AUTHENTIC PORK EGG ROLLS/ VEGETABLE EGG ROLLS RECIPE-- Lockdown Cooking Series Video # 23

  • Who doesn't like egg rolls?!!! We made and sold a ton of egg rolls each week when we operated our family restaurant. Our secret recipe is finally out. You can make them at home!!! Lots of work but definitely worth it!!!
    Egg Rolls Recipe
    Ingredients for pork egg rolls:
    2-1/2 Cups (591.47ml) ** barbecued pork (ground or finely chopped)
    Option: Ground pork, chicken or shrimp (Stir fry meat, season with salt and pepper, cook till done, cool in refrigerator).
    16 Cups (3.79L) Coleslaw or finely chopped cabbage and carrots
    1 Cup (236.59ml) Green onions chopped
    2 Teaspoons (9.86ml) Salt
    2 Teaspoons (9.86ml) Sugar
    1/4 Teaspoon (1.23ml) White pepper powder
    1/4 Teaspoon (1.23ml) 5 spice- powder
    1/4 Teaspoon (1.23ml) Sesame oil
    Egg roll wraps
    1 egg
    Ingredients for vegetable egg rolls:
    16 Cups (3.79L) Coleslaw or finely chopped cabbage and carrots
    2-3 Cups (473.18- 709.76ml) Kale chopped (less qty or omit if desired)
    1 Cup (236.59ml) Green onions chopped
    1 Cup (236.59ml) Shiitake mushroom (Soak in hot water for 1/2 hour, wring dry and chopped)
    2 Teaspoons (9.86ml) Salt
    2 Teaspoons (9.86ml) Sugar
    1/4 Teaspoon (1.23ml) White pepper powder
    1/4 Teaspoon (1.23ml) 5 spice- powder
    1/4 Teaspoon (1.23ml) Sesame oil
    Optional veggies: Jicama, waterchestnuts, bean sprouts, jumbo onions
    Egg roll wraps
    1 egg
    Instructions:
    1. Cook coleslaw or cabbage/ carrot in boiling water for 6- 7 minutes.
    2. Put in colander to drain and run cold water until mixture is cool.
    3. Compress and wring out as much water as possible. Excess moisture will make egg rolls soggy!
    4. Add in and mix remaining ingredients and seasoning.
    5. Wrap as instructed. Tip: Pack filling as tight as possible without tearing wrapper. As some wraps are more delicate and will tear or crack if not handled with care. May have to experiment with different brands of wraps.
    6. Heat oil to 350°-370° F (176.7°- 187.8°C) and deep fry for 6-7 minutes or until golden brown.
    7. Serve with sweet & sour sauce or sweet chili sauce.
    8. Par fry additional egg rolls and freeze for later use.
    Yield: 13 meat egg rolls/ 14 veggie egg rolls

    I can’t wait to try the veggie one! Been looking for an authentic egg roll recipe and most of the ones I’ve tried haven’t turned out good but this is the first one I’ve heard you should boil the coleslaw 😱 it looks so good! Thanks for sharing!

    I FINALLY know why they are called 'egg rolls' now!!!!!! Thank you. I made these yesterday using ground pork. My hands aren't that strong wringing out the slaw, I did the best I could then lay the slaw out on sheet pans with a rack and placed uncovered in the refrigerator for 6 hours to dry out, it really did the job. I added a bit of tree fungus I soaked. Absolutely the best egg roll I've ever tasted.
    I had some left over wrappers so I sliced some French Toast and a bit of cooked bacon in them I had extra from breakfast. I froze after frying and will have them with syrup when I need a quick snack.

    Dude! You used to deliver your amazing food right to my front door in Columbia Heights! You may remember me. I had the big, black lab that would join me when I answered the door. He had ear problems and several times his head was wrapped in bandages. You always said hello to him and even commented on his bandages.
    I always ordered my Szechuan Beef extra spicy...and it always was! I ordered my beef Lo Mein with extra beef...and you gave me a cow!
    Dragon House was the BEST Chinese food in the near north suburbs of Minneapolis and it's the only thing I miss living in Columbia Heights!

    Chef Petey, Thanks for sharing. I learned to make egg rolls your way years ago, but needed a refresher class. I use both pork and shrimp. My recipe is so large, that I do a double fry, so I can vacuum seal them in freezer bags to have several meals out of-- even then they don't last too long. When I went to HMart today to get the large wrappers we had trouble finding them. Turns out they're having trouble getting them or selling out still. So I picked up 5 bags and stuck some in the freezer for later. Again-- Thanks so much!

Are these how you would've made them at Dragon House? Also is there a brand of five spice you would recommend? I wasn't a huge fan of the Asian Gourmet brand. It had a strong licorice taste.

