    Denis Burkitt, Walter Kempner, Nathan Pritikin, John McDougall, T Colin Campbell, Caldwell Esselstyn. These are the heroes who set the standard for maintaining health. It's all there, all one needs to do is delve into the science and see if true. People like AJ, Doug Lisle, Mastering Diabetes, Alan Goldhamer, and so many others are carrying the message forward. But the simple truths do not change.

    I am from India and was vegetarian till Oct 2021. The moment I heard a lecture of John McDougall, praising the potato, I was amazed. Then I learnt more from him and realized what I was eating all along ( rice) was so good. I removed the milk and its products. I feel so healthy!
    I coined this :
    There is a big difference between icecream and rice steamed.
    I am a 65 year old runner and coach tennis!

    Dr. Kempner's story is one of my favorite anecdotes to share with people when I speak with them about nutrition. I recently read a book written by one of his patients called "Fat Like Us." The author interviewed dozens of Rice Diet patients whose stories are in the book. Fascinating stuff but I was left feeling sad for the patients because they didn't come away from the program with a sustainable solution for maintaining their health.
    Here is an interesting passage:
    The creed of the Rice Diet is simple food served plainly. For novices, the Rice Diet consists of rice and fruit. Later on in treatment, vegetables are added. The rice is plain and boiled, without any salt. The fruit is canned or fresh. Each dieter's daily calorie allotment of calories ranges between four hundred and seven hundred a day. A typical breakfast at the Rice House consists of one half of a grapefruit, two-thirds cup of oatmeal, and one cup of Sanka - without cream or sugar. Lunch and dinner are identical: two-thirds of a cup of rice and two servings of fruit. All of us, no matter how large or small, eat rice and fruit until the staff says otherwise. The physical results of the Diet are felt immediately and resemble the early stages of starvation.
    Withdrawing from food causes the body to feed on carbohydrates stored in the liver. Dr. Kempner referred to this process as "cooking your own bacon." Ricers refer to it as "auto-cannibal." The body makes adaptive changes, and as less food is taken in, less energy is expended. The heartbeat slows down, blood pressure drops, internal organs shrink. Dieters experience severe headaches, lethargy, and disorientation. We call this disorientation "Ricerhead," and its onset signals the body's loss of sodium and potassium. Ricerhead is extremely common in beginning dieters.
    Ricers use walking as our main exercise and often walk seven, ten, or even fifteen miles a day. One very ambitious group of Dieters walked all the way to Raleigh - twenty-three miles away! We exercise while consuming very little food and no salt whatsoever. Sometimes the levels of sodium and potassium in the body get too low, and a Ricer will pass out. When this happens, the staff adds toast and tomato juice to the Diet. Other side effects include aching muscles, hair loss, changes in menstrual patterns, and vivid dreaming about food. While on the Rice Diet, I would get up at night and look in the wastebaskets to make sure I hadn't really consumed the food I'd dreamed about.
    The harrowing period of side effects lasts about ten days, followed immediately by a brief period of a near-euphoria where one feels light, airy and pure in body and spirit. The headaches depart, and clear thought and excess energy occur. Now the body feeds on its own fat and muscle. Weight loss is twenty-five percent fat, twenty-five percent muscle, and fifty percent water. The face thins out, skin sags, and cheeks hollow as bone structure emerges.
    Most of us eat rice and fruit for six weeks. After that time, if all body levels such as blood pressure, blood sugar, and cholesterol are normal and the staff allows it, we are allowed to have vegetables. By this point, significant weight loss has occurred.

      wow this is insightful... in the high carb low fat movement people are always citing the rice diet as a miracle cure... okay, so people only ate 400-700 calories a day??? no wonder their blood pressures went down, they lost weight, etc. THEY WERE STARVING!!!
      This is very enlightening... the high carb people make it sound like you can eat 3000 cals of carbs "because: kempner's rice diet"
      yeah... so long for that fantasy ;)

      Sounds terrible and as you say completely unsustainable because they probably often put it straight back on after leaving, things have changed a lot since then in best practice at least.

