  • This week, Rick is pairing delicious grilled Cod fillets with puy lentils and a rich, warming red wine sauce. Although white wine is usually paired with fish, Rick adores this dish with its British spices and sweet, acidic flavours.

Good idea to add spices to the usually bland cod

That sauce looked lovely. Puy lentils? They have never done it for me....The best cod dish I ever had was in Cherbourg...a French man who cooked AND served the food to a restaurant of perhaps 4 or 5 tables....he cooked the most amazing food. The kitchen was viewable from the restaurant and one could see him cooking, he also bought the dishes to the table....just sublime simple food...intimate dining...to this day I'm still trying to work out how he cooked my dish in a wok without trashing the cod.....it was SO good. He also took the money....a one man restaurant...that experience totally changed me and how I view dining out.

Do you remember the name of the restaurant? Places like that are so rare now.

He's a pretty successful chef and restaurateur, I think he knows his business. Probably rather more than you do.

What an unfortunate comment. If you've ever been to a Rick Stein restaurant or read his books you will know that his passion is not to earn a Michelin star, but to provide high quality, flavoursome dishes within a non pretentious, comfortable environment for those of us who can neither afford nor give a flying fk for Michelin stars!
