    Nice, just about to harvest my cucumbers to make some pickles, I'll have to do a scaled down batch (I don't have a green thumb, didn't get a ton of cucumbers).

    crinkle cut only, smooth isn't as good.

      @@LeRoyandLewisBBQ the mandolin is great for cutting whole kosher dills into slices. But brining from fresh cucumbers crinkle cut preserves the crunch.

      @@LeRoyandLewisBBQ Sweet Pickle chips
      Mix in a pot
      Pickling vinegar:
      24 cups sugar
      1 gallon water
      1 gallon distilled white vinegar
      1 cup chopped garlic
      ¼ cup mustard seeds
      ¼ cup coriander seeds
      1 teaspoon chili flakes
      2 Tablespoons kosher salt
      Bring to a boil and cool overnight
      Salt brine:
      In another pot
      4 cups kosher salt
      8 cups water
      Bring to a boil
      Add to bucket of 3 gallons of ice
      Add water for a total of 3 gallons salt brine
      Crinkle cut pickle cucumbers ⅛ inch thick
      5 gallons of them
      Must be crinkle cut, smooth cut does not work as well
      Brine overnight, weigh down with a plate to keep them submerged
      Drain the next day
      Pour sweet pickling mix over cucumbers.
