Id recommend beef bacon. In the traditional carbonara, the pork fat gives the dish a lot of its flavour. So beef is a better option cause turkey bacon isnt fatty enough. Although I'm sure it'd be good either way.
I'd go with a fattier type of meat because the pork fat that renders off of guanciale is integral to the dish. I think turkey bacon would be too lean. Beef bacon is an good alternative. If you don't eat beef/red meat, duck bacon is another great choice.

you can use parmigiano regiano if you can't find pecorino at all (it's expensive and hard to find in a lot of countries) just make sure it's good quality

A small trick we use in Italy is to use some of the guanciale fat and pour it inside the egg/pecorino mix to give it even more flavor. You might not used guanciale but that was a flawless execution, really well done

Normally you'd render guanciale till it's fairly crispy, and there'll be plenty of fat that you can save for other dishes. Our brother used beef bacon that still had enough fat for the carbonara, so he didn't have to add EVOO, butter or any other fat. Turkey bacon is pretty lean, so I'd use half EVOO and half butter. This works especially well with mushrooms, zucchini and tinned artichoke hearts, I've found! Remember, carbonara is about the fat, the Pecorino Romano, and that freshly ground black pepper! Linguine, tagliatelle and fettuccine are also acceptable - in fact, traditional carbonara uses linguine! ;)
Thats as close as you can get it with your adjustment on the guancale and thats a perfectly good alternative. Only pedants will get upset by the paste move, but its known to be far more consistent, in avoiding splitting or other issues. Great job.

As an ex vegetarian with Muslim friends, many don’t know that traditionally Pecorino and Parmigiano Reggiano are not halal nor vegetarian. Any cheese using calf rennet obtained the traditional way is a grey area, so make sure you look for microbial rennet. I can’t have either anymore, but thought I should spread wisdom to others that I learned the hard way 😔

Wonderful just a small tip if you add the rendered fat to the egg yolks and Parm you get a silky texture
Another tip, add the cheese separately at the very very end of cooking. Good way to ruin a good cheese like that is too much heat.

you can also substitute peffer with cumin, eggs with a little bit of milk, pasta with gnocci and pecorino with cheddar.

I turn the heat off and let the pan cool for 20 seconds for that exact reason. Plenty of heat to cook the egg but shouldn't scramble.
