I am a Malay. I live in Kuala Lumpur, the capital of Malaysia. Even so, me and my descendants actually come from a state called Aceh. Aceh is located on the island of Sumatra. One of the largest islands in the world.
The Acehnese are included in a small fraction of the Malay race. For your convenience, every tribe in Malaysia, Indonesia (except Papua), the Philippines, Brunei and southern Thailand belongs to the Malay race. We call our union as Nusantara which is an bond between the communities in the Malay archipelago.
To your knowledge, the ancestors of some Acehnese came from an ancient kingdom known as the Champa kingdom. Well, Champa itself is located in the central and southern parts of modern Vietnam now. Then the Dai Viet invaded Champa and occupied the area that had been seized from Champa.
I don’t want to offend you, but it’s no exaggeration if I say the land of Vietnam also belongs to us (Malays) actually. Did you know that there is a place called Cam Pha in Quang Ninh?
The first king of Aceh was the son of the king of Champa named Pau Kubah. Pau Kubah had a son named Syah Pau Ling (aka Sultan Ali Mughayat Syah). Under the rule of Shah Pau Ling, the Kingdom of Aceh became a strong and influential kingdom in Southeast Asia, especially in the spread of Islam and established diplomatic relations with the Ottoman Turkish empire.
Did you know, there is a Muslim community in Chau Doc, An Giang, southern Vietnam (mien tay). They speak like us, culture like us and religion like us. They are our separate brothers in Indochina. When i was a kid. Nasi Ambeng is the food they serve during Hari Raya to us as we go from house to house to perfom Takbir Raya ( to bless the family in the house with words from Quran). Mee/mihun goreng, sambal tempe with kacang and anchovies, serunding kelapa, ayam masak kicap.. heaven.

That sambal goreng, the bihun-like you said is named Suun/Suhun. Its kinda like Japchae in Korea. Its not a main dish, its a side dish... Its always an ingredient put in some side dish in Malaysia, like lodeh and This sambal goreng.

Nasi ambeng is javanese clan traditional cuisine.
Traditionally serve in a tray/talam for 4 to 5 pax. The dishes served for nasi ambeng is serunding(coconut), mee goreng(cook as a dish to eat with rice. Not the normal mee goreng full of chicken/meat/seafood), Chicken(masak kicap - soy sauce or ungkep - almost like rendang), sambal goreng jawa & dried fish
