Halwa u usually eat is Suji halwa which is entirely different. Suji Halwa is relatively easy to make and literally takes 10min. This Halwa takes hours.

    The "gooey" Halwa is actually the traditional one as it's said in the video it's usually made with wheat milk sugar and ghee Or semolina too sometimes. Halwa is supposed to be gooey jelly like. Carrot halwa is more towards kesari than halwa.

    Kothu is chopped pieces of rotis, cut vegetables, spices, sauces / curries (optional) , pices of meat based on the type of the kothu (Chicken, Mutton, Egg) all added to together and chopped into very fine pices (kotththudhal in tamil means continuesly digging/chopping in one place ). It's very flavourful, spicey and tastes incredable ❤️

    That halwa is made of wheat, sugar and ghee, garnished with cashews. This is also called Thirunelveli halwa - Thirunelveli is a city in South Tamil Nadu.

    You can actually find kotthu in Los Angeles, its delicious usually it is the sri lankan version but still delicious 😋 😋😋 if you guys can find the nearest tamil restaurant im sure you will be able to get kotthu. My personal recommendation is mutton kotthu roti.

    Karaikal halwa differs from Tirunelveli halwa. Very hard and tasty. Still it doesn't lose its tradition and flavour even it crossed many years.
    A week before I ate Thirunelveli karupatti halwa, karupatti coffee and kuzhi panigaaram near Chennai. Karupatti is palm jaggery which has immunity.

    Halwa came to India from places like Turkey and Persia. Halwa literally is flour cooked in oil with sugar. And that is similar to the Halwa you get in South. In North halwa took a turn and things like carrot halwa, Dal halwa etc came.

As all did , me too invite you guys to visit Madurai least once … Madurai is Historically very rich in culture, It’s called as Athens of East … I’ll be happy to be your host … Madurai is the best place to eat …. This video not even covered the tip (not even 1% of Madurai traditional foods) …. I’ve been to almost all parts of India and few countries outside India , trust me .. There’s no match to Madurai foods … There are easily least few 100 items can be termed as specialty of Madurai… You should definitely visit Madurai once , you’ll love it … Kodaikanal (Princess of Hills) is just 3hrs away from here … You’ve already reacted to Kodai .. The temperature there will be perfect for you..

They all were discussing jovially that they could stir Halwa and work there. It was a friendly discussion, not a serious one.

    These kinds of halwas are the original halwas which was brought by Arab merchants to South India. The ones you have in the North came from Persians that conquered North India and wanted to have some halwa, so they adopted something similar using ingredients available there.

    When it comes to south or north of India. The version of preparation for sweets selectively is different from both the side. Halwa made in north region commonly is made with milk as the base, where as in south its made with either Maida(All purpose flour)/Rice Flour as the base. Now the flavor and cooking style varies on the type of sweet you are making. In south, dishes made with milk will more or less called as a payassam where those categorized items are called as Kheer in the north.
    So overall the consistency and texture varies a lot at both the regions. Its like you can try to duplicate, but it'll not be good as the original. Like South Indians say that to have really good south indian food, go to south India. But for some apparent reason its not the same for north indian dishes, as you'll get the exact duplicate in south indian restaurants with the original taste. Especially those which are well known in north India not the local or region specific dishes.

      Ok...i don't know where are you getting your info from, but i am a North Indian and halwa is made with flour/maida and also potatoes. Your comment about milk based receipe is also partially correct.

      @@tarunkaushik1214 First, I said "is commonly made" I didn't say it as "not used at all". Second, Flour or Maida are the same in India as its a common word but for selective items some times in India we add words before flour to point which grain it belongs to if its not Maida..., but in the US it is called as "All purpose Flour".
      So when I mentioned commonly, I was not referring the rarely used base component for Starch like you said potato. There are places in south where Tapioca is used as an healthy alternative to starch than potato but as a Rice Flour been used by selective people. Mostly because of the work involved, price wise etc.. those base items are not the commonly used.
      My source is purely based on being a foodie. So I do my checks here and there most of the time either while cooking, purchasing and even during the time of consumption to know the taste and texture.

