  • This Chinese Steamed Chicken in Ginger Paste Recipe 姜蓉蒸鸡 is a very easy recipe to execute. If you like ginger sauce which is usually served with Singapore Hainanese chicken rice, you will definitely enjoy this dish. I also think this is a good recipe for your Chinese New Year reunion dinner as well. Just prepare the ginger paste the day before and all you need to do before reunion dinner is to steam this up. So easy, right?

    Ingredients:
    Serves 4 pax
    Ginger paste
    =======
    Blend (A) together into a paste and then fry (B) together.
    (A)
    12 cloves of garlic
    100g of young ginger
    90g of old ginger
    0.25 cup of sesame oil
    (B)
    0.25 cup of sesame oil
    Ginger paste
    2 tablespoons of oyster sauce
    1 tablespoon of light soy sauce
    1.5 teaspoons of sugar
    Marinated chicken - marinate for at least 20 mins
    =======
    500g of chicken
    1 teaspoon of salt
    2 tablespoons of Chinese cooking wine - Shaoxing Huatiao wine
    1 tablespoon of cornflour
    1 tablespoon of ginger paste
    Last step: Steaming the dish
    =======
    Spread some ginger paste over marinated chicken and steam for about 10 - 12 mins.

    I love ginger and garlic, They are my two favorite ingredients. This dish looks so appetizing and flavorful. It takes a long time to prepare the mixture of ginger and garlic but it is worthy to spend that amount of time in order to extract all the flavor and get a nice paste.     I made this last night, turned out delicious especially the sauce. Mine is a bit oily, going to reduce the oil next time i make this again, but my husband really liked the sauce he ate it with rice (after the chicken has been demolished by my daughter)

    Looks wonderful. How many tbsp of ginger u add as topping onto chicken? I counted about 4. U can also serve the ginger paste as a dipping sauce right? Will 10-12 mins be sufficient to cook the chicken all the way through?

    Look so yummy! I used to go Zion road for nasi and they no longer there when I came back to visit my family. I really miss their spicy pineapple. Have asked my Malaysia friend when I describe......she thinks is called Gulai nanas but when I Google the pictures not sure if is the same. Hope chef can make a spicy pineapple dish. Thanks ☺️

    Another good video bud . Could you cook this in a aluminium steamer with holes in ? Or would the loss of the chicken juice into the water affect the dish ? And also chicken on the bone I would of thought would take longer than 10 minutes? Any advice would be appreciated keep up the good work my friend 👍🏻

      Hi Jason. Preferably not unless you’re cooking this in a rice cooker then you want to let the sauce get into the rice. Otherwise you wanna keep that yummy sauce in the plate so that you can drench it over noodles or what not. If you’re cooking this in a rice cooker using the aluminium steamer with holes, I would suggest that you lay the chicken directly onto your rice. This dish goes really well with steamed rice 👍🏻👍🏻 if not, suggest you to put the chicken on a plate then put the plate on the aluminium steamer. Hope this helps. Cheers!

      Much obliged..I owe you a lot of for insights on the recipes.I even tried to just alter some of it a bit since my family does not like some of the flavors but overall great.More power to all your recipes,my family loves eating them, especially the garlic rice,they want it almost every morning.

    Hi sir, did this recipe , turned out good except if found the ginger paste a lil bitter.
    What wen wrong? N i sub rice wine instead of cooking wine..

    Btw do u increase the marinade proportionately if u increase the chicken? I normally use about 700-800g chicken (about 2 thighs 2 drumsticks) so does that mean u steam it longer l?

      Hi Lilian. Yes please increase the marinade ingredients since you’re using a bigger amount of chicken. You can cook them for about 12 mins. Then use a toothpick to check if the meat is done. If the meat juice runs out clear, they are cooked. If you’re worried, feel free to cook them for 15 mins. Happy cooking!

    Can I use boneless chicken thigh fillets? Is there any particular reason to use chicken pieces with bones?

      Hi Lester. We only cook this as a single dish for our dinner to feed 3 people. It was just nice. If you have about 8-10 people, you can consider cooking one small chicken which is around 700g. Should be enough since you will have other dishes as well. Happy cooking!!🤓

    Goes well with mee sua. Blance mee sua readied put in noodle bowl, Blance vegetables (choy sum) put in noodle bowl, Heat the readied chicken & ginger sauce in pot, add more water, add chicken powder, more light soy sauce, little sugar, chinese wine. When chicken ginger soup heated, pour in noodle bowl and serve.
