    Total Carb = 3.0 g
    Dietary Fiber = 2.5 g

    Total Fat = 2.4 g
    Protein = 3.6 g
    DRY INGREDIENTS
    Oat Fiber Powder = 120 g / 1 cup (I used NuNaturals)
    Finely Ground Golden Flaxseed = 120 g / 1 cup
    Baking Powder = 16 g / 4 tsp
    Salt = 4 g / 1 tsp
    Egg White Powder = 44 g / 8 1/2 tbsp (OR Fresh egg whites / liquid egg whites = 250 g to be added to the wet ingredients)
    Whole Psyllium Husks = 27 g / 3 tbsp (Note: The psyllium husks must be ground until half its original volume before using. Please watch this video about psyllium husk and powder for better understanding and success - • PSYLLIUM HUSKS VS POWD... )
    WET INGREDIENTS
    Apple Cider Vinegar = 45 ml / 3 tbsp
    Room temperature water = 245 ml / 1 cup (This is to reconstitute the egg white powder. If using fresh or liquid egg whites, please omit this water)
    YEAST MIXTURE
    Instant or rapid rise yeast = 16 g / 4 tsp
    Sugar = 1/4 tsp (optional) (This will be consumed by the yeast and converted to carbon dioxide to make the texture lighter so it will not affect the carb content at all)
    Very warm water = 300 ml / 1 1/4 cups (120 to 130 F OR 50 to 55 C. This temperature WILL NOT kill the yeast. It is actually very conducive to wake up the yeast from its dormant state and get to work)
    DIRECTIONS
    1. Preheat the oven at 350F or 180C. Alternatively, you can preheat at 210 F or 100 C then increase heat to 350F or 180C when you put the dough into the oven to bake. This helps the dough to rise more when the oven is increasing its heat until a certain point then the yeast will die off.
    2. Add all the ingredients for the yeast mixture into a bowl. Mix to combine then set aside. This step is to check the condition of the yeast. If there are a lot of bubbling and foaming, then the yeasts are good. If not, please change to a new batch.
    3. In another bowl, mix all the dry ingredients together until well combined.
    4. Add all the wet ingredients (excluding the yeast mixture) and mix to combine. Remember that if you are using fresh or liquid egg whites, add them into the wet ingredients at this point and omit the 245 ml of room temperature water.
    5. Lastly, add the yeast mixture and mix until well combined. The dough will look watery initially but will firm up after you mix them longer. The dough is moderately firm and quite sticky.
    6. I used an 8x5x4 inch (20x13x10 cm) loaf pan lightly greased and lined with parchment paper. It is important to use a suitable pan for yeast bread. The pan should be narrow and tall. If the pan is too big, the dough will spread sideways to fill up the gaps and you will end up with a big but flat bread.
    7. Transfer the dough into the pan. Spread evenly and leave the top round.
    8. Cover loosely with a towel and proof at a warm area for about 20 minutes or until it has risen up to 3/4 of the pan. Here's a tip to create a warm area - turn on the stove fire for a while then turn it off. Place the pan with dough on a baking tray and let it sit on the warmed-up stove. Leave the hood lights on. This warmth helps to proof the dough quite quickly. And you can reheat the stove midway to warm up the area again.
    9. Once the dough has risen nicely, bake at the lowest rack for 1 hour.
    10. Cool completely on a wire rack before slicing.
    11. This bread can be kept at room temperature for a few days if you have a cool and dry climate. Otherwise, it's better to refrigerate earlier for up to a week or freeze for up to 3 months.

    I just made two giant loaves of this and I love it. Been making your recipes for a few years now and you are easily the most legit baker out here. I have my psyllium husk game down already, so this bread was zero fuss. Never had to worry about it sinking because it rises instead. This is what I've been searching for. Bread. Thank you so much!     Seems like an ingenious recipe! I can't wait to try it! I really need an easy-to-make, non-carb bread. I can't take certain other ingredients. This bread ticks all the right boxes for me. Hard to believe it has so few 'likes'.

