I love how Kay explores new recipes with/for us. I much prefer watching Kay to someone with 3 cookbooks tell me how "easy" a recipe is. Even though no beginner or home cook could do without messing up or getting stressed/frustrated.

That looked like a fantastic Easter meal. Lambs are probably my favourite animal to eat. The best lamb I have ever had the pleasure of eating was served to me by a beautiful Senegalese woman when I was once having a relaxing time somewhere. The meat was served in an extremely spicy peanut sauce that made my eyes sting and the top of my head run with sweat. The woman noticed the condition I was in and gave me a cool delicious hibiscus drink to help reduce the sweating. I thanked her and gave her a thumbs up and a wink then finished my meal. That was thirty years ago and I can still taste that meal and the delicious hibiscus drink to this very day, that's how good it was. Fumbs up.

Chicken and Potato Casserole Ingredients: 4 large potatoes, peeled and sliced thinly 4 chicken breasts, cut into bite-sized pieces 1 large onion, finely chopped 2 cloves garlic, minced 1 cup rolled oats 1/2 cup butter 1/2 cup chicken stock 1 tbsp fresh thyme leaves Salt and pepper to taste Instructions: Preheat your oven to 375°F (190°C). In a large skillet, melt the butter over medium heat. Add the onions and garlic, and mix until the onions are soft and translucent. Add the chicken to the skillet and cook until it is no longer pink. Add the rolled oats and thyme to the skillet, and stir until the oats are lightly toasted. Gradually add the chicken stock to the skillet, stirring constantly, until the mixture thickens. Layer the sliced potatoes in the bottom of a large casserole dish, and season with salt and pepper. Pour the chicken and oat mixture over the potatoes, and spread it out evenly. Cover the casserole dish with foil and bake for 45 minutes. Remove the foil and bake for an additional 15 minutes, or until the potatoes are tender and the top is golden brown. Serve hot. Kay...steamed vegetables are all ok. Season them for god sake 😂. And that lamb was a travesty. Again no seasoning and lamb is DEFINITELY one not to be over done pink is totally fine so long as you use a thermometer to tell you when its done. Also gravy and mint sauce no Bueno, one or the other. Mint cuts through the richness of lamb, but if you like that richness Just gravy

Like many when they're discovering what is REALLY going on I binge watched everything and read so many books trying to sort it out in my brain. I'm not so active now and not up with what channels are doing, plus I can't understand how to work my equipment to make new vids. I see you've had good viewings on your vids and good subscriber numbers within a short time. SO many good YT channels out there now putting out great info in a really professional way.
I like steaks on the grill medium well... but a leg of lamb like this I'd season, throw in a baking bag, and cook for 2 hours, nice and tender. Same with roast beef, I dont want my roasts pink because usually a roast is a leg or rump, something tough that needs a lot to be tender. Take a look at the Market for McCormick Baking bags Kay, I'm roasting chicken thighs in one now, they're the best for moist and tender meat! P.S. If you want more of a recipe just say so... I just meant to try for your home cooking, they make roast dinners better.

Kay a little tip when baking meat...cover it for most of the cooking time and about 10 to 15 mins before its done unvover it and crank up the heat for color or put it under broiler for the remaining cooking time...the result is more tender and juicier meat.not dry and tough.try it my love.please!

Lamb should be pink in the middle. It's perfectly all right to eat. It doesn't have to be well done. Then it becomes dry and fibrous.
