    1) The parade showcases the winners of Gallantry medals from various wars that India had fought.Earlier parades showcased Victoria cross winners, followed By PVC (equivalent to VC) winners. Now most have passed on and only 3 PVC winners are alive and they are leading the parade.
    2) This is followed by various military hardware from Nuke delivery Agni missiles to supersonic Brahmos. What you saw was Aakash SAM mk2. Also included are tanks, A defense, radars ,apc etc.
    3) This is followed by Floats repressing stuff using scale models which cant be presented due to its sheer size like navy will always have a float showcasing the indigenous aircraft carriers. Airforce will have newly acquired and much needed C-130,c17 and other hardware. The lady pilot you saw is the first lady fighter pilot flying the rafale fighter jet, she is the from the 4th batch of lady fighter pilots.
    4) This is followed by the various regiments of the Indian army. we follow the british pattern and the headgear is mostly Indian. The waistband represents and matches the colours of the regiment which again is based on locations from where the men hail or come from or recruited from. Indians pre british wore Indian pugrees and that has been carried into the army by the british to save costs and also to give unique identity to each regiment. Now a days these pugrees are mostly worn during formal ceremonies.
    5) This is followed by kids (school and college kids) who have opted for NCC ( national cadet corps) precursor to army.It gets you the feel of the army life and mostly done to get kids to have a feel of the army life and if they want they can persue it as a career.
    6) This is followed by Floats of all states and union territories of the country which mostly represents the culture and heritage of that state.
    7) This is followed by kids who have won presidents bravery award.

For example rajput regiment (kingdom of rajput) madras regiment (kingdom of chola) these regiment were belonged to kingdom for thousand years, they merged into army during British era, most regiments you see here were once belonged to various kingdoms.
Other kingdom like Kingdom of travancore and kingdom of cochin had trading relations with British and refused to merge into British indian army, they had there own province, currency and laws, some of em later absorbed into Indian Army after independence.

As you said initially that except for headgear, the uniform looks colonial era, and that is true. But such colonial influences are slowly but steadily being removed, example, the recent beating retreat ceremony had a christian hymn replaced by an Indian patriotic song. First, the more obvious of the foreign influences (both in and outside the military) will be removed, then the remaining would be replaced.
Its unfortunate that in India, history is taught from the point of view of the invaders and oppressors and not from the view of defenders, resistance forces, etc. due to a large conspiracy happening in the early days of independent India.

Camels are used in Rajasthan region to petrol India-Pakistan border. So camels took part in the parade as they are part of Army. Even horse are used in some location especially on China border. The Indian Army operates in different & extremely tough areas. From extremely hot to extremely cold & high altitude.that's why Indian Army are the most experienced army in the world.
