  • A delicious salad with chicken breast, Korean-style carrots, and red beans, dressed with a Greek yogurt and herb sauce, and topped with walnuts and green onions. Perfect for a tasty and nutritious meal, ideal for those who want to enjoy a flavorful dish while keeping an eye on calories.
    Ingredients (for 2 servings):
    * Korean carrot salad - 150 g
    * Canned red beans - 150 g
    * Parsley/Dill - 20 g
    * Walnuts - 30 g
    * Greek yogurt - 4 tbsp
    * Cooked chicken breast - 200 g
    * Dijon mustard - 1 tbsp
    * Green onions - for garnish
    * Salt, Black pepper and spices - to taste
    Recipe
    1. Cut the cooked chicken breast into cubes. Finely chop the herbs and walnuts. Thinly slice the green onions for garnish.
    2. In a small bowl, mix Greek yogurt with the finely chopped herbs and add salt, black pepper, and your favorite spices (e.g., dried garlic, oregano, basil).
    3. On a plate, place a layer of the diced chicken breast. Top with half of the sauce.
    4. Add a layer of Korean-style carrots. Then, add a layer of red beans. Drizzle the remaining sauce on top.
    5. Sprinkle the salad with the chopped walnuts and garnish with finely chopped green onions.
    6. Finally, add a little Dijon mustard to taste.
