Probably because Capcom heard fans saying that all antagonists had the same motivations or seeing how sympathetic antagonists are easier to engage a wider numbers of audiences.
And re 7 and re 8 involve with the megamycite (aka mold), other re games dont include that, and re7 and re8 isnt tied to umbrella (well 8 kinda is but not important)

I actually loved resident evil 6. It wasn’t my most favorite game but people just give it a lot more hate than it deserves.
Well it RE6 was a good action game, but terrible Resident Evil game
It would be nice if haos let you or your partner escape on time instead of killing you while you go up in CO op. Same with the Leon campaign. I died because I was about to shoot this fleshy zombie in the church, and then I was interrupted by the guy inside the church cutscene and the zombie successfully landed a hit. Plus being shot by javo wasn't fun at all.

The bosses alone were underwhelming for me a t-rex into a giant fly... a giant baby in an under water base. Ustanak was ok just Nemesis 2. I don't even remember Ada's boss

Original RE3 has my favorite final boss simply because it's that point where Jill finally gets to turn the tables on Nemesis. The countdown to a missile nuking the entire city is also a lot more impactful than a single building or a train blowing up. 3make ruined the final battle, but that's a different topic.
Plus the decision to finish his ass with that music build up!!!

Evelines fight was so underwhelming, I spent the whole final act saving ammo and first aids because I thought "all the previous bosses were so hard, the final and most powerful boss must be hardest of all." So I kept restarting the molded fight trying to use knife only so I could be ready for Eveline. Did I even need to? No, it took like 2 magazines from the M1911 to end her.
