Instant Pot Mini (3qt) Mediterranean Chicken and Orzo

  • I was craving a Greek-style pasta salad that I used to make for potlucks a long time ago and wanted to make it in my IP. And since I didn’t want tons of leftovers in the fridge, I didn’t want to make too large of a batch - that’s where my IP Mini comes in! I had a huge portion for my dinner and then the hubby and each had a half of the rest in pita bread for breakfast the next morning. It’s delicious either warm or cold!
    You can adjust your mix-ins according to your own tastes after the cooking part is done.

    Today’s Ingredients:
    2 TB extra virgin olive oil
    8 oz chicken thigh, 1” cuts
    ½ cup red onion, chopped
    ½ TB Italian seasoning
    ½ tsp salt
    ¼ tsp black pepper
    1 garlic clove, grated
    zest of 1 lemon, grated
    1 cup chicken broth
    1 cup uncooked orzo pasta
    juice of 1 lemon, about 4 TB
    2 cups fresh spinach, chopped
    ½ cup grape tomatoes, halved
    ½ cup cucumber, seeded and chopped
    ½ cup kalamata olives, pitted and chopped
    ½ cup feta cheese, crumbled
    Instructions:
    1. Heat the IP Mini on saute until the display reads “HOT.” Add the oil and chicken and cook for a few minutes, stirring occasionally, just until the outside of the chicken is no longer pink.
    2. Add the onion and cook for another two minutes, just to soften.
    3. Add the seasoning, salt, pepper, garlic, and lemon zest and stir for a minute until fragrant.
    4. Add the chicken broth and stir to combine, deglazing the bottom of the pot as you stir. Make sure to completely scrape up all the browned bits from the bottom to avoid the dreaded “BURN” warning.
    5. Spread the orzo over the top in an even layer and press down without stirring up the liquid layer.
    6. Lock the lid and cook on manual/high for 5 minutes followed by a quick pressure release before reopening the lid.
    7. Stir in all of the remaining ingredients. Check for seasoning and adjust to your liking.

    My doctor said I should consider a Mediterranean diet so this was my first dish. If it all is going to be this good it will be a pretty easy transition. I doubled the recipe for my six quart Instant Pot and it worked out fine but next time I might use a little more than double the chicken stock and more garlic. I used half the salt because the olives and Feta are very salty. This isn't pretty good, it is incredibly good!
