    Who wins?!
    In this episode, Geoff demonstrates how to create EPIC artisan style bread from home, with no kneading and no complicated sourdough starter! As a bonus, we’re pitting our beloved Kamado Joe with a Pizza Stone, against an oven / dutch oven combo. Who does it best?

    The cook!
    Poolish:
    150g bread flour
    150g room temp water
    ¼ tsp yeast
    Main dough. Add Poolish to….
    400g bread flour
    1 tbs salt
    ½ tsp yeast
    280g room temp water
    Rests:
    1. Rest Poolish for 12-16 hours. Can do as little as 4 (not as good result) or up to 24 hours.
    2. After first mix into main dough, rest 30 minutes
    3. After remoulding dough the first time, rest 30 minutes
    4. After the second remoulding, rest 60 minutes
    5. After moulding into proofing basket or towel/bowl combo, rest 60-90 minutes for final proof. Heat oven (with the dutch) or barbecue to temperature while this occurs.
    Note: you can proof the bread directly on the wood using the proofing basket to get the rings on the dough. You just need to flour the wood. Then you can cover it, using the supplied calico cover.
    6. Cook 30 mins lid on, 20 mins lid off in your dutch oven, or 50 minutes uncovered approx.
    7. Store bread in a cloth or paper bag, or cut face down unwrapped. Wrapping in plastic or foil, will cause crust to soften.
    8. Re heating in oven for 5 minutes can bring a stale loaf to life!

    Trying your recipe but using a Dutch oven in the KJ with heat deflectors and a container of water. Also going to try my hand at making duqqa.

      Careful with burning the bottom in a Dutch with KJ. Tricky part is the extreme heat from below. Hope it goes well!

    I think that professional bread kitchens often employ expensive steam ovens which keep the bread steamy during the initial cook, which keeps the dough plumper and bouncier - that's one of the reasons that the dutch oven works so well: not only does the dutch oven help the bread keep its shape, the bread is so tightly enclosed in there that it steams itself as it cooks!
    I wonder if the Kamado might perform better with a tray of water that you remove after the first 30 minutes - although the loaf is still probably not going to keep its shape as well. I guess you could just plop a dutch oven in there, but at that point what's even the point? :D
    Did you get any smoky flavors from the crust of the Kamado loaf? Was that good?

      Yeah I thought through all the same stuff :) I make bread in there often and it does have a very subtle flavour to it. But if you want a perfect shape with more rise than spread, the dough has to be contained in a vessel of some kind. Still I enjoyed the experiment :)

      Try with and without a Dutch oven in the KJ. When you use the Dutch oven monitor your temps closely. Because the heat comes from below it will burn on the bottom if you let it get too hot. 👍🏼

      You’re aware we don’t control where or what ads you see right? Not to mention that happens on basically every YT video. And by big block, you mean 30 seconds … cos that’s the absolute max. I’d worry for humanity if we’re at the point where 30 seconds of time is a deal breaker. Yet you can spend 30 seconds having a whinge to me over something I don’t control.
      Just saying …
