    I must eat gluten free, and I also struggle to eat enough protein each day..... so these recipes are all winners for me. I also try to avoid buying packaged gluten free products, as they have extra ingredients that I don't want to put in my body. Again, you are a wealth of information for me, and I will be buying LOTS more eggs now. On Monday my son's family, which includes our four grandchildren, arrive from out of town for the week. I think the Dutch pancake will be a huge winner! And the custard pie! Thank you so much!!

      Hi Patti, I found that wheat and gluten (and sugar!) were the cause of my extra weight. I have reduced my grain intake by using psmf (egg white) recipes for bread, buns, pizza base etc. They keep me comfortably full. Also whey protein powder added to breakfast, pancakes, baked goods is not expensive but helps the protein content. I've just discovered this channel and love her recipes. I'll be trying them out!     Just an idea.…We save the egg shells for confetti eggs. When we crack the eggs we do it at the pointy part of the egg... rinse them with vinegar and water.. Let them dry… then decorate with crayons, glitter etc and fill with confeti... cover the opening with small piece of tissue paper and any regular kids glue works. Easter ✝️ we crack them on each other's heads 🎉. Loved all your egg recepie ideas ❣️

    I started with red linseed flour. It needs baking powder and some yeast also psyllium husk to make it smooth and a consistency of dough. it turns out nicely and tastes delicious. I use for sweet and savoury dishes. There is no flavor of linseeds left.

    I started giving my flock the wild bird seed mix from tractor supply in addition to their regular feed and they pumped up their production sooooo much… I’m getting 30-34 eggs a day. Is soo much cheaper than the fly larva and they go crazy for it too… ❤❤❤❤ love your content.

    Thank you for this video. I’ve been getting eggs from my friend’s chickens every other week but sometimes being single I find a lot of eggs to use up before my next dozen arrives. ❤ I do love Dutch Babies! Especially when friends visit as I love to make an individual sized one in one of my smaller cast iron skillets. The poof always gets a big reaction.

    I am American but my mum is English and I now live in England. I have only just heard of Dutch babies watching videos like this. In England they are Yorkshire puddings. You serve them with a roast dinner (like you would corn bread). If you make them in muffin tins they should make a cup for gravy nom nom. Or if you do a big version like yours you add sausages to the top of the batter before putting in the oven. This is called “toad in the hole” you then eat it with Mash potatoes and gravy. I’ve never tried a sweet version. 😊

      Love it! We use butternut squash instead of noodles in lasagna or instead of tortillas in enchilada casserole. Just a few things that come to mind besides baking or as a side! Yay for all the eggs!

    Found your channel recently. Yes, in some parts the food we can buy is better than in the US, still any style and change finds Europe sooner or later. Mostly sooner. I think it is the best to avoid all stuff that food industries claim to be “better" as it is their way to make food worse and less worth while they make more more money.
    Thanks for sharing your experiences. Sure like your stove. Reminds me of my grandmother's stove.
    I've never seen it in Germany. Too high in electricity and CO2. They won't sell it here.

      Great question! Unfortunately, I haven’t found a great replacement for coconut flour because it has such unique properties with how it absorbs liquid. Sorry!!

    I don't quite understand this gluten free cooking. Italy is the country with the longest life age here in Europe. Their diet is based on gluten (pasta, pizza, gnocci ect.).
    Will be very grateful for an explanation if it is not too much.

      There can be a wide spectrum when it comes to quality with gluten and the grains that are being used. It's likely things in Italy are more authentic and less processed than they are here in America. Plus it can all depend on how the foods you're eating are prepared. We use a lot of low quality oils and other ingredients that aren't the norm in other parts of the world that add to gluten causing issues with many over time. That's a brief rundown.     Do you have any ideas about a substitution for coconut flour--one member of my family has tree nut allergies--in your tortilla resipe? With regard to a previous video, you've shared your commitment to what you learned in The Resilient Gardener, Carol Deppe. Bravo. This is one of my favorite gardening books. I would like to suggest Landrace Gardening, by Joseph Lofthouse--a very interesting concept. Perhaps you have read it?

