Usually these large event venues will charge a stupid rate to be there, anywhere from a flat rate of 4-8k for 3 days or 25-50% of earnings.
They could be selling $35 of skewers and only pocketing anywhere from $17.5-$25. Thats just rent, doesn’t include: labour, cost of the meat, gas/charcoal, transport, setup/display costs, electricity, waste disposal etc

@@Ivanb98 It's unfortunate, and I understand the reasons, but one cannot deny how much the prices have exploded since the past 2 years or so. Even in the city, or in some other places, street food used to cross affordable - slightly above at worst (with rare exceptions). Now, even stands out in Lakemba start charging $8 for potato stick shit. City's just the same problem scaled up a lil, but it's inflation mate :/

If the population voted with their wallets we’d be sweet. But charge $35 for skewers and no one bats an eyelid. Charge 2 million for a run down terrace and people line up for the privilege. $10 beers?… oh yeah my shout!

In fact, most stall holders are required to provide an upfront payment exceeding $25,000, and it takes a minimum of 4 to 6 weeks after the conclusion of Vivid, if not longer, for them to see any return on their investment. Moreover, despite the minimum cost, this individual floods the entire venue with food vendors, regardless of whether they can generate enough revenue to cover the minimum charge. So the other day I was in Katoomba. And I was unknowingly sitting at this cafe called “Yellow Deli” and these 4 Hecktik lad kids come and told me it was a cult. So I googled it “yellow deli Katoomba cult” I got up and left in disgust thankful I didn’t pay or eat any food yet. It would be a crack up video if you did good review there
