The whole thing of Medusa saying, "It was a gift," sounds more like a coping mechanism to me. She basically cannot deal with the idea that she is being punished anymore. Therefore, she's rationalizing in order to keep her sanity.

With all due the respect but even those from abroad from Greece that think they know about Greek mythology or history they know nothing.
I'm not saying that as an insult but they teach you the Ovid's version of mythology which is a hateful fan fiction of our original Greek mythology because when he was exiled by Rome the Greeks denied him entry so he twisted the Greek gods story from noble and power into atroceous and weak.
For example the story of medusa in the original Greek mythology Poseidon didn't even touched her, out of the 3 sisters Medusa was the only one mortal whole Euryale and Stheno were low tier ageless goddess which prompted medusa to become Athena's priestess and vowing to keep her chastity so Athena to speak to Zeus into making her like her sisters, however Medusa was too impatient and one day outside Athena's temple she saw Poseidon and tried to charm him into taking her as concubine so she'll become immortal on which Poseidon refused due to a previous woman that tricked him in a similar manner (Caenis), Athena however was watching all that from her temple and when she came to have a word with medusa she lied and tried to swift the blame on Poseidon on which Athena punished her.
That's the original Greek version, in Ovid's metamorphosis Poseidon r@p3d medusa and mind you it's one of the many stories that people got wrong since gods of Greece were nothing like Ovid's version, they weren't bad and not nearly as weak as he portraits them
And it's not the only mistakes people from outside Greece you do, I've heard many many lies and misinformation about our history and even modern day Greece as well

There's an LGBTQ+ bar in my town with an artist rendering of Medusa in their sign. I had to ask why they chose Medusa and they said that it was a signal that it was a safe space like ancient Greeks used to do for abused women. I don't know if that actually happened but I like the idea of it. A quiet way to state sanctuary for those who really need help.

As a Greek I can tell you that this is bullshit, fan fiction.
In fact the original Greek mythology of Medusa is completely different compared with the Roman poet Ovid's version who is the one you know.
But to answer your statement no, we had no such protection symbol, especially since in the original Greek mythology Medusa tried to charm Poseidon instead of him r@p1ng her.
You see her 2 sisters were lower goddess but Medusa was mortal, she was aging.
So medusa tried to appeal to goddess Athena in order to turn her ageless like her sisters by vowing to keep her chastity but it was taking too long for Athena doing that (trying to convince Zeus) so one day as she got out of the temple of Athena that was on a small land with shallow water around it she spotted Poseidon and tried her hand on him in the hopes that she'll become his concubine so she can gain immortality.... needless to say that didn't went as expected (perhaps because Poseidon was tricked before by another woman named Caenis) and when Athena came to shit talk on meduasa for trying to break her vows but medusa fked up pretty badly when she tried to lie and throw the blame on Poseidon and at that moment Athena punished her.
That is the original Greek version in a nutshell but many people from abroad are too lazy to search it and only teach Ovid's version who hated the gods and the Romans and the Greeks (he was exiled by the Romans and was denied entry from the Greeks so he started spreading misinformation and fan fictions that portraited the gods on bad light, in the OG versions none of the atrocious acts was committed by the gods, some were by the titans though... except Zeus cheating and Hera's revenge through his lovers, that's accurate).

Medusa’s telling of her myth in this reminds me of a book called Her One Wish. A minor character (who led to the main character’s destiny changing) was assaulted by a guy
.and more happened that I will not go into. And though she was restored (I think the memories were also erased) but mental scars remained. She wished she could be turned to ice so that no man would ever be harmed again.

I know it prevented Percy from seeing Medusa's face, but making her invisible also made it essentially impossible for him to aim for his target. Not a genius tactical move. But I suppose it was an attempt to make sure Percy didn't come off as a murderous psycho for assassinating her.

Dear John as a Greek here are some interesting fun facts on how the oracle of Delphi conceived the prophecies. It's not very well known but underneath where the temple of Delphi is located there's a small natural gas field wich used to cause sulfer emissions. Also laurel leaves as harmless in general but a poisonous hallucinogen if ingested. My parents once encountered an elderly man at the ER whose wife had made hin some laurel brew for his aching back and caused him to alternate between catatonic and manic fits. So in truth the prophecies didn't just sound nonsensical they actually were nonsense the oracle would spout while high out of her mind on sulfer and laurel

Interesting with the curse vs gift thing with Medusa
As you’ve said with Daphne there are cases where these transformations are a form of protection from death or assault hence why some people nowadays would think it the case with Medusa if y’all subscribe to her being raped/manipulated by Poseidon
Also in Percy Jackson’s Greek gods Percy does mention how Poseidon was pursuing a girl named Koroneis who cried to Athena for help and was turned into a crow to escape, which Poseidon retaliates against by having a night with Medusa in Athena’s temple of all places
Also Athena’s owl as her sacred animal? It’s not just a random choice. There’s a story how this girl Nyctimene was raped/seduced by her own father and was so ashamed she refused to come out in the day, so Athena turned her into an owl out of pity or punishment (sources vary) hence the owl is her sacred animal and Nyctimene’s shame to come out by day being why owls are nocturnal

Medusa being born a monster makes waaay more sense than her being a mortal and later on being punished by Athena .. I mean, what's the deal with her sister's,why were they turned into monsters, why were THEY punished ... ?!

Although it is rare that a god punished another god, its happened numerous times. Ares punishing Posiedon's sons for violating his daughter, Posiedon killing his own sons for violating their mother (although they were cursed with madness and didn't do it of their own free will). Zeus punished Posiedon and another god, whose names escapes me-after they were a part of a coupe to kill and dethrone him. He takes their powers and makes them work for a mortal king for a number of years. Zeus killed his first wife bcz it prophesied that his son would do to him what he did to Crounus and what Crounus did to his father before him. He kills his sister wife by eating her, which is how Athena was born from Zeus. And there are other instances, as well. You have to remember the gods punished the Titans after the great war, and Titans were stronger, greater, more powerful, and proceeded the gods. Also Athena hated Posiedon deeply and the same vice-versa. If she wasn't so focused and consumed with insecurity and jealousy of Medusa and finally getting a reason to strike her down, she and Posiedon would've had it out. And she would've tried, and likely accomplished, punishing them both

Interesting information about the part of poseidon forcing himself on medusa coming from the romans, i never knew that bit.
Now i wonder how much of the "greek gods are all dicks" is part of a smut campaing of conquerors (like the romans), and how much was really part of greek everyday believe.
