  • Mysore Pak is very special sweet for all South Indians. It is prepared using besan flour, ghee and sugar. Ghee is the major ingredient to bring the delicious flavour from the sweet. Using ghee makes the sweet soft and flavourful. Some people use half ghee and half oil, but this recipe is completely prepared using ghee. Mysore Pak is very famous in Sri Krishna Sweet, it is a famous sweet shop in South India.
    Ingredients:
    Besan Flour - 1 cup
    Ghee - 2 cups
    Sugar - 1 1/4 cup
    Water - 1 cup
    Method:
    1. Take a pan, add 1 cup besan flour and saute on low flame for 2 to 3 minutes.
    2. Now remove from heat and sieve the roasted flour using a sieve.
    3. Now take another pan, add 2 cups of ghee and heat the ghee for few seconds.
    4. After warming the ghee, take 1 cup of ghee and add it with besan flour and mix really well and set it aside.
    5. Let’s make the sugar syrup. Take another pan, add 1 ¼ cup sugar and 1 cup water.
    6. Mix sugar and water well till the sugar dissolves well in the water.
    7. Cook sugar syrup for 8 to 10 minutes to get one string consistency.
    8. Once you reach one string consistency, add besan flour mixed with ghee and start stirring in the sugar syrup.
    9. We still have one more cup ghee, so add 2 tbsp of ghee from the left-over ghee and keep stirring.
    10. Now add 2 tbsp ghee for every 5 minutes and mix well with the besan flour.
    11. This process takes about 18 to 20 minutes to achieve the right consistency for Mysore Pak.
    12. Switch off the flame and pour the mysore pak in any mould and allow it to cool down completely before cutting the mysore pak.
    13. Make the desired shape once it is cool down completely.
    Tips to make perfect Mysore Pak:
    1. Sugar syrup consistency is very important. It should reach one string consistency.
    2. If you don’t prefer ghee much, then add 1 cup ghee and 1 cup oil.
    3. Wait for the mysore pak to cool down completely before you give them a shape

    Your recipe video and instructions are so lucid and easy to understand. I don't speak Tamil (I wish I could) but thanks to a load of Tamil movies I understand bits and pieces of the language.     Since the ingredients list is small, the specificity of each item could matter. Can you also mention the brands of the besan flour, ghee and the sugar used. And the type of water (tap or RO). If the ghee is homemade, can you post a video of it as well?

    Thanks for this video. I tried the same recipe today. Ghee+ sugar melting was done at medium heat and when besan mixture was added, we made it to low flame. We stirred the mixture by adding ghee at regular intervals for about 15-20 mins. When mysore pak was done and when we tasted it, we could sense the taste of raw besan. Could you please tell us what could have gone wrong here? :)

      Oh is it? Did you roast the dry besan flour ??? Roasting helps to remove the raw smell.

      Try Mysore Pak in heavy pans ... It makes lot of difference.. avoid non- stick

    One small suggestion, the most common mistake we make in d mysire psk padham is at d last stage. When it thickens, right padham is poothuvarum stage, meaning, from d sides the bubbles of d liquid will look like flowers. That's d right tome to spread the mixture

      @@meeramohan6055 For sugar syrup it takes about 8 to 10 minutes. It again depends on the temperature. I cooked on medium heat.

      @@meeramohan6055 very difficult to tell exactly how much time it takes but my tip for you is that keep a small cup with clean water n dip your index finger n then take a little bit if d liquid in the ladle n with your index finger n thumb try to make d string. Repeat this every 3 minutes n you yourself will see it thickening
