Tomatoes originated in Peru, South America. They can be traced back to 700 AD. They came to the European countries after that.
My understanding is that potatos also came from the americas.
Ive wonderd if any of the "nightshades" were a part of the european diet. If not, i have to wonder if these foods are good for people of european decent.

I’m also a fan of your enamel cast iron pots, and truly wish that I can get all the sizes in white as the one you’re using for frying. I already have 2 large pots, but I can’t seem to find a 8 quart one in white. 🤔😀

Italians add the sauce to the pasta which has only partially been cooked in a wide shallow pan (like a skillet) and then the pasta finishes cooking in the sauce until done. Since the sauce thickens as the pasta cooks the sauce can be thinned by adding some water the pasta cooked in. The star of any pasta dish is the pasta and the sauce is only a supporting character.

It all looks so delicious, but I have one problem these days... nearly all recepies contain garlic, and I tend to react badly to that... I wish you would make a program of wonderful dinners without garlic.. and I also wonder why I react to it... and... am I alone reacting to it? I also wonder if the dinners would be delicious if I just skipped the garlic. Thank you for your fantastic programs, you make it so easy for us to follow your recepies. Greetings from us in Sweden.
Italian dishes are full of garlic. But you can make these without it, just not as tasty as the one with garlic added as it adds a lot of flavor especially with tomato based ones.
Carbonara is made often without garlic. In fact this is my first time to watch anyone use garlic in carbonara dish. I would start with that dish. Very easy to make. The main stars are the smokey bacon, Pecorino Romano cheese and creamy fresh egg sauce traditionally with lots of freshly ground black pepper. Also I’ve never seen anyone use ground zest of lemon. That’s very unusual. I would leave it out. Parsley is very American to top it off as a garnish also. The main is lots of freshly ground pepper on top, smokey bacon in creamy egg sauce.

Italian would kill for this... not to mention the pasta drained under cold water... not to forget the chicken broth in the bolognese... the garlic in the bottarga and carbonara.... oh and the spaghetti use in the first place... And I forgot, PRESERVED LEMON ARE FROM ALL OVER NORTH AFRICA AND MIDDLE EAST, they're not Moroccan, no, as you seem to think everything exotic in this region is from..

Yes, but it will taste somewhat different. Use chicken stock in place of the wine.

Carbonara does not contain garlic.
If penne goes with heartier sauces as you say, then why not use it with the bolognese? Spaghetti does not pair well with bolognese

It’s American Italian and not authentic real Italian food from Italy I think. Why use chicken stock in bolognese?? Very odd. Why garlic and lemon zest in carbonara?? I prefer real Italian food. I live in Japan and there are actual Italians (not immigrants) from Italy and Japanese chefs who are trained in Italy for 10+ years. We got many Michelin starred restaurants and these chefs also teach real Italian cooking. I also lived in the U.S. and I don’t like those American Italian food. They’re not Italian food really.
Martha..I totally love your recipes... However, Italians do NOT put milk or cream in a Bolognese or their Ragu. And yes there is a difference between the 2. One you put whole cuts of meat, sear them then add the sauce and cook for hours the other just uses ground meat.
In fact check out Italia Squisita on CZcams. They will teach you the original and also show you a more modern version of the dishes of Italy.
I am married to an Italian.. Not an Americanized Italian but a full fledged Italian from Puglia. I also lived in Italy for several years. I have had both Bolognese and Ragu and they have a completely different flavor. I've even had seafood Bolognese. The meats are removed from the sauce and served as one of the courses with your meal.

Yeah I thought it was very unusual. This isn’t bolognese but a new type of sauce. Veal Ragu maybe. Why chicken stock? Americans use too much chicken stock in everything that’s not needed. I’ve never seen milk used either. And why garlic in carbonara? Lemon zest?? And no freshly ground black pepper that almost covers the entire dish. These aren’t authentic Italian food…
Why not pop the pasta into the sauce?

🍽 OOPS....Martha FORGOT to take The Twist Tie off the Thyme bundle before adding it to the Bolognese sauce !

I agree with you. I lived in Sicily for a while with my fiancé an Italian chef and spent my days cooking from all corners of Italy. Never in a million years did I see these contents go into a good sauce. I believe it’s an American interpretation of the original idea and far too watery for a good sauce.
