Appreciate the tip on adding one egg yolk to the cold rice to later fry it crispy. One question.......is there a difference in taste when frying in your type of wok to a non stick wok ? Thanks for sharing.
Chinese prefers something called wok hei, which is a smoky aroma from the dish, which is hard to achieved through non-stick wok. But, i won't be bothered by it too much, and i suggest u to use the way u r more comfortable with. There's no rules in Ah Pa's kitchen.

Fried rice has to use at least medium high heat
If I’m putting in fresh prawn and diced pork meat, when do I add them in? Before or after the egg?
U can pre cook the prawns and dice pork and set aside, then add in towards the end
