Sauce Tartare -- Tartar Sauce

  • This sauce is an amazing accompaniment for fish. It is easy to make, with readily available ingredients, and is a masterpiece of French cuisine.
    As a note, here I tried to substitute dill for the more traditional herbs of teragon, chervil, parsley, and chives, and this was a mistake. If you cannot get the traditional herbs, feel free to leave them out.
    Recipe:
    -------------------
    1/4 liter (1 cup) mayonnaise, homemade or store-bought
    1 small cornichon (approx 20 g)
    20 g capers
    1 shallot
    Fine herbs (teragon, chervil, chives ,and parsley)
    Chop all ingredients and mix with the mayonnaise. Let sit for at least 10 minutes. Serve on fish.