      South India doesn't have the same North Indian food you get in North. Nowhere close. You must be really delusional to say that. Everything in south has curry leaves. Some highly pungent masala which can only be an acquired taste. The short , fat variety of rice used to cook biriyani and every other rice prep looks God forsaken. The biryani is not even a biriyani. On the other hand go any where in the North u will get the same idli sambar you get in the south.

      ​@@priyak7384 First, all dishes in south doesn't require curry leaves. That's a stereo typical feeling for those who consider all south Indians are same where are south Indians never claim non of them are same in any state in North, East or West.
      Now, i'm not sure which restaurant you had a Biriyani. But I do know that since south India also produces a wide variety of Rice there multiple and different signatures of Biriyanis in couple of districts within every single south Indian state. Like in state of Kerala, if you want less spicy and less heavy biryani you can opt for Thalaserry Biriyani. If you want to little spicy version with Tandoori style chicken in it, then opt for Calicut/Malabar Biriyani. Kannur Biriyani is more like the you get more Masala. Thiruvanthapuram Biriyani is more like you get a alot of Gravy with the Chicken or whatever meat as the dum priority is given for the Rice. All the rice used in each of the localities are pretty different, like towards north of Kerala the commonly used rice is called Jeera which has got a different fragrance and a different taste comparing all the Basmati rice in India.
      Tamil Nadu has more like a creamy and heavy feeling Biryani's like Bucket Biryani, Tomato base Biryani like Aambur Biryani(People of Karnataka claim it as theirs as well because its locally available more in number and at times its lighter based on how certain people cook it) and for little & or not to heavy version is Thalappakatti Biryani.
      Apart from the above version, Karnataka has a spicy version of Biryani where green chilies is the base called as Donne Biryani with an average long grain rice. There are other different versions Biryani's are also there but yet to try.
      Now coming to State of Andhra Pradesh/Telangana comes the Signature Hyderabad Biryani and Andhra Biryani. Both are extremely spicy with really long grain rice. The heaviness and spiciness is only felt, if you mix the fix the masala that is next to the meat/anything that is bought or else. It is heavenly in taste without the masala as well. The same versions are available in Karnataka specific to Bangalore but it does taste the same but you won't feel heavy and there are few recommended places to get either Authentic Andhra or Hyderabad(part of Telangana) Biryani.
      There are other versions also available but its not popular enough to be recreated to have the same in a city environment were I stay also.
      Now Goa and other states have their own versions as well...
      Now Idlies, were to start. If you feel that there is only 1 type of Idly is there in south. Then its not.... There are different versions of Idlies in south not only it varies in size but also in taste and texture as well. Now if you feel that all the south Indian sambars is also same, then my friend. That is also, wrong. In south India you'll find multiple variations of sambar, you get versions like with multiple vegetables, less vegetables, more dal, less dal.. you can get no spicy sambar, less spicy sambar, really spicy sambar and at last even sweet and sweet & sour sambar as well. Not a fan of the sweet version but its the commonly sold and its a household signature of Karnataka.
      Above all, south Indian breakfast menu is not all about Idly and sambar. Every single state has a different signature dishes when it comes to Breakfast menu but Idli is the common one. Which because it is considered as the healthiest breakfast. Because the rice dough with urad dal in it, is steamed. Like for some Kerala's steam cake which is also known as Puttu. Is a healthy version, but the health scale varies based on the dish that is taken along with it from sugar, milk, boiled green gram all the way till different types of curries as the options are multiple.
      Now for the fact, about having the south Indian dishes taste being replicated in North is tough is because of the wide variety of versions of dishes available and how its prepared in each district and state varies. So the attempt to duplicate something that is called as south India is not possible. You can try to duplicate, one specific region in a state but not for all the states. Now the words that I used is something I've heard personally from a lot of North Indians, Foreigners and even food bloggers as well.
      That "You can find the north Indian options at select places in south itself, especially in the metro cities which tastes ALMOST the same but not the exact one. But when it comes to south Indian, you should only try in south India as within each state you almost get the same taste but you don't get that taste in any of the south Indian restaurants in North India. And no one can claim that the south Indian food served in north neither tastes better or good in North India, forgetting it is an imitation. So the authentic one has to be recognized than the imitation".
      Now for North Indians, why almost the same taste is available I claimed. Even though vast majority in North have a common dishes in menu. Most of the dishes are prepared differently in each part of North, East, West and in South they pick one method and make it. Example, you may search for the recipe for Malai Kofta in CZcams and you'll find a wide variety of versions were the core ingredient is the same but the process and taste wise. All of them, tastes different. So if an individual is seeking for a particular district/region flavors and if they don't get it with high expectations. Obviously they get disappointed.

