Indeed they have, but you'd be hard pressed to find a key lime pie bakery in the Keys who juice fresh key limes. Fact is, only two commercial bakeries in the US juice key limes in-house, the other one isn't in Florida either.

Pasteurized egg yolks are 100% safe from salmonella or other problems. Any premium ice cream contains egg yolks. Cheers.

That may be true, but Kermit doesn't use fresh-squeezed key limes, rather a concentrated (and preserved) key lime juice. None of the key lie bakeries in the Keys do.