    One last comment...virtually every baker advises against using both baking powder & yeast simultaneously...because of the different times each takes to cause the dough to rise. Often, this will end up "over-infating" the dough, causing it ultimately to collapse. I suggest simply using the yeast only, and increasing rise time until it has risen adequately.
    Plus, with the amount of baking powder in this recipe, and the short rise time, what the yeat is primarily doing is provide flavor more than rise. The reason why this bread rises during the very short rise time, is because you added vinegar, which activates the baking powder immediately...whereas the acid contained in the powder requires the heat of the oven to fully activate it.
    The reason why this dough works...when a conventional baker looking at this video would say the dough is much too wet...is because of the high absorbancy of the oat fiber & other bulk ingredients. Hence, viewers of this video should not come to that same conclusion that the dough is too soft & wet.

    I made a few changes to the recipe. I used Bamboo Fiber instead of oat fiber and used 96 gm. (75 gm was 1 cup when I spooned it into the measuring cup. I wasn't sure if the 120 gm given was scooped in that is why I cut back on the water but it was too much so I added the additional bamboo to get the texture in the video so that was 96 gm in total )I had cut back on the first water to 166gm thinking it might need less water and it did. I also used an 8.5 x 4.5" loaf pan and increased the oven temp to 375F. Mine rose to almost the height of the pan before baking but my pan wasn't as deep. I was amazed when I opened the oven door and it was the same height as a loaf of wheat bread, above the rim of the pan!. The crust was crunchy and the inside tender but not wet or gummy. This was the best Keto bread I can remember eating. I haven't tried toasting it yet but it sure was good spread with butter.

    I have to try this. I'm out of oat fiber. This week will do it for sure.
    I did 3 weeks of carnivore diet & I'm so done 😂😂what a boring diet..I miss my greens & veggies so I'm back to my low carb lifestyle for now😜

    update: the recipe was a mess...it calls for 4tbsp of yeast and 4 of baking powder, I thoughtit was too much but decided to trust the peocess...also, I added the 250 g of eggs and it became too liquid, like cake mix...I ended baking 30 min more and it still feels too wet and uncooked...

      I reduced the water to 200 mls as I used dried egg white. The first time was too wet so ended up in the bin. It still does not rise as much as I expected!

      @@lowcarbrecipeideas yes and with a spatula I scrapped the sides down to keep the dough in a ball. After it stopped kneading, about an hour in, I removed the paddle. I used normal setting for white bread which is 4 hours. ❤

    A few comments I hope you find helpful:
    You do not need to worry about the amount of sugar used to proof the yeast, as the yeast will consume any reasonable quantity added. Plus, even a tablespoon of sugar would be a faction of a gram per slice even if the yeast ate none of it. Plus, some sweetness adds to the flavor of homemade bread. Hence, I would add a full tsp of real sugar, or even honey...plus a tsp of Allulose, which provides that minal sweetness, and the yeast can't consume.
    As for the psyllium husk & egg white powder, they are used to replace glutin and are expensive ingredients (egg white powder is about $25/pound). These ingredients can be replaced with a tep each or konjac (glucomannan) powder & 50/50 mix of guar & xanthan gums. You can also replace 1/3 cup of the water with aquafaba which, itself, is an egg white replacer. All of these ingredients will help the dough have a consistency that will trap the yeast produced gas and cause the bred to rise.
    For that matter, unless one is gluten intolerant, 2-3T of vital gluten powder can be added, kneading the dough like any ordinary bread recipe. Keep in mind that gluten is almost all protein, not carbohydrates. So, unless one can't tolerate it, keto folks need not avoid it.
    Finally, what you are creating might tast good, but has minimal digestible nutrition except for from the egg white powder...and, by weight , that isn't much. I suggest adding up to a half cup of protein powder to this recipe (pea, or whey protein, for example) especially if following my suggestions for gluten replacement.

