How to make your own easy (no whey) probiotics LACTO (tutorial) - VLOG

  • After so many requests from friends and extended tribe members I finally took the effort to make a tutorial about making home made (whey free, animal friendly) probiotics called LACTO.
    It happens to be the final batch of LACTO I produced at The Panya Project in the north of Thailand where we have lived, loved, experienced, worked and evolved for 9 months.
    These probiotics have 1001 applications from ingesting to treating fungal feet and washing veggies and fruit and below the recipe you can find links to the pages with all the info and applications on the official LACTO-LIFE website.
    LACTO probiotics have been used for 100's if not 1000's of years in Japan.
    All credits for this idea, collection of applications and recipe's go to Takashi Hirasawa who has researched this for years and has bundled the applications and fine tuned the brewing techniques.
    Recipe for "Advanced Technique" as showed in the video:
    For 6 Liter bottle:
    Organic Brown Rice 600g (4-cups), Organic Sea Salt 60g (1/4 cup),
    Organic Brown Sugar 180g, (Mineral) Water 6000ml.
    For 1,5 Liter bottle:
    Organic Brown Rice 150g, Organic Sea Salt 15g,
    Organic Brown Sugar 45g, Mineral Water 1500ml.
    Some tools you will need:
    - A nice wide funnel
    - measuring cups OR
    - a kitchen scale
    - PH paper (not necessary but still nice)
    To continue brewing after your LACTO Probiotics are done:
    You can use the same rice that you have used if you just ad the following ingredients:
    For 6 Liter bottle:
    - Add half of the original amount of salt - 30 grams (in stead of the original 60gr)
    - Add 2/3 of the original amount of sugar - 120 grams (in stead of the original 180)
    - Add clean pure water as before
    For 1,5 Liter bottle:
    - Add half of the original amount of salt - 7.5 grams (in stead of the original 15gr)
    - Add 2/3 of the original amount of sugar - 30 grams (in stead of the original 45)
    - Add clean pure water as before

    Hey beautiful people,
    After 3 years I am still getting daily comments and responses to this vdo from literally every corner of this planet and it is beautiful, heartwarming and motivating. Thank you all for this.
    Many people ask if the plastic bottles don´t leech harmfull chemmies. I am no expert but would say it would be better to brew in glass bottles but this makes it more difficult and less accessible to many people. If you have glass bottles and airlocks etc then go ahead and use them. Just make sure there is not much air in the bottle and make sure you can still shake or agitate the liquid.
    If you have no glass bottles but still want to benefit from probiotics then just use plastic. For me the benefits outweigh the possible negative effects of possible leeching plastic.
    Besides this, many people might not use it for human consumption but for the many other purposes.
    For the people who ask about the contents of the micro organisms and vitamins and minerals: I am not sure if the scientific research is done yet but here is an estimate from my teacher Takashi Hirasawi which can be found on the lacto-life.com website:
    COMPONENTS
    LACTO contains more than 80 kinds of bacteria (*3) and more than 60
    kinds of nutrients. Some of the nutrients in LACTO are extracted from
    brown rice, and some of them are produced by the bacteria growing in the
    culture. The amount of bacteria and nutrients will depend on the
    culture conditions and, in comparison with normal food and drinks, the
    nutrients in LACTO have been already digested by bacteria breaking them
    down to be fully and easily absorbed into the body.
    ​BACTERIA (MICROORGANISMS) found in LACTO
    Lactic Acid Bacteria: Lactobacillus. Yeast: Saccharomyces
    Cerevisiae, Kouji Bacteria (Aspergillus) Acetic Acid Bacteria
    (Acetobacster), Bacillus Subtilis, Butyric Acid Bacteria (Clostridium
    Butyricum) Actinobacteria, Cyanobacteria, Phototrophic Bacteria and
    Enzymes.
    NUTRIENTS(*4) found in LACTO
    Carbohydrate
    Starch (Amylose, Amylopectin)
    Fiber
    Soluble dietary fiber: Oryzabran
    Insoluble dietary fiber: Arabinoxylan
    GAG (Glycosaminoglycan): Chondroitin Sulfate, Hyaluronic Acid, RBA/RBF
    Protein (Amino acid)
    Essential: Histidine, Isoleucine, Leucine, Lysine, Methionine, Phenylalanine, Threonine, Tryptophan, Valine

    *1. Probiotics are microorganisms that provide health benefits to humans and animals.
    *2. The amount of Lactic Acid Bacteria (LAB) in LACTO can be 1 - 10
    million/ml when the process of LACTO has finished with lower acidity
    level than pH3.6.
    *3. Bacteria, mold and yeast belong to microorganisms family. When we
    use the term bacteria in LACTO-LIFE, it’s actually considered
    microorganisms including mold and yeast. We call them ‘bacteria’ instead
    of microorganisms because we use mainly the features and effects of
    Lactic Acid Bacteria, and the bacteria is more popular and easy to call
    and understand.
    *4 These nutrients are inferred from the nutrients of brown rice and
    bacteria. We are going to update the measured components after the
    scientific research has concluded.