      Hey Chris. Yes that’s pretty much how we used to make them but we used an industrial wine-making grape press to extract water while producing literally hundreds of these bad boys!!! Honestly hated making egg rolls cus they’re so labor intensive.
      No particular brand of 5- spice powder but moderation is the key. Too much will overwhelm them. Have fun making egg rolls my friend. Peace out. 😃

    Thanks for sharing. When I first started making egg rolls, I used the slaw bag. Now I buy my veggies from Whole Foods Farmers Market. Shred my carrots & cabbage in the food processor and sauté them in the wok with garlic,onion, & other aromatics. My egg rolls taste so much better. Takes longer, but worth the time consuming effort!

    I am old enough to remember when an egg roll from a Chinese restaurant was a huge treat. Now they are just soggy cabbage. So I have been experimenting making my own home made egg rolls following recipes on CZcams. The ones I have made so far have been all right but not very flavorful. I am going to try your recipe as it contains more interesting savory ingredients. Thank you for posting this.

    A Lot Of Work, oh why yes it is. I started yesturday. I used salt to drain the water from the cabbage/carrots/celery. Plus Homemade wraps. When its ready, I'm certian its gonna be really good. I put on viberational tones, setting the mood.

    I really love your videos. I can’t wait to try this recipe. In the Midwest, some Chinese restaurants put peanut butter in their egg rolls. It’s definitely not authentic, but it’s delicious. Have you ever tried that version? Hope all is well! 💗 thanks for the content, chef!

    Thanks for sharing your recipe...I could always taste cinnamon in the local place I get my egg rolls from...thanks for letting us know the 5 spice...ill have to check out the local Chinese store where I get my egg roll wrappers...

    Three for Three. Family loved them. I wish we didn't live in such a heavy spanish area, hard to get good Asian ingredients. The egg roll wraps were on the small side, and I did half your recipe, and still managed to make 13 Egg Rolls! Need more salt and less 5 spice next time too.

    Chef Petey, thank you! I've just made these (vegetables for me and pork for my mother). My mother said that they are better than the local Chinese restaurant.
    Would you show your pantry and tell us what would be essential items to keep in stock for your recipes.
    Am I able to substitute tofu for protein in other of your recipes? Love Minnie, she and all of her toes are gorgeous.

      Hey Sheryl. Thanks for the feedback. So glad the recipe worked out for you guys. Yes tofu is a great option for a protein substitute.
      Basic supplies you should have on hand: light soy sauce (Pearl River Bridge brand), dark soy sauce (same PRB brand), sesame oil, oyster sauce (Lee Kum Kee), hoisin sauce (same), ginger, garlic, white pepper powder, rice wine, and prob 5-spice powder at a later point. Obviously this will depend on what you like to cook. But I always have these basic things in my kitchen. Hope that helps.

    I don't eat pork so I cook the ground beef first, then in a bowl mix the uncooked coleslaw mix with the hot meat causing it to wilt slightly while having a little crunch. Cooking the cabbage makes it too soft and mushy for me.

    I love your channel you are such a talented chef! I have a question.. I have had egg rolls two different way. The most common one you see which are smaller and pretty much smooth on the outside but brown. I have also had them from a authentic Chinese restaurant and they are bigger and king of bubbly light crunchy on the outside which seem more like yours. I tried making them like you do and they aren't so bubbly and light and crunchy what am I doing wring and what is the difference? Thank you very much for all you do to help us newbie chefs have a wonderful day.

      Thanks for watching Paul. I believe those are spring rolls you are referring to. Spring roll wraps are made of rice paper. Whereas egg roll wraps are flour based. I may have to do a spring roll video soon.

    Wow Chef Petey, you are a master chef, I tried a few of your recipes and their awesome, We appreciate having your videos during these times, I can't wait to say I tried all your recipes, my girlfriend is a real lover of chinese food as well as I am, but there is one recipe I would love to see and that is Moo Goo Guy Pan I'd really love to see that video, as for now keep up the good work, your making a lot of us happy! BTW your egg rolls are the bomb, everyone that tried mine said they wanted the recipe and I told them check out Chop Chop videos on you tube Chef Petey"s the best!!

      Thanks for chiming in Terry. Everyone makes moo goo guy pan different. My has bok choy, pea pods, fresh mushrooms, water chestnuts, bamboo shoots and sliced chicken breast. So not sure if you have that in mind.

    Thank you for your help I like to make egg rolls and wanton but one thing I do is I like to use my air fryer and have found that it works just as well as if I was to deep fry them only thing is I would like to learn how to make the raps.

      Making egg roll skin is something I have never done. Without a machine it is literally impossible to get the thickness just right. Way too labor intensive.

      I think you are referring to rice paper wrapper used for Chinese spring rolls. It’s made from rice flour and is translucent unlike the flour one used in this video. Hope that helps.

    I find it is easier to micro-wave the cabbage mix. It still needs draining but much less so than the boiling mixture does. This, of course, is for a family sized recipe and not the huge restaurant batch.
