We Filipinos and the Indonesians have some similarity in language and in food. Tahu like you said, I saw tofu there. I recognized right away when you said tahu, because here in the Philippines taho is how we call it although we use taho as a breakfast thing. Made up of silken tofu(the liquidy type), tapioca pearls and brown sugar syrup. We call it tokwa when it's cooked in meals like tokwa't baboy(tofu and pork), or tofu sisig. Here we call water spinach kangkong. It is cooked in an adobo way but more on the sour side than salty. Or we simply eat it with sautéed shrimp paste. Woaaah! I never knew Indonesians have that round hard pastry with sesame seeds. We have that here too and it's called binangkal. Thick outer part but soft in the inside.

    Few corrections:
    1. PAPEDA
It is an Indonesian sago congee made from sago starch (not tapioca) which is considered as a staple food for and is originally from the indigenous people in eastern Indonesia.
Sago and Tapioca may appear identical, but they're sourced quite differently:
-Tapioca comes from cassavas an edibles root looks like sweet potatoes and taro (in some South American countries the root is actually called tapioca)
-Sago is made from the pith of the sago palm
    2. IKAN KUAH KUNING
It’s a fish soup with yellow broth, not a fish curry. In Indonesia the basic mixed herbs for yellow curry is not only using lot of turmeric also a mixed of cumin, candlenuts, coriander, bay leaf, and coconut milk. Some curry dishes also use curry leaves.
But Ikan Kuah Kuning or Fish Soup with yellow broth uses turmeric without coconut milk, cumin, candlenuts, coriander, and bay leaf. It has thinner broth not creamy broth like curry and sometimes is added Kemangi leaves or lemon basil leaves.
Papeda is always served with Ikan Kuah Kuning.

    • @J.A.inBali
      @J.A.inBali Před rokem +14

      3. RENDANG VS KALIO
The one that Ibu has on your video is called Kalio Sapi, means processed beef meat using thick coconut milk which is still brown and oily with some broth from the cooking process. While Rendang in the original one in West Sumatra is processed meat using the same herbs and spices as Kalio but is processed till the dish is dried no oily no broth.
The one in your video, if referred to original Rendang in West Sumatra is called Kalio.
Both Rendang and Kalio are originally from West Sumatra.
Then as the Ibu sounds like she’s a Javanese origin, she also has Rujak Daging, the Kalio version of Java with javanese preferred spices and herbs.

      4. SAMBAL or Indonesia hot sauces
Indonesia has more than 40 different sambal accros the country.
We have basic sambal called Sambal Bawang (hot sauce with mixed of chili peppers, shallot, and garlic based), Sambal Terasi (hot sauce with mixed of chilli peppers and shrimp paste), Sambal Tomat (hot sauce with mixed of chili peppers and fried tomato but no Terasi).

The Yellow Rice dish you eat in this video contains:
    1. Nasi Kuning or the yellow rice made from plain rice cooked with coconut milk, turmeric and some basic herbs and salt a bit.
    2. Rujak Daging Sapi or the cooked beef meat with Bumbu Rujak (Javanese red paste made from mixed herbs and spices). Looks like Rendang or Kalio but they all have different process and distinct flavours.
    3. Telor Balado or the Minang style spicy cooked eggs.
Balado is a type of hot, red and spicy paste (we call as Bumbu in bahasa Indonesia) from Minang cuisine in West Sumatra (similar origin like Rendang).
The one you have is boiled egg cooked with Balado paste.
In Indonesia we have many kind of Balado from beef to chicken and egg.
    3. Sambal, looks like it’s Sambal Matang or cooked spicy sauce.
    4. Tumis Kacang Panjang Tempe or sautéed yarlong beans with tempe. One of our common Indonesia dishes.
Tumis Kacang Panjang or sautéed yardlong beans usually also can be cooked with chicken liver and gizzard, potato, chicken meat, sliced beef.
    5. Serundeng Kelapa or the roasted grated coconut. We have few kinds of Serundeng but it is a side dish or condiment served to accompany rice. Very common in Java and Bali.

Before eating, stir the meatballs first, so that the sauce is mixed with the chili sauce. In Indonesia, soup is stirred before eating it to mix it, so the sauce becomes more savory

oh yeah rendang is delicious but the cooking process takes a lot of time because you have to simmer it until there is no more water while you're cooking it (process could take hours or even overnight)