    This is a common food for us in southern part of India. We pour water in the left over cooked rice in a mud pot and next day morning its ready as breakfast. Just add some sea salt and yogurt and enjoy with some fresh raw pearl onions and fresh green chilly.

    I love this video ! I've made it here in Thailand several times now...and, the BEST use for it , I've found, is as a skin tonic. It's really great for my skin . I just spray it on after my shower. Amazing stuff. Of course I drink it, too. I have some "brewing" now. Sooooo easy. Thanks for this great video , it changed my life ! I've made sauerkraut, kimchi, water kefir, kombucha etc for years but this stuff is amazing !

      Great to hear Sean! Yes it works great for skin. Try having a bath in it too. Or a 20 minute foot bath. Works wonder for rinsing hair top after natural shampoo.

      I just switched to this method, I use to make the milk based LAB but this method is cheaper and in my opinion overall healthier because of the chemicals and pesticides the commercial farmers use

    This is the best video I have seen here on CZcams and I've seen many. I love the way you have done it all organic, and very detailed - great teacher!! I'll be using 7.0ph water from reverse osmosis system @home & I will even use buy test strips just because I like to know end results.
    Mr Takashi is a great teacher it shows with your work, my respects to you both and how lucky and blessed you are.
    Btw I'd like to share that you're such a natural & put together a really great video...looks even better than those videos of others getting paid to do reviews for big companies or even some professionals (some people have difficulties due to no personality nor character in sales or marketing which breaks them) I do very well....lol! ...you kept me watching video from beginning to end & I found the lesson very interesting & informative.       Thanks for the awesome comment Miranda! Whow! That is just humbling, motivational and heartwarming all together.
      Takashi is an awesome teacher and following classes with him just made me realize how awesome it is to learn new things that interest you. Opened up a whole new world.
      I had never heard of fermented plant juice before but few weeks back found this nice channel from a guy called Chris Trump. I am really keen on learning more about these methods. This is the link: czcams.com/channels/us0ZO165qzh6KPlULSzs4w.html
      Takashi himself has started a lab/research and production facility in Bangkok where he is developping all sorts of fermented products like cashew cheese, fermented chillie sauce and more awesome things like this.
      Wish I could visit him again some day but for now we are trying to find a place to shoot roots in Portugal :)

    Great video! and yes, I would strongly recommend a GLASS bottle, airlock only costs $1 or so. I even ferment stuff without airlock and have no problems. I cover with a coffee filter and rubber band... very good probiotics and you look really healthy! Thumbs up! :-)

      +Andy Kowalczyk Hey Andy, you have 5o judge for yourself and build up. Start out slowly with, for instance, one shotglass added to your juice.
      Do this for a week and see how your body reacts. You can drink more once you get used but observe and listen to your body etc

      Give it a go but don't give up when something goes wrong. Also: taste might be strong but if you continuously brew from same rice it will get more gentle.
      Just mix with orange juice or citrus fruit :)

      Now I am in 2nd year sir. I am just working in beta galactosidase enzyme. i will extract and purify the enzyme using biological techniques. Then I will inoculate it in dairy products for enzyme hydrolysis. Also I am Planning to go for animal and human study. So Initially will check the glucose level in blood and I will give my lactase product which is purified?! Then I will check for the glucose level in blood. This is what I planned sir.. Since I am in second year, just now i synthesised enzyme. Now planning to go for optimization studies. Really I love my study what ever i am doing and I like ur video also. As If I am in Vellore, Tamilnadu, India. Here till now there is no any awarness for lactose intolerance and no probiotic drinks. So I want to make something innovative in my place.

    Great video! I am a researcher for a company who makes cleaning products, and consumption products, from more 'fancy added bacteria' than Lacto. BUT, I know this make it expensive for most people to purchase. SO, for people to make this at home, clean with it, drink it, promote a more healthy home, bring the good microbes back into our lives, I hope more people can ferment this themselves, and stop using harsh chemicals with antiseptic properties. Your method and 'product?' is All-Natural, Wonderful! These bacteria truly can clean, it is almost unbelievable, but they really do. Great video and hope more people see it! :)

      Thanks for sharing! I do have a question though. So I'm trying to understand the difference it makes between making lactobacillus with sugar and salt vs just using a rice wash?       Hi Anon,
      You can actually make LACTO using rice wash aswell but then the procedure is slightly different. It would be a one time brew and you can consume the rice.

