You dont add besan? Besan is what gives it its taste. Without it it just tastes bland

I think the paste is too runny that's why it didn't stick well to the potatoes and form a thicker crust.
Plus you could have added salt to the water and let the potato slices soak a little longer, otherwise it will taste bland.

The fried batter should be crispy and airy...It should have volume and that's difficult to achieve...The white flour, chickpea and baking powder proportion is a secret kept by street vendors 😂