    Hello Elise, I made this bread . Let me first say I'm not really a cook and above all I'm definitely not a baker. I used the egg white from the carton not the egg white powder. It did rise a little,but not like yours did. I pre heated the oven to 210 and put the dough in the oven then increased to 350 let it bake for 1 hour. Took it out of the oven and let it rest about ten minutes. Cut a slice it was a little gummy and had a bitter taste. What did I do wrong. I've got to get this right. I used the brown pre ground flax seed plus I put them in the ninja food processor to grind them smoother. I'm not implying that the recipe doesn't work I'm sure I've done something wrong in the recipe.Your help is appreciated. Thanks God bless

      Almost all failures are caused by the incorrect use of psyllium husks. That's why psyllium husk is the most important ingredient. Keto bread is complicated, so you need to understand all the ingredients. Once you get it right, it will be a game changer.       May I know what oat fiber you used? It's good that you ground the flaxseed meal further to make it finer. There should be no bitter taste for this bread, and it is one of the easiest dough to rise very well and within a short amount of time.
      I always suggest that when you are new to making keto bread, it is best to start with the buns as they are the easiest. Once you get it right, then you can proceed to the loaf bread and finally yeast bread. But don't worry, many people faced the same issue with keto bread, so that's why I developed all the tutorial videos that you can find in my Baking Tutorial Playlist

      That is exactly how mine came out gummy and bitter.... Only I baked it like 30 or 40 minutes more because I thought that gummy consistency was going to go away but it didn't.

    Thank you for another great lecture! I have one question here: since many of the recipes using acv would use hot water, but here in your recipe is using room temp water, may I know why not using hot water please?

      The hot or boiling water in keto bread is to activate the glue property of the psyllium husks, nothing to do with acv. This recipe uses egg white powder instead of fresh egg whites. When using egg white powder, we need to add a certain amount of room temperature water to reconstitute it. The total amount of liquid will usually be close to the amount of fresh egg whites. I added the very warm water (can't use hot water as it will kill the yeast) to the yeast just to check the condition of the yeast. This water is actually meant for the dough and if not using yeast, it will be hot or boiling water. Hope this clarifies 🙏

    I love this recipe! But I cant get my bread to rise :/ in 20 minutes it is looking like the same also in the oven when it rises a bit (thanks to baking powder) I always end up with a hard shell but the interior is wet and sticky.. maybe im using too much fiber? I baked 200 for 50 minutes (following another video) and the inside looks like raw. Anny suggestions? maybe more eggs / egg whites

      Unfortunately, xanthan gum does not work well for keto bread. I have explained this in my baking tutorial videos (see playlist). Yes, you can use liquid egg whites without affecting the texture.

      Yes as preground psyllium powder is already super fine. As it's concentrated only a small amount is required around 1 to 2 tsp. If too much is used the bread will be denser, wetter and stickier.

      This bread is quite firm so it may be ok to rise until doubled but do make sure that your pan is high enough. I find that the texture is a little drier with egg white powder but it doesn't make any difference if you're toasting the bread 🙏

      As for the oven racks, I have actually explained that in the third book. As hot air rises, the top of the oven is actually consistently hotter, while the bottom of the oven will heat in bursts to maintain the overall temperature. The bottom rack is great for bread and anything with crusts such as pizzas, pies, tarts, etc. The middle rack is where the heat source is evenly distributed, so it's perfect for cakes, cookies, brownies, etc. However, I understand that some people uses table top ovens without the availability of tiered racks. So, in such cases, I advised them to just use the normal racks.

    here I am making it again...but, before the eggs...with the yeast and vinegar only...it is already too sticky...(no eggwhites and the cup of water for it...) if i add 5 eggs...it will be pure liquid...like before...how so???

      You just need to follow the process and understand the function of ingredients. It may appear watery initially but at the end of the process when you add the hot water and mix well, the dough will bulk up and firm up as well.
      Psyllium husk is the most important ingredient as it acts as gluten to hold everything together and provides elasticity to shape the dough. However, there is a huge difference between whole psyllium husks and preground psyllium powder so that's why I published a number of tutorial videos. Psyllium husk and flaxseed are gummy hence, the stickiness. The hot water at the end is to activate the glue property of the psyllium husks so it will bulk up and firm up the dough.