      That is simply not a healthy diet...I believe Kempners diet worked because eating that low in calories will obviously cause weightloss but at what price? It would be interesting to find out how many of those patients sustained this lifestyle or did they gain back most of the weight.

    Thank you so much for putting this on CZcams! I was interrupted during the live event and was excited to be able to watch it in full just now. Wow! Such a great conversation to be able to eavesdrop on. I’m learning so much about the why’s and how’s about the starch solution lately, especially with these latest talks which are putting a lot of my worries to rest. Thank you so much! I lost 40 lbs on the starch solution several years ago but my family worried so much that I caved in and started eating things they told me were “healthy” but didn’t work. I got diabetes and gained the weight back. Now I’m back to what I’ve told them is the diet that works for me and I sent my sister a link to the CZcams video where the Mcdougalls and chief AJ talk about Diabetes and she finally calmed down a bit. I think she really thought she was saving me from “eating too much sugar” and it helped her to explain how insulin resistance actually works. Again, thanks so much for helping me explain the diet better and soothe the worries of my family!
    Oh, and I’m already down 20 lbs in 3 weeks again. Feeling so much better.

    Back in the 70s many of us transformed our health by adopting the Macrobiotic diet and lifestyle which consisted of eating 50 to 60% whole grains, mostly rice and 25 to 35% vegetables and some miso soup. It was important to chew your rice very well and avoid processed foods but embrace exercise, meditation, and a healthy natural, grateful way of life. Much of the literature on the acid/alkaline advantages of this Macrobiotic or Rice Diet is still available although there are no longer any of the major teachers and macro centers we had back then. Recently some friends and I were marveling at a concert video of Sting who looks and moves like a 30 year old although decades older than that- we-looked up his bio and he claims to have been a Macrobiotic for 40 years. Power to you and the revival of the Rice Diet. I have been following it since the 70s, never sick, four children, and a decades-long McDougal follower for sure.

    I just want to tell AJ thank you. I have prayed for wisdom on how to care for my body as the Bible says we are the temple of the Holy Spirit. I needed directions and I know our Lord directed me to chef AJ Nothing happens by chance. The more I learn the more thankful I am. For people like her and dr McDougal. We all have stories to tell.     I love you Dr. McDougall. Thank you for sharing your knowledge. I tried telling my family to no avail. I had lost 33 pound's. But my family convinced me that not eating meat was unhealthy. So I gained all my weight back and back on blood pressure meds. That's all before covid. Well I'm now back on your program and I don't care what ANYONE says ever again. I told my doctor and saw what this Way of eating has done for me before. My Dr. Said go for it and stick with it. I know this is long winded. But I want to say. And I'm tearing up right now. I love you and thank you for everything. I wish I could hug you. So I'm sending you a written verbal hug. BTW even GMA said I was crazy not eating meat. She's a diabetic. Go figure.

      Dr. McDougall said his diet is for average people and the rice diet us for morbidly obese. But will the rice diet work for an average person who needs to lose 10-20 lbs and doesn't particularly love vegetables?

    The Starch Solution - that book I found to be the best. I finally "got" it. Do not know why, but that one did it for me. I read the MWL, the 12 Day Plan... all fine, but this one made the click.

