    Recipe :
    Amritsari Nutri Kulcha
    Preparation Time: 30 minutes
    Cooking Time: 30 minutes
    Serves: 4-5
    Ingredients:
    200g Soya Chunks
    2 tsp tea leaves
    Salt to taste
    1 tsp
    Sugar
    1 tsp Soya Sauce
    For the curry:
    1 cup spinach puree
    1 cup chopped capsicum
    1 cup fresh tomato puree
    4 tbsp Mustard oil
    1 tsp cumin seeds
    2 black cardamoms
    6-7 cloves
    1 tbsp black pepper corns
    2 bay leaves
    2”cinnamon
    1 ½ cups minced onions
    1 cup Fried onions
    2 tbsp Ginger garlic paste
    2 tbsp Kashmiri red chilli powder
    1 tbsp spicy red chilli powder
    2 tbsp coriander powder
    ½ tsp turmeric
    1 tbsp Kasuri methi
    1 tbsp dark soy sauce
    1 tbsp red chilli sauce
    1 tbsp green chili sauce
    water as required
    Salt to taste
    2nd Tempering:
    50g butter
    1 tbsp oil
    ½ cup capsicum juliennes
    ½ cup carrot juliennes
    1 tsp Kasuri methi
    Method:
    Tie the tea loosely in a muslin cloth.
    Boil 1 litre water with the tea bag, salt, sugar, soya sauce, soya chunks for 6-7 minutes
    Refresh in cold water and squeeze out the water.
    Heat the mustard oil in a large pan. cool slightly and the whole spices. Sauté for30 seconds and add the chopped onions. Sauté till golden. Now add the ginger garlic paste and the slit green chiles. Sauté till the raw smell disappears.
    Now add the powdered spices, mix and add the fried onion paste. Sauté well.
    Add the tomato puree and cook till the oil floats on the surface.
    Add the spinach puree and cook for4-5 minutes till the masala leaves the oil.
    add the ginger garlic paste, stir & cook for 4-5 minutes on medium flame.
    Add dark soy sauce & red chilli sauce & stir well. Add the capsicum and stir well.
    Add 2 cups water and bring to a boil. Add the soya chunks and cook for 7-8 minutes.
    Season to taste.
    Add lemon juice and finish with kasuri methi, garam masala, freshly chopped coriander leaves.
    Hat a tawa. Add butter, green chillies, onions, capsicum & carrots, stir & cook briefly on high flame, add the prepared nutri gravy, stir & cook on high flame while breaking down the bigger nutri chunks, finish by adding freshly chopped coriander leaves.
    Toast the kulchas with butter on the same tawa.
    Serve hot with some onion rings on side and green spicy chutney.
    Kulcha
    Preparation Time: 10 minutes + 20 minutes
    Cooking Time: 3 minutes per kulcha
    Serves: 4-5
    Ingredients:
    2 Maida
    ½ cup Curd
    2 tsp Baking powder
    1 tsp Salt
    To prepare the dough, mix the yoghurt, baking powder into the flour, add sufficient water and make a very slack yet smooth dough. Add 2 tbsp oil and knead it in.
    Rest dough for 20 minutes. Knead again for a minute.
    Break dough into tennis sized balls.
    Roll out the dough ball to a 6” circle.
    Place the kulcha on a hot pan, add a few drops of water on the side and cover immediately for the kulcha to cook in steam.
    As the kulcha puffs up, flip and cook from the other side too.
    Cook on gas flame for brown marks. Remove and set aside.