    Guidance I need is about p husk and bake at 350°F for 30 minutes or I need different settings.

      For half recipe the temperature is the same at 350F for about 40 to 50 minutes. It's better to over bake slightly than under bake keto bread. As for psyllium husk, I have replied to your other comment 🙏

      You can, but the bread may not rise as much and will taste more eggy. If you do not mind that, then you can replace the fresh egg whites with whole eggs at the ratio of half the amount of egg whites. So if the recipe calls for 6 fresh egg whites, you can use 3 whole eggs.

      For pre ground psyllium powder, only a small amount is required about 1 to 2 tsp as it is super concentrated. Even if the dough does not turn out as firm, it's fine. Just transfer into the pan. If you add until the dough is firm, then the amount of psyllium powder is too much, so the bread will turn out dense, wet, and sticky.

      Its actually regular sugar but don't worry as it will be eaten by the yeast and evaporated so it doesn't affect the carb content at all. You can also use honey or inulin (keto friendly). Keto friendly sweetener doesn't seem to be effective for this purpose.

    Hello! I followed all the steps throughly, with the same ingredients (found in my country) and for the exact same baking time. All in all I did exactly the same steps you did but when I first cut the bread it was moist, unlike yours. To the point some of it stuck to the knife.

    Don’t know what’s going wrong I’m weighing all the ingredients, I have used both instant and active yeast and i still can’t get my bread to look like yours. Mine rise but it is dry heavy and with very few air bubbles in the bread. I’ve left it to rise for up to 1 1/2 hours but still can’t get a nice texture of bread. I’m in New Zealand so I’m using different brands to you. Do you suggest I add more water or less ingredients. Thank you in advance.

You need to grind the whole psyllium husks until half its original volume, not more or less. If u put in 1 cup, you sd get 1/2 cup. It takes only a few pulse. This is the most effective for absorbing the water. If you over grind until powdery, then the amount you used is too much due to the concentration.     Having tried to get the Physilium husk right and tried different amounts of water, fresh egg whites and dried egg whites I think know why my bread will not rise. Your oat fibre is brown mine is white and is like a fine powder. Is your oat fibre actually oat bran fibre which does look brown.

      No, I am using oat fiber, which is originally light brown in color. The white ones have been bleached, and I have actually used it before. I discovered the difference after seeing the white version. As the white ones have been bleached, the original flavor has become not so obvious compared to the brown ones. But texture wise, both are the same for keto bread.

I have followed your instructions via you tube video. My oven cooks to temperature. I’ve tried different amounts of freshly ground Physilium husk, different amounts of oat fibre, ground golden flaxseed and water in different batches of your bread but I cannot get the bread to rise even though the yeast blooms nicely.

It there's a problem it is usually the psyllium husks. There's a huge difference between whole psyllium husks and preground psyllium powder and a lot of people do not realize this.     I am sorry but I tried it twice once with egg white powder and a silicone bread pan and once with liquid egg white with regular bread pan and both time it ended up with a 2 inch hollow top...not great sorry. I really don't know wht could have gone wrong. This is becoming expensive...

If you use whole psyllium husks you need to grind it until half its original volume (50%) not more or less. So if you grind 1 cup you should get half cup. This is important as it absorbs water more effectively. If you overgrind then it becomes more concentrated and using 18 g is too much. If using preground psyllium powder then only a small amount is required around 1 to 2 tsp. Please check out this video for better understanding and success,

      Keto bread is generally a bit moist and sticky inside due to the glue from the psyllium husks. However, when toasted they become dry and crispy. They also become drier on the next day or so.

      This is not oat grain. Oat fiber is the hull, hulk or outer shell of the oat grain. It is pure insoluble fiber with zero calories. It is quite like psyllium husks. Oat fiber is 100% keto friendly.