    As a Naturopath myself, I've always admired Dr McDougal's anti-establishment stance. I'm also fascinated with what Dr Kemptner was able to accomplish with his rice diet, though we must acknowledge that after it has achieved its sought after health reversals, a more varied diet should be adopted.
    I am troubled by how much Dr McDougal appears to have aged over the years. I say this not out of sarcasm but real concern. I was born in 1941 - 81 years ago. Dr McDougal is 74. My diet is 95% vegetarian, but I do add small amounts of animal products, probably less than 5%, but I do believe that even that small amounts ads more robustness to a person's physiology.
    A personal note you might find interesting: I was born in a small town in Pennsylvania called Rosetto, a town made up largely of Italian immigrants. Well apparently scientists discovered that the town of Rosetto had the lowest incidence of heart disease in the whole country. A team of scientists came to the town to find out why.
    Their conclusion had nothing to do with diet. I can verify that their diet contained loads of everything that could supposedly kill you. They concluded that the "medicine" that saved them was the tightness of community cohesion, how they cared for each other, took care of each and loved each other.       Great comment . I do think you’re right some meat might be necessary especially as we humans age , no population was vegan 100 % ever , yes maybe 80. 90 or so percent Plant-based is fine but animals have been part of our diet to some extent , even maybe some fish /sardines and this totally matches Dr kempner idea of a post rice-fruit only diet and If he was a man of integrity (like we believe he was) he woundnt have prescribed “some meat” if it wasn’t actually good for the patients.

    I'm very touched by Dr. McDougall's presentation. I can sense his passion but also the heartbreak of knowing the majority of medical doctors aren't interested because there is little money in what he teaches. But! I believe the tide is turning and the population is starting to see the truth. I'm glad my eyes are open now and I've began my journey into whole foods plant-based nutrition.     I stayed the night one evening in Durham, NC. I parked my tanker next to the railroad tracks by a little chemical refinery. I woke at 2am to the unmistakable sound of automatic gunfire - they boys having it out in the nearby neighborhood. Slept with my rifle next to me for the rest of the night. Yikes. I wan’t a potato guy back then but a Purple Sweet Potato WOULD HAVE BEEN NICE 😇

    The thing about white rice is that when they strip the haul off it that takes a lot of the arsenic off, the process also strips off a lot of the omega 6 which is a good thing cause it makes the 3 to 6 ratio a lot better. Also you don't want fortified rice. Then put the fiber back into it with veggies.

    I am definitely interested in all I can learn about Walter Kempner's work! Since my major bowel obstruction surgery, in September 2020, I've had to keep my fiber low, stay away from most vegetables, whole grains, & some fruit, for prevention. I can handle any white rice, applesauce, peaches, green beans & I juice my vegetables. It's been tough, coming from a high fiber plant based diet to practically no healthy produce. My weight is up 15 pounds & my cholesterol is high! I can't afford to make an appointment, to talk to one of your doctors, but I can read as much as I can about healthy foods, and do what I can. I am a fit 64 years old, and still an avid runner. I just need to be healthier, so I don't end up with the usual diseases.

    The STAR McDougallers - I was so happy everytime a new one came in my mailbox! The doctor's comments at the bottom of their stories were top. I know the STARS shown here from the board (a very active group), except for Mike W. and Dan C. Sometime later came a web site change and the formate and style of the stories changed too - shorter and not so mucgh iunformation. I printed out I think every single STAR M cDougaller back then and still have them in a binder. Iwas active on the board until 2009 (?) then the mood started to change (new memebers), felt attacked. I was on the board because I enjoyed seeing how people were able to improve their lives. I have noi health issues. I'm glad Dr. M and Mary M. drop by often, I get my hit McDougall Plan now at least once a month, which is good.

    Excellent Chef AJ....Have a question, what is in the Canisters in the far back of the Kitchen Island ? They look like some kind of Danish !!! They look delicious.....did Mary make them and where is the recipe.....I'm assuming she doesn't buy things like this.....I used to buy Danish that looked a lot like those !!! And I loved them....haven't bought in several months.....
    Did anyone call in & asked that question ? I may have missed it, because I had to leave the computer several times watching this...can you please answer this ? Thanks this was a great video & loved Dr. McDougal's shirt..... No Birthday Cake this time? Must have been on the video last yr. because I think you made him some kind of cake...right ?

    I read an article stating Lundberg Rice has a high amount of arsenic...this is where i get my rice. boil 1 cup of rice with 10 cups of water then drain the rice when soft... cover and then steam it...this will help get rid of the arsenic. also I think the person asking the best way of cooking the potatoes may be asking about how to safely cook the spuds to get rid of the lectins...in which case it would be to pressure cook them.

