@@hatsukeya i've been knife sharpener for litle over 1 year now (freehand on stones) and there is so much confusion when it comes to single bevel japanese knives like Usuba, Yanagi, Deba, Funayuki etc... Most of Europe dont understand completely their geometry. I have alot of confusion also. Are they convex on the bevel from production, are they both convex or some V flat grind on the bevel bellow shinogi? Do you professionals keep the convexity when you sharpen them or not? Is Deba, Usuba same grind as Yanagi, and same sharpening technique when it comes to whetstones?
