Bokhari Rice Recipe
1/2 kilo lamb meat
1cup tomato puré
1/2cup chick peas
2cups slices onions
3cups basmati rice
1tbsp tomato paste
1tbsp cumin
1tbsp salt
3carrots thin strips
¼ cup seedless black raisins
1) Add pot on medium high heat add 8-9 tbsp oil, add carrot cook for 3 minutes, then add raisins for 2 minutes and set aside.
2) Add meat and cook till browned, then add onions till Caramelize (important), add cumin, tomato paste & puré, cook till oil rises to the top, add water & salt, and cook for 1-2 hours.
3) Add the rice and water if needed (should cover rice by 1 inch max), cook uncovered till start seeing the rice, add carrot, raisins and chick peas on top, cover and cook for 30-40 minutes on low heat (important don't uncover top).
4) To serve add rice first, then meat and decorate with carrots, raisins & chick peas.

١/٢ كيلو لحم عجل
١ كوب عصير طماطم
١/٢ كوب حُمُّص مسلوق
٢ كول جوانح بصل
٣ أكواب رز بسمتي
١ ملعقه كبيره صلصة طماطم
١ ملعقه كبيره كمون
١ ملعقه كبير ملح
٣ جزرات مقطعه عواميد صغيره
١/٢ كوب زبيب اسود خالي من البذور
١- نضع القدر على نار متوسطه الر غاليه ونظيف ٨ الى ٩ ملاعق زيت، نضيف جزر ونطبخها لمدة ٣ دقائق ومن ثم نضع الزبيب لمدة دقيقتان ونضعها جانبًا.
٢- نضيف اللحم حتى يصبح لونه بني ومن ثم البصل حتى يصبح مكرمل "خطوة مهمه"، ومن ثم نضيف الكمون ، صلصة الطماطم، وعصير الطماطم ونطبخها على النار حتى يصبح الزيت في الأعلى. نضيف المويه والملح ونطبخها لمده تترواح بين ساعه الى ساعتين.
٣- نضيف الرز، والماء اذا احتاج " يجب ان يغطى الرز بالماء ويرتفع الماء بشكل أقصى ١ اينش"، تطبخ دون ان تغطى حتى نرى الرز والجزر والزبيب والحمص في اعلى القدر.
يغطى ويطبخ لمدة ٣٠-٤٠ دقيقه على نار خفيفه وهادئه" مهم ان لا يكشف الغطاء".
٤- للتقديم نضيف الرز أولاً ، ومن ثم اللحم وأخيرا يزين بالجزر والزبيب والحمص.

Love it so much that I cooked for Eid celebrations, for my family and guests for the last 5 years. I would like to ask your expertise, what would be a significant difference in preparing between the Kabsah and Bokhari? Care to explain the difference in style/ingredients/history. I lived in Saudi Arabia for 9 years and this was my favorite way of cooking rice. We had it for at least 2 or 3 times a month, and it was sooo goooood. Now I am in my home country and I can't taste it again. The only other way is to make it myself. Thanks for making this video and making me experience my childhood again.

Hmm..it seems impossible to get lamb meat tender and ready in such a short amount of time 🤔 lamb meat usually needs to cook longer .