      @Faithful Deliverance Life. Did your sister receive the Covid shots? If she did, this is the reason for her blood clots. I'd advise her to never take another shot again. Seek out medical attention ASAP. This is happening all over the world to Covid inoculated people

    Oh, I forgot to mention this incident which happened yesterday. I was walking with my 5 year old grandkid ( he knows I am vegan thanks to John McDougall) and I met a lady. My grandson asked me who she was. I said - Mary. He promptly said: Who is the other Mary? I realized he meant Mary McDougall! I had talked about her too!

    I bet the rice in the 1930's etc. that they were using had more minerals than the rice today, thus fullfilling needs more and satiating the patients more than the pesticide sprayed and mineral soil deficient rice of today.

    With regards to non stick cookware I found Greenlife pans on Amazon with a ceramic non stick finish are amazing and no nasties. I love them because they came in cute colors (I got the pink ones) They’re so easy to clean too. The trick is to keep the temperature low/medium when cooking with them to keep them easy to clean

      A lawsuit has been brought against greenlife and it has come to light that they have silane and aluminum oxide in their "unique" coating.
      Steel and glass cookware are better options than non stick coated pans

    Wow; I can attest to being in Wi being raised on a farm and having a mama who cooked southern food very lethal combination if you will. I have gone plant based exclusive for health and the planet. But my closest plant based exclusive friend lives in Texas. Definitely need more of that up here with all the cheese and alcohol that people drink in this state

    Does the rice diet equate to a calorie restrict diet? I’d have a hard time sticking to less than 1500 calories a day…. If I could eat rice, vegetables and fruit as libidum I could do that. It might end up equating to 1500-2000 calories though

    The Rice Diet was very low calorie. It was a medicinal treatment not a livable diet. It does need extra quality calories for daily living, and today, full spectrum supplements. Our soil is depleted, vegetables and fruits aren't as nutrient dense as they used to be. And I've seen Dr. Ms report on supplements, but I get deficient if I am 100% vegan for over a month. I've done it repeatedly with similar results. And I've checked my genes, I don't absorb vegetable sourced vitamins and minerals as easily as animal.
    With that, what gives with Dr. Ms breathing? That's new...

      There are possibly some important nutrients that you overlooked. For example, not consuming enough magnesium, D3, and K2 could contribute to calcium deficiency (even if you ate 10 cups of kale). Anyway, may I know how you found out that you were deficient? Did you get a blood test?
      I'm thinking one of 3 possible situations:
      1- You may think that you ate enough, when you actually didn't.
      2- You're not deficient in any nutrient, you only guessed you are.
      3 - You lied and made shit up.

    This interview with Dr McDougall is an eye opener for me! I don't eat any sugar, but I have been eating a lot rice, or grains, and feeling I'm not gaining weight, but at an ideal BMI of 20 for me. I only added rice after going on a WFPB diet about a year ago. I was some days eating only all fruit meals, including the very sweet fruits, like honeydew, grapes, durians, mangos. I noticed too that if I don't eat enough rice in any single day, I get sleep problems! Once in a while, I will eat a meat protein. I had cancer in 2016, now on hormone regulating med, my body is feeling good. I'm just wondering if I should be concerned all that starch is going to turn against me because we all know cancer feeds on sugar, so, is table sugar the only culprit, or even excess ‘sugar’ from rice stored in the liver as well?