    14.43 - not semolina but wheat. It’s famous wheat halwa native to Tirunelveli and similar is in Madurai. It’s just Wheat (made of wheat milk by soaking balls of meat flour and taking milk after about 4 hours by crushing with hands and keep it overnight for fermentation kind of) and then morning make halwa by just using that milk and then add sugar after it start to thicken and then add caramelised sugar after a while abd put lot of ghee intermittently and cook (20-25 mins around) and need to stir continuously. And at end optionally use cashews. The consistency to stop is when the ghee start to come out of halwa and halwa become nice and blended

    That gooey thing is the only 'real halwa'. Getting that rolling consistency is the key.

    The city madurai is called temple city or sleepless city. It has a long cultural history. The halwa is famous in southern most district known as tirunelveli or iruttukadai halwa. Everywhere in India you can see the square sized halwa but this is specific to that area and popular in various parts of Tamilnadu.

    It is made from wheat milk. This halwa is local to two cities in Tamil Nadu - Madurai and Tirunelveli. The same store also sells a spicy snack called mixture and we usually have the halwa and mixture together as it balances out the sweetness. As someone born and lived in Madurai for 27 years I absolutely enjoyed that video. Thank you!!

    It's called madugulu halwa it's very different to carrot halwa and delicious as hell I would prefer it more than carrot halwa you might too.

    It is the famous Prema Vilas halwa stall in front of Madurai Jn. It is usually prepared from 4 p m and purposefully served hot and piping in a special leaf other than banana leave called Mandharai ilai to add a special aroma. After that they give you a spicy savory called boondhi. Many madurai people are addicted to it After this they cross over the road hop into College house tiffin hotel to wash down with an excellent filter coffee
    There is one more halwa known a eruttu kadai halwa meaning the halwa made in a shop which has no fancy lighting in Tirunelveli town roughly 250 km from Madurai. You have to be there between 5pm to 7 pm and after that the shop is closed.
    There is also a special halwa known as Nagapattinam Halwa which is 300 km away from Madurai which is prepared by Muslim brothers

    That's exactly how a freshly made Halwa is supposed to be - gooey! The solid bricks you get in a sweet store is not fresh. Madurai's famous Halwa point is just opposite to the Railway Station called 'Iruttu Kadai Halwa' meaning '(Iruttu) Dark, (Kadai) Shop. It's a small shop, super crowded all the times, and you can taste the most authentic Halwa of Tamilnadu there. The other signature street food in Madurai is the sliced, diced, minced paratha bread with egg, veggies, spices, etc. made with a butcher knife on that hot plate called 'Koththu Paratha'. Koththu means chopping/slicing/dicing/mincing with a knife. It's one of the most popular and tastiest food you would ever have. Of course Paratha, Roti, Chapathi etc. are all from North India, but are hugely popular in south as well. Madurai has its own flavor of these varieties and the king of all is 'Koththu Paratha'. The noice of the butchering knife hitting the hot plate to slice/dice/mince the bread has become a photographic image everywhere in Madurai in all the thousands of street shops in the evening/night hours, to a point, that it became a huge noisy nuisance, authorities had to issue an order to keep it low to all street shops. :-)

    Dear #Korbin & #Rick : Basically this is the Regular Halwa, rest all Halwa's were seasonal & occasional. This is Made up of regular wheat flour, selmon flour,( Rajgira) etc... Mostly people have it in fast days.

    Its the famous Thirunelveli ( Thiru-nel-ve-li ) halwa. its famous in south india particularly in the State of Tamilnadu. if you eat this one once, you are not gonna like the other type of halwas that much. Try searching it as Thirunelveli halwa or Irutukadai halwa, both are same. A kilogram of the halwa costs ₹700 approximately 10$.

    Thirunelveli alwa, Famous in South. My favorite. It just melts in your mouth. And the taste is just heavenly. Most importantly You should eat when it's hot.