      Thanks for the book suggestion! I haven't hear of this one but will have to check it out.
      I may try to omit the coconut flour in the recipe and just add a bit more tapioca flour?? I haven't tried and I know coconut flour has different properties but it's only a very small amount that's added in comparison. Let me know what you try and how it works!

    Thanks for recipes. Always like trying new things that are healthier, plus ones husband like which is usually the challenge. He is meat/potato man. Have you tried producing black fly larvae yourself? I do on small scale since live inside city limits, but my chickens would love more. Will have to check out your brand, local weed/feed believes it is “gold”!! SC city backyard farmer.

    Are a lot of eggs good for you. Weve been eating egg whites, I'm just not sure anymore 😔
    Love your videos, everything looks so good. Do you follow recipes or just throw things together? I'm so bad at it..
    Typically I follow recipes except for small things.
    Also do you clean cast iron or just wipe it out?

      The whites have protein but the yolks is where the healthy fats and most of the vitamins and minerals are. We eat a lot of eggs and believe they are highly nutritious :). Now I do a lot of throwing things together but I used to follow recipes a lot more than I do now. I don't normally clean out cast iron; unless it really needs it. :) Thanks so much for watching!       Good question! When I experimented with it that way I used the same half cup. It was good but definitely didn't have the same texture in the crust as a flour or even an ap gluten free flour blend. It was a bit more soggy. Just a head's up if you try it! Thanks for watching!

    Thank you! Those all look yummy! While I sometimes use tapioca flour in small amounts for thickening, I eat protein-heavy keto, so it has too many carbs to be practical for me as a primary flour. Since you experimented so much with grain-free flours, I'm hoping you might be able to answer my question. Based on your experience, could almond flour be subbed for tapioca flour 1:1? Or would I need to adjust up or down in amount or need to add more or less liquid? If you don't know because you hit on this and never tried almond flour too much, I understand and I'll just experiment. Thanks in advance. ❤

      Tapioca is from cassava so it’s a root so it’s quite diff from a nut like almond
      I’ve never even attempted subbing one for the other
      Some things just can’t be made keto 🤷🏼‍♀️ almond flour rly makes icky desserts imo, coconut flour is not much better
      But maybe u can come up with a way to make nice baked things!
      Cassava n tapioca both are from yucca roots
      Cassava is like the wholegrain flour version n tapioca is the refined flour version

      Victorias Keto Kitchen in on YT here: shes a lady who is an epileptic and has come up baking mixes n recipes, not just almond flour but mixes of things, I think she’s using bamboo fiber even.

      Yes, I know what tapioca is. I've been keto for about 17 yrs now and have used many alternate flours. I know you can sub almond flour for tapioca flour in other applications and have done so, but I've never run across recipes using such large quantities of tapioca flour. I'm sure she experimented enough that her knowledge of how differently they behave in baking she can probably give me an idea. Just like we know that coconut flour is far from 1:1 with almond because of its dry nature and we know it requires much more liquid. I'm looking for info along those lines. But hopefully someone else will gain some info about tapioca from your response. Thanks! 😊

    Okay. Can you explain your composting system? I see the stainless bucket, the bowl with eggshells, and a feuit bowl. Where does each thing go? Chickens?

      Yes! So we have one composting bucket for scraps that go to our chickens and then one that goes to the compost heap. It’s just helpful to keep them separated. And then the egg shell bowl we also crumble and give back to the chickens for calcium once it get full. The fruit bowl is just for fruit and other produce we have around 🙂. Thanks for watching!

    Tried the custard again tried to use coconut flour/tapioca instead of all purpose gf flour and the crust turned to rubber.
    Ratio please. Made your sage sausage patty, gorgeous!

      So glad you liked them! I agree, the texture of the coconut flour/tapioca combo is not as good for the custard as using flour or ap gf flour.

    Unrelated to eggs, but a question! What kind of baby carrier do you have for your back? I am looking and it's never clear if the ones online are intended for the front or back because the pictures are only of the front most of the time for the baby. But I want to be busy and not bumping my baby into things and to have them on the back.