      If you're worried about cancer (I'm a dietitian, and had a cancer scare a couple years ago) this is what I would do. I keep all ALL processed foods out of my diet. I eat about 3 pounds of lower-oxalate green vegetables every day, some fruit but not necessarily every day. I also eat: ALL intact starches, as much as I want. I have some raw walnuts or avocado if I want it. I fry nothing, and I keep animal foods completely out of my diet. The fat content of my diet is very low, about 7%, and I eat a tablespoon of ground flax every day, to supplement lignans and ALA.
      I AVOID peanut butter. It was the (I think) pound+ of peanut butter I was eating out of anxiety every day in 2020, that activated a polyp in my colon. I fixed my food and it went away without surgery in less than 6 months. Doctor actually got upset with me after I showed him that I didn't need the surgery he wanted to sell me, the freak, lol. Anyways, colonoscopy is 100% clear. Colon cancer runs rampant in my family, and I probably have a severe genetic predisposition for it.
      SO. That's not only what I would do if I had cancer, it's what I ACTUALLY do.
      Typical diet for me:
      beans
      intact grains
      root vegetables, all of them!
      greens, low oxalate usually
      all fruits
      all other vegetables
      all other intact plant foods
      lots of spices and herbs
      green tea
      I avoid:
      animal products
      ALL processed food of any kind
      nut butters, unless made from raw by me
      regular use of salt
      alcohol
      I might have missed a thing or two...but it's late;)

Do you eat the peanuts though (whole peanuts) and what other nuts do you eat? If you have an avocado, how much of the avocado would you eat per serving and how often in one day?

      @@dinamariea61 If it's from raw nuts, I would have nut butter, but probably not peanut butter. I already ate enough of that;) Whole peanuts are fine, as long as they are very fresh and have not been roasted and salted. Gently roasted peanuts are okay, but sometimes, a particular batch is over-roasted, and give it to my neighbor, or the neighborhood squirrels;)
      Avocado? I would eat as much of them as I had. They're great! If I ever notice I gained too much weight (not a problem I ever have) I would slow down on the fatty foods.

      @@dinamariea61 I make my own bread from grains and lentils I sprout myself. I take the slightly sprouted seeds, and in my Ninja Blender, I grind them into a wet dough, adding water if needed. I let it rise a couple times in the blender with yeast, and then bake it in a pan. Storebought Ezekiel bread is: 1) very expensive, 2) is too high in protein including isolated wheat gluten, and 3) is too high in added sodium to be eaten _ad libitum._ When I make my sprouted grains bread, I eat about 3000 calories of it in a day; if I did that with Ezekiel Bread, I'd be eating about 3000mg added sodium, and it would cost me about $12. My homemade version has omg added sodium, and costs about $3. AND...lol, my replies are so long...I prefer the taste of fresh-baked bread.
      About nut butters, sometimes, I throw a few raw walnuts into a soup or a sauce, and blend it in my bullet blender. Sometimes, I enjoy a schmear of walnut-almond butter on my homemade bread;) It's great as a replacement for mayonnaise, if you want a rich buttery taste, without reaching for oil based dressings. For example, today I'm cooking green beans, and they will be topped with some walnut/mustard dressing. Just a little:)

