Definitely- one of the reasons I think his channel did so well-his “recipes” aren’t refined or even the most properly done, but they are realistic for the typical person who needs to put a meal together at home.

Yep. There’s a HUGE value in being able to know when to say “stop here. There is more if you spent more time, but it’s not worth the return on investment anymore.”

But rush hour is literally an hour, you don't wait more than an hour for any but the newest 2 restaurants in town, public events *always* have somebody you recognize.

Having never really cooked with my parents, I had to learn by myself via the internet, and, being a perfectionist, I became super anal about everything, to the point that it could ruin the whole experience if something went ”wrong”. I think a component that had been missing in the cooking videos I watched was precisely the emphasis you put on ”cooking in the real world, for real people”, measuring by eye and tasting to adjust. My work schedule is unhealthy, it should not be aspirational, and it definitely shouldn't be used to shame anyone who manages to avoid it.

    Adam,
I have the same range you put in the kitchen remodel (although the induction model) and I 100% agree it does not get hot.
I think it’s because the door is thin to get more space so it can’t get as hot as it’s losing too much heat. It can’t even self clean normally. It has a steam clean which is complete garbage.
The induction is amazing but I agree with you on the oven itself. I can deal with it but when I remodel my kitchen I am going to get a better oven.

I'd love to move to east Tennessee some day, but the job determines where I move to and I like my job. I do at least get some freedom of about a 100 mile radius and don't have to live in cities. They're stressful, crowded, and expensive to live in. I find areas just outside the suburbs, right where rural areas begin to be the nicest places to live. Close enough to a city for anything special, and a short drive into suburbia for anything you need, but inexpensive living and friendly neighbors.
Love your channel Adam. I hope it continues to grow even bigger in 2022.

You take off the membrane on top of the meat and chop it up, and that’s it. For making pizza in a poor-quality oven, I've gotten good results with a cast-iron pan. Basically, the stovetop can easily get hotter than the actual oven, so you can crisp up the bottom on a burner, then move the pan to the oven to cook it properly. (Or possibly vice versa? Maybe finish under the broiler to brown the cheese? I haven't done this a lot.)

Discovering your channel was a gateway for me to take cooking more seriously. Back at the onset of the pandemic, it was the best distraction from everything going on for my wife and I. It was so strange that shortly after we decided to move home (Southeastern KY) you announced you were moving to East TN! The guy who got us into serious cooking was moving just a stones throw away from where we were moving at almost the same time. All that to say, I so understand what you're saying about people asking you why you're moving to the Appalachians. People have this idea about it they feel is very concrete, despite having never been there. It's such a beautiful part of the country with beautiful people, your explorations into Maryville and Knoxville proof of that!
My grandparents lived in Madisonville, so we spent a lot of time driving through Knoxville and going to Maryville, and you've shown me a side of Maryville that I didn't even know existed! I think you're doing a great service to showing a side of Appalachia that a lot of people don't get to, or care to, see. Thank you, Adam!

    Two oven thoughts:
Our GE goes to 11, er, um, 550... but since we meter it for the purpose of cooking a standing rib roast with the "let it coast" theory of finishing, we know that it's *really* hard to get it past 500, even set to 550, no matter how long you're willing to wait.
On the "True convection" front, I would assume that means that it does not heat the elements in the oven for radiative heating, it *only* heats the moving air.

Hey Adam, I think I might have the answer to your oven modes question. I worked for GE Appliance in the cooking division working with electronic controls. So I can at least tell you what their modes mean. I’ll start with normal Bake. Normal Bake uses both the bake (lower) and broil (upper) element to cook. With very heavy preference to the bake element, depending on the model, something like 80%-90%. For broil the upper element is the only one used and for GEA oven Broil HI is shooting for a temp of 550F and LO is like 475F. Convection bake uses the same elements as the normal bake setting but runs the convection fan also. So ovens a special and have a third element in the rear of the oven behind the convection fan. I am guessing that the pure convention mode on your current oven is like the convention multi-rack that GEA ovens have. In that mode only that rear element will be used once the oven is pre-heated. Because they are typically smaller elements the two main ones will be used during pre-heat so you aren’t waiting an eternity. Hope this helps answer your question.

The disdain that coastal, urbanized America has for middle America is honestly pretty disgusting at this point.
Why would someone move to Tennessee? Because they want to and there’s an entire society and style of life that exists there. Sheesh. The world doesn’t revolve around LA.

