      @@xMRG4NGB4NG nope sir. The persian "biriyani" has no rice in it and it's kind of a meat patty and a completed different dish during those days. The indian version of the biriyani which is made here is taken from the word "bringhe" Which means rice in persian.

      This recipe is nowhere close to any Pakistani biryani. In conventional Pakistani biryani the meat is cooked separately and the rice is cooked separate also. The two are combined and left to simmer for 10 minutes.

      @@MishalShayk He did not cook the meat separately. I am not saying it does not add more flavor, just saying it's not the Pakistani way. Cooking raw meat with barely cooked rice comes from the Nawabs way of cooking biryani in the Indian city of Hyderabad. They call it "Kachay Gosht Ki biryani" They seal the cooking pot and it's lid with dough and cook the rice and meat together. Not trying to go back and forth with you about this but you are talking biryani 101 with a guy who wanted to be a biryani chef and instead became an engineer because his parents wanted it that way.

      There's a (probably unnecessary) method that is hard to nail, the one where you layer spiced rice on top of plain one, over and over. But simple Biryani isn't that hard to make, if you have the right guidance

    I made this biriani the same way as you did except for the saffron (coz I'm not fancy that way 😀) and it turned out really good. The onion frying trick was on point. Thanks dude for a fantastic recipe! 😘

      Yup yup, just follow this recipe, the chicken will cook. It's called dum, that's when you close the lid real tight and don't let any steam escape, it'll cook in its own juices😋😋

    This is actually a type of biryani called 'Kachay gosht ki biryani' which translates to: the biryani of raw meat. The reason is that he layers the uncooked marinated chicken with half cooked rice instead of cooking the rice and chicken separately and then combining the two (which is the more common way of making it). I believe this is a hyedrabadi style of biryani; still traditional and therefore valid and in my opinion, the meat tastes even better this way - so tender and juicy 🤤
    The only thing I noticed is that he used skinned chicken whereas we usually use skinless, but this seems worth a try

    Damn that looks delicious!! Never thought of skin on chicken for biryani tho! Also we use like whole chicken, like all the cuts together, so everyone chooses their favourite! Plus we usually cook the chicken masala/gravy before layering, so we call this variety that you made as kache ghosht ki biryani (raw meat briyani) EID MUBARAK AND LOVE FROM PAKISTAN 🇵🇰 ❤

    For those who are making this for more than one person! Cook the rice untill it's 80 or 85% done... Not 60%. Then you have to cook it for 40 mins on low heat or you will end up with raw rice! Don't go easy on ghee!

    As an indian I approve of this.
    But, I prefer (I repeat, only imo) I like to eat it with the _raita_ (its basically like a salad consisting of curd mixed with cucumbers, raw tomatoes and raw onions with a generous amount of drizzle of lemon juice. Can also add chat masala for a kick of mixed flavour of spicy, sour, and tangy but it's optional)

    This is a very good recipe. One small technical correction which kinda adds to the difficulty of the dish. Do not let your rice cool down. Everything thing should be piping hot at the dum stage. Hot rice will absorb more favour and it will elevate your biriyani to the next level.

    For marination add fried onions and the oil used to fry them. Make a solution of saffron water , spices and milk to drizzle over rice

    I’d say to take the skin out so that the marinade goes inside the meat. Also, you can use a cut up whole chicken for this as well. I use these whenever I make briyani and it’s bomb.