    Thank you so much for this great tutorial! I am so grateful! I was searching for directions to make my own EM 1 to make my own bokashi flakes after I bought a comercial EM 1 brand and returned it after reading the ingredient list. I learned that some lactobacillus help you gain weight and some strains help you loose weight. The only lactobacillus on the label of the commercial EM1 was a weight gaining strain :0 I don't want to spread that strain all over my garden! I've been using your recipe on a larger scale in glass carboys with an air lock, but I add a few capsules of KyoDophilus 9 to give those strains a head start. I'm injured so I can't shake my bottle at all or excercise so I really need those slimming bacteria!. I've found that it's pretty easy to just tip the carboy on edge and roll it, no need to remove the airlock, but I usually am only able to do that a few times at the beginning. I've also been adding the same amount of sugar at the end and letting it go for another week in attempt to make it more concentrated. This stuff is amazing!!!! I tried it taking the rust off some garden tools that accidentally overwintered in the dirt WOW! Also My son went on a mt. bike trip and got 3 white shirts really stinky and muddy. Somehow they were left in a pile for 9 months + before they were found all crusted together looking like garbage. I thought I would see what your Lacto would do so I soaked them for 24 hour then put them through the washing machine without soap so I could see the Lacto effect isolated and they came out GLEAMING white as if I used bleach (I would never!). I'm still searching for the recipe for EM1, it looks like it was once easily found online from a single link on hawaiianhealingtree but that link is now broken. Until then I will be drinking your double brewed lacto and making my bokashi flakes with it! Thanks again!

      Great that you are using glass carboy. I too want to do that in the future hut so far have been on the road or with very small housing.
      It's not "my LACTO" , I'm merely sharing it out to the world here.
      I think the true recipe of EM is kept secret but if you find the link then please share it with us :)

      @@febiaivy4702 Raw organic sugar or substitutes like brown sugar, jaggery, honey etc are good. It's processed sugar that's bad.

      @@febiaivy4702 the benefits far outweigh the harm. Lactobacillus strives in anerobic (no oxygen) conditions. Other bacterias perish. You can either use glass with airlock or plastic. Using glass, you have to pump out the air or supplement with bacteria from previous batch or live strains from capsules available in market. If all the oxygen is not removed, you have to add some apple cider vinegar too. That will prevent other contamination at initial stages when the colony is at its weakest. Later on lactobacillus will overpower any other pathogens.
      With plastic it's very easy and cost effective. If you can afford glass. Go for it.

    making it for 2 months now - Everyday Harvest... i use big Glass jugs... I have reused the same rice for 2 months, a batch everyday, 50plus+ times... Yummy straight and mixed with wheatgrass juice, Apple Cider Vinegar, and red wine... Not beer, i tried ; )... but surley must be possible... Love it!

      +Mira Aylin Great to hear! I personally don't dig whey etc. This way of brewing will produce a superconcentrated probiotic that js multiversatile.

      @@healthyrootsstrongwings538 I live in Canada. You can use an electric heat matt designed for growing seedlings. Put the matt in a box (cardboard or plywood) lined with a bath towel... You can check the temperature, it shouldn't be too hot.

      Personally I try and use only the heat I can get from the sun or inside the house. My solar setup is not too beefy so I can't plug these kinds of things in all day.
      A haybox is easily made though and even hot water bottle can do miracles :)

    Thanks so much for posting this video! I've been looking for awhile for a LAB recipe that doesn't include milk as part of the process. This method is so much less fussy. Can you suggest what the LACTO to water dilution ratio should be if I want to use it as a chicken coop bedding deodorizer and as a compost accelerator?

      +jecriggs no worries jecriggs. I'm no fan of whey and yuckie mixtures with milk etc. Share with your friends or anybody who might benefit. Once you get good and brewing you can also teach others
      To spray you chickens and their coop I'd use a dilution of between 1-10%. For deodorizing yourself you can use the same mix. Take a long bath in it or spray a dilution in a plant spray bottle. (A while long I made Deo mix with essential oils)
      To spray in garbage bin or clean toilet etc you can do 10%.
      For compost you can do 10-100%. Make mixture and soak your green waste in it before composting or pour over your compost pile before covering it.

I made such a vital fertilizer (water + dates molasses + rice or boiled rice water + sour milk + yeast) and got the same shape and color .... and the smell. ... one of the bottles exploded to not let the fermentation gas come out ... I meant that ... it was awesome

      Yes you can make bokashi maize using "Lacto" I discovered this video a year ago, when I was searching how to make bokashi maize, as the commercially produced stuff was disappearing off the shelves along with the toilet paper

    good day to you sir, how long (no of days) can we be able to use the lacto based on your demo? what is the ideal dosage (human consumption)? Is there an expiration for the finish product? I really enjoyed watching you and interested as well to do it myself. GOD BLESS

    Man you are marvellous. I brewed it with organic black rice, himalayan salt and organic jaggery. Tasting lovely. yesterday afternoon i had half glass. today morning I had smooth toilet after so many years. Many thanks for sharing. Can I have a gardening video with Lacto Please.

      Personally I don't brew with red or dark rice because I found it got a bit slimy.
      But if it works for you then awesome!
      Keep it going and speak the word :)

      Most likely you can use all kinds of grains to cultivate. This method however is proven to work and give a clean product. Should you start experimenting please let us know how you go :)

    Ever thought about putting a balloon with a pin hole on instead of a cap? Simple airlock. Just cap it for the shaking. Or do you need the pressure in the bottle?

      You could make a system with an airlock or a balloon for sure. I have thought about making a tumbler with a glass "carboy" bottle. You could cap it for the tumbling and then put the airlock on top.
      Make sure though not to have much air in the bottle because then you'll get a yeasty layer on top.
      Towards the end of the brewing process you could put a cap on to allow some fizzy Ness to develope :)
