If you live anywhere near a Luby's Cafeteria (getting hard to find them these days) they make the most delicious liver and onion ever. Be sure and get some rice and liver gravy to go with it. Black eyed peas will go well with it too.
Nah you want good liver you need to really sauté the onions with a little honey and red wine you let it sit low and slow and you grill the liver much better I make it every week my family goes nuts for it

Why is it a strange concept to eat organs but not the flesh of an animal? Its more strange that the western world is so picky about which bits of a carcass they'll eat for absolutely no reason.

Liver cooked the right way is actually pretty good. And liver is one of the most nutritionally dense protein.