    Food composition Back then compared to now is completely different... Commercial Fruits and vegetables have a fraction of the vitamins and minerals in comparison to the fruits and vegetables back then. A lot of them are genetically modified. We have to take into consideration the difference in the sugar composition as well! Modern-day sugar is ultra-refined ultra-processed all the buffers are stripped out of it, changing it from a complex structure that gives your body a buffer or slows the digestion process down, allowing your body to process sugar without causing any of the negative side effects that people get when they consumer modern table sugar, which now is like taking a needle full of sugar and injecting it straight into your blood. There aren't any buffers. So the only way to compare this diet you would have to have access to sugar that is not ultra-processed or ultra-refined (I'm not sure where you can even get that or if you can even if you can get sugar like this) you would have to get your fruits and vegetables from a farmers market or grow them yourself. It doesn't matter if it has an organic label stamped on it, Because the fruit and vegetables were likely grown in commercial farms that do not rotate their fields or properly maintain the soil. The soil has little to no vitamins or minerals, so there is very little to no vitamins or minerals in the fruit/vegetables. They may not have all of the chemicals and they pass the requirements to be labeled as organic, but they have little to no nutritional value. Most Modern grocery stores are 90% garbage (ultra-processed, ultra-refined imitation food, or it's soaked in high fructose corn syrup or other chemicals/ingredients) 10% (and that is generous) actual food, but the majority of that real food is saturated in chemicals in order to make it last longer on the shelves. Even the garbage they call bread!! "Bread" or what is sold as bread in the United States is BANNED in other countries! A lot of our food is banned in other countries! We are literally being poisoned! What caused health issues in the past should still be taken into consideration today, but if you aren't taking into consideration the root causes for modern health issues and also taking into consideration the quality of the food or comparing apples to apples and you are telling people to try this diet with commercial grocery store ingredients, then are you really helping people? I mean it might lower some risks and they might lose weight (if their body is still healthy enough.) But with all of the other modern-day health factors like heavy metals, parasites, and other toxins, that are also major key players in most if not all leading health issues. Modern conventional medicine is ranked number 3 for America's leading causes of death! Pharmaceuticals are overprescribed and worse they block our bodies from absorbing crucial vitamins and minerals. Most doctors unknowingly are no better than drug dealers peddling big pharmas drugs. Because Big Pharma controls what is taught in med school.

    Also, the reason why people are warning people about sugar is that modern-day sugar is not the same as the sugar they had back then. Sugar back then had buffers, which slowed down how fat your body broke it down. Table sugar now doesn't have those buffers. It is broken down and absorbed into the body almost instantly. The other problem now compared to back then is that sugar is put into everything!! and not in small amounts! They just give it another name. There are, I believe, 40+ ingredients they use on labels to intentionally hide it from people. They know exactly what they are doing, I mean why cut up and put fruit in a can and add high fructose corn syrup and sugar to water? I have never had fresh fruit that needed sugar added to it to make it taste good! They know people are all about convenience! They will pay way more for something if it is more convenient for them. These big food companies and big pharma know this, and they have used this to poison because it's all designed to maximize their profits!!

    I'm sorry but I find many doctors are not very bright, they just think they are, I don"t go to specialists either they are just as bad! They couldn't even diagnose something as obvious as gallstones, I was close to dying by time I finally after years had an ultrasound!😂😂But some are very bright, thankyou for persevering in the face of so much criticism and skulduggery!❤😂❤I think there is an emotional component to poor food choices too, I know when I'm stressed or depressed I don't care if I eat poorly or tired!

    Have you ever done the RICE DIET ? Would you happen to have a good rice recipe ? Love rice especially fried rice, but since you guys don't fry foods how do you prepare it....
    I make it for breakfast sometimes, by cooking it and adding butter & cream & sugar....and I know you frown on this....but other than this way & take out Chinese Fried Rice...(tried to make this myself several times....was horrible ....) Would love any info on recipes you have made or what is your fav. Rice recipe....& how often do you make it....? Thanks.. Have watched several of your videos but never saw anything mentioned about Rice.........

      1,000 calories is low, but it's higher than the 600-800 calories bypass patients must endure. 1500-2000 calories a day is normal for healthy eaters.

      I lost about 58 pounds using the rice diet, but it is very low calorie. I figured it out once and I was eating between 500-700 calories a day. NO salt, no condiments. You eat 1 fruit for breakfast, 3/4 cup of cooked rice and 2 fruits for Lunch and supper. No oil, no butter and you must eat at designated times..when you can no longer eat another day of that, you remove one fruit at lunch and supper, but add 1/4 of a pepper, 1/4 of an onion and 1/2 of a tomato. You can cook that or have it raw. Again, no spices, no salt. Stay on that as long as you can, then you can substitute 1 chicken breast for the rice. And you can substitute all the low calories vegetables for the fruit, but only 1 for 1. When I had one meal of fish that had salt on it, it was the beginning of the end for me. That fish was sooooo good. I struggled to keep on the no salt, no spice, no taste food diet. . I have tried to go on it again, but I haven't been able to.