This disgust is essentially validated by social media, traditional media, and celebrities so it's probably sadly gonna keep being a thing until people move to either the deep web or the fedverse.

I got a kick hearing about your move and adjustments with new places and things (i.e. ovens). I've moved a lot with the military and have had to adjust to new places and things. I've always found it rewarding and challenging. One thing I was reminded of while listening to you describe your area of Tennessee was , on one of my moves across the country, I was driving through the Appalachians and, while following another driver (let me say here that I hate driving through the mountains, any mountains), I watched him begin to travel off the road just before a bridge over a deep gully. He headed directly towards the drop and I watched as I thought he would drive straight to a terrible death. Luckily, he awoke (I assume) just in time to pull himself back onto the highway. Of course, he exited at the next opportunity, I'm certain to get some coffee. I was a nervous wreck because of that and it has been a lasting memory.

I think it's amazing that you and I have similar interests on viewing CZcams... Rick Beato, are Adam Neely two channels I keep up with and every once in a while I come across one of your comments and it just feels wholesome, like I'm part of a larger community of people with similar interests. Just like I got a warm and fuzzy feeling when I found out that Adam Savage likes Todd Woodford's channel, because I had already been watching twoodford for years at that point, seeing as it's about the workday of a luthier, and I like music and woodworking.

  • @francisvalentinemixes5277

    About the first question...
I get it ALL the time. When I inform someone I am from southern California, they look at me wierd and say something along the lines of "Why did you move to the south, especially to a military/college town?" (I live in Pensacola, Florida.)
It's become a reflex to basically just go "Cost of living, plain and simple." as a short response, and then I'll say "Military personell come and go, and so do college stusents. Due to that, permanent residents-wise the city doesn't have many people, so the cost of living is cheaper." if asked to elaborate (usually only older folks ask).
Wasn't always that simple though. Been here for almost 7 years, and in the very beginning, it use to be SUPER annoying.

Welcome to TN! I moved here from the Midwest and really like it here. Dove in to some of the local history and made a few videos about such. One fun fact...the father of Oliver Hardy was in Knoxville during the siege of the town during the Civil War. Fort Dickerson has an interesting story as well...including the life of Jonathan Calvin Dickerson whom the fort is named after. Every place has history...both good and bad. Cheers!

Hi Adam, Knoxville native here. I'll be honest, I wanna move to the southwest, somewhere along the Arizona-New Mexico border if I can, because I need space from some family I know here, I think that region is beautiful, and I'll probably be working remotely anyway. That having been said, if I was gonna stay on the eastern half of the United States, I'd probably stay in east Tennessee. Being sandwiched right between the Smokies and the Cumberlands is way nicer than most people who haven't been here realize.

East TN and the Knoxville area are absolutely beautiful! I lived in that area for 5 years, and worked in Oak Ridge. I would not think twice about moving back there given the option. Can't beat the super nice people, great food, beautiful rural country (outside of the city and major surrounding towns), no state income tax, I could keep going on and on. You do have to deal with the 100F+ temps and 99.9% humidity in the summer, and the crazy tornado season but that is rather short, the rest of the seasons are wonderful. We did experience softball spike-y hail, and 3 tornados actually jump our house, lived without power or water for a week from 17" of snow and 3" of ice storm. We had several big snow storms in the 5yrs we were there. Made first tracks on the roads in our 4x4 raised truck with big ol honking tires on it to get the elderly folks around kerosene, so they could have heat. (We are from PA, so snow is a non issue for us, just the other folks on the road that are *not* used to snow are the dangers). I love TN, and have been trying to get back there since I left in '96!

OMG! I so understand this. When my wife and I announced we were moving from the Seattle area to St. Louis we received a resounding, "Why?" from nearly everyone.
For us it is simple - economics. We cannot afford to remain in this area, despite having been lifetime residents of the PNW. St. Louis is cheaper to live in and is still a city. It is also not the rest of Missouri. And, the real kicker is, I have family there. Family that both my wife and I would like to be nearer to.
Who knows, I might actually be able to retire in that city.

You really DO get all 4 seasons (sometimes in one day), you get the clean air from the lovely Blue Ridge Mtns, you get the Appalachian culture, if you can call it that, which promotes some fantastic food, plus you don't get caught up and stomped on by the rat race.

I'd agree that regret is typically a feeling that is associated with there being a negative or something bad, but I also think that sometimes you can regret something because, even if there is nothing bad or negative with your current situation, you feel like if you'd made an alternative choice, your current situation would be better.
