Mud Crabs | CATCH and COOK

  • With all the dams and lakes temporarily closed we thought we would put the rods down and give mud crabbing a go for the first time.
    In this episode we take you along Mud Crabbing at Seaforth, queensland.
    After a couple of sessions we were lucky enough to find some legal buck mud crabs to take home, clean up and cook.

    Here's a recipe for you guys to try if you don't mind a meal with a bit of kick to it, just keep the beers handy. How's the Midges up there at Seaforth, took the wife there once she got eaten alive by them.
    Singapore Chilli Crab
    Ingredients
    1/4 cup vegetable oil
    1 large mud crab, cleaned
    1/4 tsp salt
    1 cup tomato passata
    1 cup stock or water
    2 tbsp palm sugar
    2 tbsp fish sauce or 1 tbsp white vinegar
    1 tbsp soy sauce
    3 spring onions, cut into 5cm lengths
    1 tsp cornflour mixed with 2 tbsp cold water
    1 egg, beaten
    1/2 cup loosely packed coriander, to serve
    1 bird's eye chilli, to serve
    Base paste
    1 medium onion, peeled and sliced
    4 cloves garlic
    6 large red chillies, deseeded
    1 tsp belachan​ (shrimp paste) optional
    Method
    1. Prepare the crab by cleaning the outside with scrubbing brush, dispatch it humanely by putting it to sleep in the freezer for 45mins - 1hr or a slurry of salt water and ice, spike the crab, then pull the top shell (carapace) away from the body and discard the gills but reserve any of the yellowish tomalley from the head (optional). Twist off the claws then divide the body into four pieces with two legs on each piece. A meat cleaver is great for this also crack the claws with side or back of the cleaver.
    2. Blend the ingredients for the base paste to a smooth paste. Heat a wok over medium heat and add the oil. Fry the paste for about five minutes until fragrant and the oil separates from the solids.
    3. Add the crab (including the shell) salt and toss until the crab starts to change colour. Add the passata, stock, sugar, fish sauce and soy sauce and toss to coat. Stir in the crab tomalley (optional). Cover the wok and simmer the crab for 10 minutes. Add the spring onions and toss through. Taste the sauce and adjust seasoning. Drizzle the cornflour mixture slowly into the wok while stirring, then drizzle the egg mixture slowly into the wok all the while stirring.
    4. Remove the crab and sauce to a plate, scatter with coriander and sliced chilli and serve.

      Sand flies at Seaforth are THE WORST ! We go through a can of spray every time we are there 😂🤣😂

      @@willandmaryoutdoors8645 Yes it was a while ago but I hope you like it, my favorite way to eat Muddies is straight onto a bed of hot coals and then cover the top of the crab with more hot coals, cook for 10-15 mins depending on the size of the crab. Some people use Banana leafs to wrap the crab up in before putting hot coals around the crab but then you back fill with sand, like the Kiwis do with a hangi... it's more like steaming the crab but either way you leave the crab whole.

    Sweet chilli mango mud crab
    Two table spoons Garlic
    One table spoon ginger
    One large sweet chilli sauce the Asian one
    Teaspoon fish sauce
    Table spoon soy sauce
    Teaspoon sesame oil
    Half a jar of nacho dip
    4 large mud crabs
    Two to 4 mangoes (Cold) cut into cubes
    Half a cup of water mixed with two large tablespoons of corn flour
    Step 1 half steam crabs whole cook on high steam for 10min
    Step 2 take tops off the crab in a bowl cause u want to use the yellow cream in your sauce discard gills and the white blood clot stuff clean remaining yellow stuff off the body crack claws legs and cut crabs in half and cut the large claws off the body put aside from yellow cream trust me u don’t taste the cream but it give it amazing flavour to the sauce..
    step 3 the sauce add garlic ginger and fry in large wok until areomatic bout 2min the add all remaining ingredients except the corn flour and mango once bubbling looking sexy 😂 add crab mix everything turn heat down to just under medium heat cook covered another 10 to 15 min or till crab is cooked stirring every 5 min add thickener little bits at a time as u don’t want ur sauce to be too thick then add mango just before serving cause u want the mango to be warm not cooked out on a large platter to serve with fresh bakery thick slice bread best thing to get in legs is small pair of thin stainless scissors like the one you use for cutting nails ect and cut legs each side long ways..

      @@willandmaryoutdoors8645 You're welcome! You can also mix with crab meat with white cheddar Mac 'N Cheese. That's what I do. Then, I top it off with more cheese. I use Lucerne's 7 Italian cheese mix. I also use bread crumbs. Then, you stick into the oven to make a golden brown crust.

      I only mean because you put salt into fresh water you guys live in God's country use the salt water that the crabs are caught in makes a huge noticeable difference in taste with those beautiful crabs 👌😍
